Summer is almost here and my children have 3 days until they are out of school. I’m sure you are all well aware how much children tend to eat while they are home for the summer. This cinnamon raisin muffin recipe is one of MANY baked goods I will be making in the coming months. In an effort to keep my grocery budget under control, I need to start doing quite a bit of baking. My teens are active and hungry and can go through a box of organic snack food in about 30 seconds. A nice batch of homemade muffins will last 2 days if I’m lucky. But, I guess as long as they aren’t filling up on soda and candy I shouldn’t complain, right? They definitely seemed happy to wake up to homemade muffins instead of a bowl of cereal!

When I went looking for a muffin recipe to try, I realized that I had very few options to choose from. I had no carrots to make carrot muffins or blueberries to make blueberry muffins. I didn’t really do a lot of PLANNING before making this cinnamon raisin muffin recipe. However, the one thing I always have in the house is a huge box of raisins. They go in overnight oatmeal and homemade trail mix. We even put them on cold cereal or use them for ants on a log. We prefer the golden raisins but any variety will work for this muffin recipe.
When making homemade muffins, use an ice cream scoop with trigger to fill the cups for less mess! I prefer the unbleached muffin cups and the muffins just pop right out of them.

2 cups all purpose four
1 TBSP baking powder
1/2 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon (plus more for topping)
2 large eggs
1 cup milk
2/3 cup sugar (plus more for topping)
4 TBSP grape seed oil (or vegetable oil or melted butter)
1 tsp vanilla
1 cup golden raisins
1/3 cup finely chopped nuts (I used hazelnuts)
Cinnamon sugar mixture for topping : Approximately 2 TBSP sugar mixed with 1 tsp cinnamon.
Instructions
In a large bowl, sift together the flour, baking powder, salt, nutmeg and cinnamon.
In a separate bowl, combine the eggs, milk, sugar, vanilla, and oil/butter. Whisk until blended.
Pour wet ingredients into the dry ingredients. Stir just enough to mix. There will be a few lumps. Don't overmix.
Gently stir in the raisins and nuts.
scoop batter into muffin cups that are greased or lined with paper cups.
Sprinkle each muffin with a little bit of the cinnamon/sugar mixture
Bake in an oven preheated to 400 degrees F for 15 to 18 minutes or until knife inserted into center comes out clean.
Remove from oven and let cool before eating.

Green Smoothie Snack Bars
These gluten-free Green Smoothie Snack Bars are healthy, easy to make and kid-friendly. They’re made with real food ingredients and packed with protein and healthy fats – perfect for a quick breakfast or snack!

Today I’ve got a fun new breakfast or snack idea for you. I made these 3 times last week to perfect the recipe for you and once they got the approval from Squish and a few people at the gym, I knew it was time to share them! Squish and I made you a video too!
Some of you may remember that last year around this time I made these Green Smoothie Pancakes. They popped up on my TimeHop this year and inspired me to make another green recipe for you guys. Hubby has been asking for green smoothies lately so I had a giant bag of spinach in the fridge to play around with. I used my Sweet Potato Bites as a base recipe and made some changes including adding oat for fiber, yogurt for protein and I left out the banana in hopes that hubby would eat them!
These bars are definitely dense and moist. I tried them with 1/2 cup oats and they were a bit too moist. With 1.5 cups they were a little too dry for my liking. I find 1 cup to be just right. They’re gluten-free. If you wanted to make them dairy-free I’m guessing you could leave out the yogurt but I haven’t tried it yet!
If you leave out the chocolate chips, you may want to add a bit more maple syrup for sweetness or try vanilla yogurt instead of plain.
Here’s how you make them:

1 cup (tightly packed) fresh baby spinach
1 cup cooked, mashed sweet potato (approx 1 med-large sweet potato)
1/2 cup plain yogurt (i use full-fat. You could also use vanilla)
2 eggs
1/2 cup peanut butter
1/3 cup maple syrup
1 cup rolled oats
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking powder
1/2 cup chocolate chips (optional)
Instructions
Add all ingredients to blender except chocolate chips.
Process until smooth and well mixed.
Pour into greased (or lined with parchment paper) 9x9 pan.
Bake at 375 degrees for 25 minutes.
Store in the fridge.

Over the last year or so, I have gotten rather lazy with my weeknight meals. There are only so many easy dinner ideas in my repertoire and I find myself falling back on the same few over and over again. While I enjoy creativity in the kitchen on the weekends, I generally want fast and easy during the week. Homework and after school activities have us pretty busy Monday through Friday. This easy taco pizza recipe was a new one for us and it was relatively quick to throw together. If you need simple dinner idea, this easy taco pizza is a good solution! Keep reading for the recipe and a few affiliate links for things to get you started.
The crust of this easy taco pizza recipe is made with crescent rolls. You could certainly make your own crust, but for a busy weeknight, you can’t beat a crescent roll crust. If you can’t find them in your local grocery store, try the Amazon Fresh program. Did you know you could buy fresh, refrigerated foods from Amazon? It is convenient, especially when you can’t find a lot of natural and organic foods in your local stores. Buy Annie’s crescent rolls on Amazon and get started with your homemade pizza!

