โ€ข ๐Ÿ‘ฉ๐Ÿป๐Ÿ‘จ๐Ÿป๐Ÿ‘ฆ๐Ÿป โ€ข 1.8.2018 : Wednesday: Dinner : Homecook โ€ข Dried Fig and Pear ๐Ÿ Pork ๐Ÿท Rib Soup ๐Ÿฒ Steamed Grouper ๐ŸŸ with Sweet and ๐Ÿ… Sour Sauce Blanced Okra ๐ŸŒฑ in Ponzu ๐Ÿ‹ Sauce โ€ข Steamed Grouper with Sweet and Sour Sauce #lifeasmrsyeocooksrecipe ๐Ÿ‘‡๐Ÿป Ingredients: 500g grouper (washed, pat dry) 2 slices ginger 1 tsp salt 1 tbsp hua diao wine Sauce: 6 tbsp ketchup (Heinz preferred) 4 tbsp rice vinegar 1 tsp sugar 1 spring onion (cut into shorter length) 2 shallot (thinly sliced) 1 tomato (quartered then cut into 2) 100ml water โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”- Method: 1. Rub hua diao wine and salt all over fish and set aside for 10 minutes. 2. Stuff ginger in fish stomach then place fish steaming plate. 3. Bring a pot of water to boil, steam fish over high heat for about 12 minutes. 4. Meanwhile, heat up another pan, add oil and stir fry red onion until fragrant. Add tomato and continue to stir fry until soft. Add ketchup, rice vinegar, sugar and water. Bring to boil. 5. Add spring onion and give it a quick stir. Off heat. 6. Remove fish from steamer, discard ginger from fish stomach and pour away steaming fish sauce. 7. Drizzle sweet and sour sauce over fish. Serve hot. โ€ข Last week I made sweet and sour fish with batang steak but the boy didnโ€™t like the fish. Today I tried making the same dish with grouper and it is well received by him. ๐Ÿ‘ฉ๐Ÿป๐Ÿ‘จ๐Ÿป๐Ÿ‘ฆ๐Ÿป โ€ข 24.10.2017 : Tuesday : Dinner : Homecook โ€ข ABC Soup ๐Ÿฅ• ๐Ÿฅ” ๐Ÿ… ๐ŸŒฝ ๐ŸŒฑ ๐Ÿฒ Cantonese ๐Ÿ‡ญ๐Ÿ‡ฐ Style Steamed Fish ๐ŸŸ โ€ข One soup, one dish night โ€ข Cantonese Style Steamed Fish #lifeasmrsyeocooksrecipe ๐Ÿ‘‡๐Ÿผ Ingredients: 190g sea bass (marinate with some salt for 15 minutes, rinse and pat dry) 3 slices ginger 2 spring onion 2 tbsp soy sauce 1 tbsp hua diao wine 1/2 tbsp rock sugar (I used 3 small cubes) Dashes of pepper 1/2 tsp sesame oil 1 tbsp shallot oil ___________________________________________ Method: 1. Line steaming plate with spring onion, top with ginger slices. 2. Place fish on top of ginger slices, drizzle soy sauce, hua diao wine, sesame oil, pepper and scatter rock sugar on and all around fish. 3. Steam for 10 to 15 minutes on high. 4. Heat shallot oil in another pan, drizzle hot oil on fish when it's ready. 5. Serve hot. โ€ข Originally, sauce is prepared in another pan and drizzled over fish when it's done steaming. โ€ข ๐Ÿ‘จ๐Ÿป๐Ÿ‘ฆ๐Ÿป๐Ÿ‘ฉ๐Ÿป โ€ข 23.10.2017 : Monday : Dinner : Homecook โ€ข Watercress ๐ŸŒฟ Soup ๐Ÿฒ Teowchew Style Steamed ๐ŸŸ Fish Stir Fried ๐Ÿค Prawns with ๐ŸŒฑ French Beans and Shimeiji ๐Ÿ„ Mushroom โ€ข Teochew Style Steamed Fish #lifeasmrsyeocooksrecipe ๐Ÿ‘‡๐Ÿผ Ingredients: 180g threadfin fillet (wash, pat dry) 2-3 slices ginger* 1/2 tomato (cut into chunks) 150ml chicken stock** 50g salted vegetable (rinsed, cut into strips) 1 preserved plum (mash using the back of a spoon) 2 spring onion (cut to shorter strips) 1 tbsp hua diao wine 1 tbsp soy sauce *you may julienne the ginger instead **reduce if you don't prefer much stock _____________________________________________ Method: 1. Line dish with spring onion. Top with ginger. Scatter 1/2 portion of salted vegetables all around the braiser. 2. Scatter tomato, sour plum and the rest of the salted vegetables at the side of the braiser leaving out the middle part for the fish later on. 3. Add chicken stock. 4. Turn heat on medium and bring stock to boil. Once stock is boiling, place fish in the middle, drizzle hua diao wine and soy sauce over fish, cover with lid and continue to cook on low for 10 minutes. Turn off heat and let stand for another 5 minutes. OR Arrange all ingredients in steaming dish. Mix well cordia seeds, cordia seeds pickling sauce, garlic, hua diao wine and sugar in a bowl. Set aside. 2. Line steaming plate with spring onion, place fish on top of fish. Pour sauce over fish and steam on medium high heat for 8-10 minutes. 3. Serve hot. โ€ข Recipe adapted from an online tutorial clip shared by my girlfriend. I have cordia seeds lying around in the fridge so I thought I should try it!
