La Mellifera by Le Trou Du Diable is a fantastic Saison/Farmhouse Ale brewed with honey. This beer actually had a big flavor of lemon blended with the honey. Almost Mead-like. A little funk tartness mixed in as well. The label art is fucking great, which is what drew me towards this beer in the first place. Four great bottles that I managed to consume over the holiday season so far. Everything started out with @beausallnatural Tom Green Cherry Stout. I cracked this one and shared it with my brother and my old man over a pot roast dinner. Great body, smooth finish and a pleasing balance that between malt and dessert flavours. Beer 2 is Melifera by @letroududiable. This farmhouse ale features a lightly tart taste that is balanced well against the use of honey. This is a braggot meets Saison kinda thing. It’s interesting and it’s on sale at the LCBO. I gave a bottle of this to my brother. Next up is my favourite beer of the Christmas season, Chocolate Manifesto by @FlyingMonkeys. This beer has THE best chocolate aroma I have ever come across in a beer. The layers of chocolate (nibs, powder & malt) are all distinct and well presented across your palette. What an excellent dessert beer that should age gracefully in a cellar at 10% abv. Last but not least, Dunkel by @beausallnatural. Dunkel is a nice salute to the traditional German beer style. If you want a malt forward Lager with hints of chocolate and rye bread, this is your guy. Brewed to style. What were your favourites this holiday season?

Le Trou du Diable // 25th Anniversary // "Special Sour Blend"
Brewed by Quebec craft beer producer Le Trou du Diable in commemoration of Bar Volo's 25th anniversary; this 'Special Sour Blend' is a mix of 40% Bretteuse, Dulcis Succubus and Buteuse Brassin Special, 40% sour rye aged in Banyuls barrels and 20% young saison. The resulting beer is an outstanding example of a modern wild ale.
Appearance: Pours an attractive, very clear, reddish-golden with a thin white cap that is typical of sour beers. The high pH results in poor head retention. Considering the beer is bottle conditioned, the clarity is quite amazing. Leaves a little bit of lace as you drink.
Aroma: Tart on the nose. Citrusy notes of lemon peel, coriander and caraway. Pilsner-style grainy malt notes as well as a hint of rye spiciness. There's also a fino sherry like character here; likely a combination of the wine barrel aging and slight oxidization.
Taste: A nice fruity sweetness (think cherry or apricot) that is immediately cut away with moderately sharp acidity. Certainly not Lambic sour, but definitely tart. It finishes with a touch of woody hop and yeast bitterness, as well as lingering barnyard-type brettanomyces funk.
Palate: Light to moderate body; doesn't sit heavy. Champagne like texture that's typical of Belgian inspired sours. Moderate plus carbonation. Slightly sticky.
Overall: Quite a complex brew with a long and lingering finish. Glad I bought half a case, will be enjoying these for years to come.
