Some times I wonder if the people on both sides of the food bitching debate even know what the issue is, or if they just wanna play stupid.

No the problem isn't some random person adding some soy and oyster sauce to his stock and just doing it because they like the added flavour. Don't get your ass in a twist about that, trying out new shit is literally what cooking is all about. If you think cooking is a rigid line of recipes, you're a shit cook no matter how good your food is.

The actual issue comes into play when someone claims they make the world's best Spaghetti with meatsauce, and then present you with a Czech desert dumpling with cherry filling. It's using the name of a dish, completely ignoring all the steps and flavor profiles in the recipe, just throwing in random shit they think are vaguely related to what the original dish is, and create something completely different, and then still insisting that they served the original dish.

If you're making a specific dish, there's a certain room you have to stay in, some times there are some key flavor notes and ingredients that are a hard must. Maybe it's even a color or consistency. But that's because you're specifically claiming to make that dish. You make ramen? You need ramen noodles, because that's what the dish is about. You make wings? You need wings, can't use pig trotters, that's not wings.

If you don't claim to be making a specific dish, and just throw together things you know taste good. Why the fuck should anyone care? Why do some people take such massive offence to people who know how to combine ingredients without needing to stick to making a named dish.

Also, there's a difference between inspired by a certain cooking method, and claiming you're making something with a twist.

If you're making clay chicken, it has to be clay and chicken, maybe your twist is adding some fruit into the chicken to give it that fruity aroma. Idk you tell me. If you're saying you were inspired by clay chicken, but decide to make a clay pork belly, that's that. That's an important difference in cooking.
