Hainanese Chicken Lunch, courtesy of Aunty KK. Aunty was sad that all week Uncle had been sampling much sub-par HCR, she packed her version of KK Eats for Uncle to tapau. Granted take-outs suffer a drop in freshness and quality in transit, the Chicken Rice ticks all the right boxes. Uncle enjoyed it. So you and the car behind reverse on a very busy road to make way for a turning car to the gas station. He and his 4-wheel drive sneak through without looking at you, nor give acknowledgement. Aunty McLyn is Scottish and McUncle has been trying to speak with a Scottish lilt. And the fact she’s in Auckland via Melbourne means McUncle can have a wee natter. We went to the marvellous Frances Hodgkins: European Journeys exhibition at the Auckland Art Gallery Toi O Tamaki. After the exhibition, KK Malaysia beckoned. Jacky said his wife Jun had made a pandan chiffon cake and wanted McUncle to try his favourite cake. McLyn is vegetarian. We started with the special KK Tofu, fried tofu topped with julienne of onion and cucumber drizzled in sweet chilli sauce and sprinkled with a crushed peanuts. We also had Aunty KK’s superbly cooked vegetarian Mee Goreng, Buddhist style. We always marvel at how Aunty KK can conjure a vegetarian Mee Goreng of great flavour without the use of onions and garlic. Jun made a fluffy chiffon cake, flavoured with pandan and coconut cream. It was divine and needed no garnish or cream. McUncle was too busy eating to concentrate on developing his Scottish lilt. After tennis lunch. Aunty KK treated Uncle to her Hainanese Chicken Rice when he called in after tennis. KK do one of the better HCR in town, a no-nonsense poached chicken with a chilli ginger dip that zaps up the (boneless) chicken and resplendent rice cooked in chicken stock, ginger & garlic. The late Anthony Bourdain single-handedly put Sarawak Laksa on the world culinary map. He featured Sarawak Laksa twice on his food TV shows, visiting Choon Hui Kopitiam (on Jalan Ban Hock, Kuching) for the first time in 2005 to film for Travel Channel’s “No Reservations” and again in May 2015 for CNN’s “Parts Unknown”. Mamak Takapuna put Sarawak Laksa on its menu a year & half ago. Now, you can order Sarawak Laksa at KK Malaysia, Epsom as one of Jacky Lam’s chefs, Yew Veng Lee hails from Limbang, Sarawak. This Laksa is completely different from the usual Curry Laksa or Assam Laksa. The laksa paste (rempah) is imported from Sarawak, made from powdered spices (5-spice, cardamom & star anise being the most dominant); the noodle is beehoon (rice vermicelli) and egg omelette (cut into strips) as one of the toppings. Prawns feature prominently, the stock being cooked from prawn shells. Unlike Curry Laksa, the gravy is less “lemak” (coconut creamy), allowing the spices to come through.