One challenge I came across during my recipe creation was that my pizza stone is ROUND and my crescent rolls are square. I love my round stone and think the crust would have had an even nicer crunch to it had I been able to use that instead of a cookie sheet. But, I was actually amazed at how sturdy the crust was considering it was made of crescent rolls and not pizza dough. Just buy some organic taco seasoning or make homemade taco seasoning in bulk and you are all set to start cooking! Doesn’t this look tasty?

Ingredients
2 cans of crescent rolls
1 (8 ounce) package of cream cheese (softened)
1 1/2 cups shredded cheddar cheese
1 pound ground beef
1 package of taco seasoning
1/4 cup water
1 cup chopped cherry tomatoes
2 cups chopped lettuce
Instructions
Unroll the crescent rolls onto a cookie sheet or pizza stone. Press them together with your fingers or roll them out a bit. You are looking to get one relatively smooth crust with no visible holes.
Bake the crust according to package directions. Mine was 15 minutes in a 375 degree oven. Bake til golden brown.
While the crust cooks, cook the ground beef in a medium pan until done. Add the taco seasoning and water and stir. Remove from heat and set aside.
In a bowl, combine the softened cream cheese with the shredded cheddar. Mix until blended.
Remove the crust from the oven and let cool 2 or 3 minutes.
Spread the crust with the cheese mixture. The easiest thing to do is drop small amounts from a spoon all over the crust. Let it soften from the heat of the crust, then spread with a knife or the back of a spoon.
On top of the cheese, sprinkle the ground beef, lettuce and tomato.
Cut the pizza with a pizza cutter and enjoy!

Some of you may remember several months ago when I teamed up with my friends at the National Fisheries Institute to share some Quick and Easy Seafood Recipes and these Easy Tuna Melts! Last year, they launched a seafood education initiative called Dish on Fish to help educate Americans about the importance of eating seafood and to encourage seafood consumption.
This year we’re teaming up to celebrate American Heart Month this February! According to the U.S. Dietary Guidelines for Americans, Americans should be eating seafood at least 2-3 times a week in order to reap all the health benefits it has to offer. Fatty fish like salmon, sardines and albacore tuna are full of omega-3 fatty acids which are good for your heart and low in saturated fat. They may help reduce inflammation, lower blood pressure and reduce the risk of heart disease. So today I’m sharing an easy, heart-healthy salmon recipe that you can add to your dinner rotation!
This recipe really couldn’t be much easier. Just line a pan with foil, add some pieces of salmon, green beans and cherry tomatoes. top with a little Italian dressing and bake! Voila! Dinner is served. Plus cleanup is a breeze.

Ingredients
1/2 pound fresh green beans, ends trimmed
1 cup cherry tomatoes
1 pound salmon, cut into 4 portions
1/4 cup Italian dressing
lemon slices for garnish, optional
Instructions
Place green beans and tomatoes on a foil-lined baking sheet.
Add 2 Tbsp Italian dressing and stir to coat.
Add salmon pieces and drizzle with remaining dressing. Top with lemon slices if desired.
Bake at 400 degrees F for 15-20 minutes or until salmon reaches desired degree of doneness.
Serve!

Coconut Oil Banana Muffins
These dairy-free Coconut Oil Banana Muffins are packed with flavor and perfect for breakfast or a quick snack.
Hi friends!
Wasn’t planning to share these until next week but miraculously both kids fell asleep at the same time yesterday afternoon so I had time to make another batch. Unfortunately, they both woke up before I got the pictures taken….which mean those nicely placed chocolate chips you see above kept disappearing thanks to the toddler’s sneaky little hand!
But I powered through and snapped a few pics so I could share them with you today because I these are definitely the best banana muffins I’ve ever made. You guys know how much I love these PB Banana Oat Muffins, right? These are very similar but they’re dairy-free. I’ve been cutting back on dairy for the past few weeks to help it if helps Little Miss be more comfortable so I thought I’d try my hand at a new muffin recipe.
Guys, these are so good. They have coconut oil and peanut butter in them for healthy fats, but you don’t really taste either one. These are just really good banana muffins. Really good.
Definitely need to be added to the rotation whether you’re dairy-free or not! Squish has been loving them for breakfast this week and I’ve been eating them for a quick morning snack. I made a batch on Sunday and they tasted just as good on Thursday as they did on Monday! That’s a win in my book!

Ingredients
1/4 cup coconut oil, solid
1/4 cup peanut butter (or other nut/seed butter)
1/3 cup maple syrup
1/4 cup almond milk (or other milk of choice)
2 eggs
1 cup mashed bananas
1 tsp vanilla extract
1.5 cups white whole wheat flour
1.5 cups rolled oats
1 tsp cinnamon
1 tsp baking soda
1/2 cup chocolate chips (dairy-free if needed)
Instructions
Preheat oven to 375 degrees F.
Combine coconut oil and peanut butter in a large bowl.
Microwave, stirring often, until coconut oil is melted.
Add maple syrup, almond milk, eggs, vanilla and banana and mix well.
Add remaining ingredients and stir until just combined.
Pour into 12 lined muffin tins (they'll be very full).
Bake at 375 degrees F for 22 minutes.
