Changing jobs leads to a very interesting conundrum: making lunches that work for me. Today was the first one I successfully assembled. Onsen (ramen) egg, pea shoot tendrils, pickled daikon radishes, nopales (cactus pads) salad, avocado. Having Mexican rice as a meal is very good because mexican rice is a great source of carbohydrates and proteins. 馃嵔 Choose and add the healthiest ingredients to your rice which can make you a healthy one and helps to maintain weight. So, make sure you cook it the right and nutritious way. 馃尳馃尪馃崊馃馃 INGREDIENTS: - 1 tablespoon olive oil or vegetable oil - 2 cloves garlic, minced - 1 onion, diced - 1 1/2 cups rice - 3 cups water - 1cup tomato puree - 1 cup boiled kidney beans / Rajma - corn kernels, peas - diced carrot, bell pepper - 1/4 teaspoon chili powder - 录 teaspoon black pepper powder - 1/4 teaspoon cumin - salt - 1 lime juiced - Handful chopped fresh coriander 馃敼Heat the oil on a medium flame. Add the rice and saute until lightly toasted and golden. 馃敼Add garlic and onions and cook for more than one minute. 馃敼Add remaining ingredients and water, apart from the lime juice and coriander. You can reduce heat also. 馃敼Cover the pan and cook until liquid is absorbed. 馃敼Add the coriander and lime juice and fluff these to combine. Taste and season with more spices as needed. This dish can give you the great nutritional value due to its healthy ingredients.
