Ingredients: 2 ripe bananas, mashed. 1/4 cup maple syrup. 1/4 cup almond butter. 1/4 cup almond milk. 1 tsp vanilla extract. 1 1/2 cups gluten-free flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp cinnamon. Pinch of salt. 1/2 cup blueberries, fresh or frozen.
Instructions: Preheat the oven to 350F 180C and line a muffin tin with paper liners. In a mixing bowl, combine mashed bananas, maple syrup, almond butter, almond milk, and vanilla extract. In another bowl, whisk together gluten-free flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until well combined. Gently fold in the blueberries. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

For an extra treat, you can decorate them with vegan chocolate chips or shredded coconut flakes.
Ingredients: 1 can 13.5 oz full-fat coconut milk. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 cup shredded coconut flakes optional. 1/4 cup vegan chocolate chips optional.
Instructions: Put maple syrup, vanilla extract, and coconut milk in a blender. Mix until it's smooth. You can add shredded coconut flakes for extra texture if you want to. Put the mixture into popsicle molds, leaving some room at the top for them to rise. Place a popsicle stick in each mold. If you want to, you can fill each mold with vegan chocolate chips. Place the molds in the freezer and freeze them all the way through, which should take at least 4 hours. If the popsicles get stuck in the molds, run warm water over them for a few seconds and be careful to remove them. Serve and have fun!

In a skillet set over medium-high heat, warm the vegetable oil. Cook the marinated tofu slices in a single layer for 34 minutes on each side, or until they are crispy and browned. After the tofu bacon is cooked, transfer it to a plate covered with paper towels to absorb extra oil. Serve hot alongside other foods like salads, sandwiches, and wraps.
