Last night, I started brining some chick peas, not knowing what I would do with them. After our ski today, we were both in the mood for soup. A rich broth with loads of sweet onion, browned with some local, uncured bacon was the base. I added carrots, parsnips, cabbage, escarole, the chick oeas, and a parm rind, simmered for a couple hours...then used my immersion blender just enough to thicken the broth.
