Mini Burgers Recipe
Syawal has come to an end and therefore it’s the end of open house seasons. Phew! Razin’s first raya is definitely a memorable one. Way different than when Fauzi & I used to celebrate raya just the two of us. Back then, we stayed over at friends’ open houses till late night (sometimes until even the morning after, hosts had to prepare breakfast for us 😜) then along came Razin hence no more long stays over at friends’ houses (lucky them)
One thing to always keep in mind when going to open houses with babies is to always remember that babies get tired, they needs naps, multiple naps, comfortable places to naps & when they don’t nap then well… it’ll be a nightmare for the parents!
This year, our little family would go to one open house. It’ll be a nice short stay, Umi & Bapak can eat in peace, Razin would still be in a good mood & so friendly letting other people hold & kiss him then it’s off to the second house. By then he’ll be a little bit fussy but not too much, he can still be easily comforted when Umi or Bapak holds him, hence Umi & Bapak are now taking turns to eat. Before reaching the third house I would try to breastfeed him first & would fail because he’s obviously not hungry. If the distance between houses are quite far, he can at least take a quick nap in the car. That’s not usually the case because my husband drives like a racer most of the time. By the time we reach the third house he’s no longer in the mood to be held by other people, he’ll become such a cranky & unfriendly baby (no chance to get duit raya when he behaves like this 😧) and it is during then, in front of all those people that he would tug on my nice outfit because he wants to feed 😅 Razin oh Razin. Then Umi would have to excuse herself to a private room or back to the car & Bapak would follow because by now he’ll suggest that it’s time for us to call it a day. A year ago, the two of us would be out until midnight but this year, we’re done by 3pm because Razin has been in his baju raya since 8.30 in the morning & he needs to go back home right away. Anyway, after feasting in other houses, by the end of Syawal, it’s always nice for the youngters to provide the food for a change. All these aunties have been cooking since the last night of Ramadhan, so us inexperienced cooks decided to end Syawal by doing a potluck. All throughout Ramadhan & towards Syawal I’d usually make sweet baked goods, from cookies to cakes. However, people need savory stuff to fill their bellies. I decided to make mini burgers because: 1) it’s easy 2) it’s portable 3) its portion is suitable 4) it’s won’t take too much time out of the busy mommy 5) did I mention that it was easy? It’s easy, it’s easy, IT’S EASY!!! So I thought I’d share this insanely easy recipe for mini burgers (kinda late I know, so nobody can bring these to any open houses anymore 😜) Mini Burgers Recipe: This recipe makes about 28 mini burgers 🍔 1.5kg ground beef/chicken 1 small onion 2 cloves of garlic 2 teaspoons of mustard 2 teaspoons of ketchup 2 teaspoons of worcestershire sauce 2 teaspoons of white pepper 1 egg Salt to taste Mini burger buns or you could use sandwich bread cut into four pieces like I did 😉 Cheese slices (also each cut into four) Lettuce Tomatoes Instructions: Finely chop the onion & the garlic cloves (I just threw them in the food processor & processed them until they turn into a fine mince because I cannot chop onions without crying a river 😂) Then mix together the ground meat, chopped onions & garlic, the three sauces, white pepper, salt & eggs. Be sure to gently mix these with your hands, avoid pressing the mixture between your fingers or working with the mixture too much. Overworking the mixture will result in a tough & dry burger patty once its cooked. Try to incorporate all the ingredients gently and as little possible. Once you feel that you feel that all the ingredients are mixed throughout the meat, immediately STOP & do not touch it even if you might be tempted to play with it more 😁😁 Take an ice cream scoop & scoop out this meat mixture. Form it into a ball between your hands then press slightly to form a patty. Using an ice cream scoop will help with even distribution. Lay down the burger patties on a baking tray (preferably one that’s covered with baking paper for easy clean-up), cover up with aluminium foil & put it in the fridge until you’re ready to cook. It doesn’t take long for the patties to firm up but you could use this time to prep other burger toppings or in my case, use this time to tend to a baby. After chilling, heat your grill pan on medium heat & make sure that it’s lightly oiled. I like to spread a thin layer of mustard on the patties before I grill them. Then I put the patties, mustard side down first, while the first side is cooking I spread a layer of mustard on the top side of the patties. I cook these burger patties for 3 minutes on each side, topping the burger patties with a slice of cheese a minute & 30 seconds before I’m done cooking them. Once all the patties are cooked, let them rest first. This is important in order to seal in all the juices. If you immediately put a hot burger patty on a bun, the meat juices will flow out resulting in a soggy bun eww 😦 Use the time it takes for the meat to rest to toast the burger buns or prep the other ingredients in case you didn’t get the chance to do that yet because you were busy with a baby 😅 To assemble the burgers, place a bun, top it with a burger patty that already has the melted cheese on it, topped with lettuce, tomato, spread some sauce of your liking on the top bun before finally placing it on top. Push a toothpick on the centre of the burger to keep everything in place & now it’s done & ready to be eaten! (Or packed to go for your next potluck) A little tip for mommies out there: Yes, there’s some prep to this recipe. If you’re a full-time mom with a clingy baby expect to constantly take breaks from making these because your child needs you. What you can do is prep the meat patties the night before. Yes, make the patties once your baby is asleep for the night, let it rest in the fridge overnight, if you’d like, you can pre-slice your veggies & keep them in the fridge for the night as well. If you’re using sandwich breads (like I did) you can toast & cut your bread the night before as well because sandwich breads tend to retain their toasty texture longer. When morning comes & you’re in a rush to get to that potluck (not to mention, you have to get your baby AND yourself ready as well) all that’s left for you to do is to cook the patties & assemble the burgers.
