A quick simple meal preparation. Homemade Vegan Chilli Ingredients are canned organic white kidney, red kidney, black and pinto beans, and 1 patty of beyond meat burger. Other added ingredients are vegetables stock, water, 1 can of tomato sauce, 3 tablespoons of tomato paste, with a 1/2 cup of organic diced tomatoes. To get it flavor I added fresh and dried spices, 1 pack of Simply Organic vegetarian chili seasoning mix, Mrs.Dash original seasoning, diced onions, and Chipotle powder. I added 2 tablespoon of maple syrup to boost the spices. After adding all the ingredients I allowed everything to come to a boil, I turned the fire down to a low flame to simmer for 30mins. @mamava42 Pork Pozole might not be the best thing for 100+ degree days, but while we were in the 70 degree mountains it’s warmth on a cool evening after a shower made me start getting truly excited about the fall! This little gem will definitely be going in my fall lineup for easy and quick dinners! (And it’s already on the list for the cookbook!) ⛰🤩🍲🤤🌅🥵 As Mama Va explained, it’s a great way to use pork chops that would otherwise be extremely dry! Baby It's Cold Outsi--Ah Screw You Polar Vortex (Red Pozole)
WHAT IT IS: traditional mexican stew usually served around the holidays but should be cooked always because it's delicious and cheap and feeds 1,000 people. (this recipe is pretty much from Simply Recipes. Elise is a cool lady.)
INGREDIENTS:
about 3lbs pork shoulder (you can buy the pork already cut into "stew cubes" for you but I always find buying the big cut of meat and cutting it yourself tastes better.)
4-5 oz guajillos, ancho, or a combo of the both (I also throw in 2-3 chile de arbol for a touch of heat)
6lb can of hominy, rinsed well
10 garlic cloves, 5 roughly chopped, 5 whole
3 bay leaves
2 tsp cumin
2 tblsp oregano
salt
Toppings:
finely shredded cabbage
radish
cilantro
avocado
oregano
limes
tostadas
sour cream
HOW TO MAKE IT:
Fill a 10-12qt soup pot with 5 qts water. Set to boil.
Also, set 3 cups of water to boil in a medium saucepan.
De-seed and de-vein chiles. Toast chiles on a comal or dry skillet. Don't burn em. Place chiles in boiling 3 cups of water, take off heat and cover for 15 mins until chiles are soft.
Cut your pork into 2 in cubes, trimming excess fat the best you can. Pat meat dry, season with salt and brown meat in a skillet. You'll have to work in batches. Don't crowd the skillet or they won't brown.
When meat is down browning, add 5 chopped garlic cloves to still hot skillet and cook for a minute.
Add pork, garlic, oregano, cumin, bay leaves, and about 1 tblsp salt to the large pot of boiling water. Simmer for 15 mins.
While the pork is cooking away, time to make your chile sauce mixture. Blend the now soft chiles with about 2 1/2 cups of it's soaking water with 5 whole garlic cloves. Be careful that your blender does explode with the pressure of the hold chiles and steam. I like to use a paper towel instead the little plastic thing in the lid, so steam escapes. Just be careful or you'll have chile on our walls.
Strain chile mixture through a...strainer, into the pork pot. Add a bit more salt and let the stew simmer half covered for about 3 hrs. or until the pork is tender as all heck.
Top each bowl with whatever toppings you prefer. Eat it with a tostada that's been spread with sour cream. Yum.
