As a result of this experimentation, businesses on a global scale began to launch programs that focus on modernizing their technology and legacy systems, concentrating on rethinking the modernization process and how they should go about it. A vital component to digitally transforming a business is realizing the potential impact of sharing data in real-time. Real-time sharing of data and analytics is crucial to the modern perspective approach to utilizing data insights.
Relying only on internal data is no longer sufficient. However, if companies can make the correct data information available to the right people, collaborations begin to form, and valuable insights and knowledgeable input can improve business decision-making.
Modernizing company technology can have an incredible impact on many industries where data in real-time is crucial to quality assurance, including food sourcing, customer experience, aviation safety, and efficient global supply chains. There isn’t an industry on Earth that won’t see improvements from sharing data in real-time because it enhances the ability to make educated decisions faster.
Improving How We Share Data
Several ways exist to improve how companies share their data with trusted sources. Blockchain technology, for example, is a distributed database that enforces secure and tamper-proof transactions. It’s a valuable tool for securely sharing data without bringing in a third party’s services.
Businesses could also consider improving their data-sharing capabilities through the use of the cloud, a prevalent way for most companies to modernize the way they share data without completely breaking down the current systems they have in place. Cloud storage creates an avenue for organizations to share and store large amounts of data and files without worrying about the amount of available storage space or limitations to the bandwidth.
With cloud storage, you can access business data from anywhere as long as you have approved login information. With the surge of remote workers and hybrid work environments across the globe, businesses have taken to operating on cloud platforms and updating their current systems to improve how their employees can log into work servers. It’s also easy to track logins, adding another layer of safety to the data-sharing strategy.
The data-sharing process has to begin somewhere, and instead of discussing the challenges that process can bring, we’ll focus on how to improve our understanding. To modernize the ways in which we share data, we must first grasp the importance of the API, fully comprehending the API journey.
Understanding the API Journey
Everyone has probably come across the acronym “API” at some point in their business journey, primarily if they have an online presence. API stands for application programming interfaces, and they’ve become a vital component of modernizing digitally for most businesses. APIs allow companies to link data and systems, playing a massive role in responsiveness and adaptability.
Still, it takes skill and expertise to implement APIs properly, and things can get messy when done incorrectly. When APIs are poorly executed, companies will find redundancies and limited transparency, adding confusion instead of clarity to how we share data. It’s crucial not to get caught up in wasting time rebuilding and replacing legacy systems by adding APIs without a plan, causing regression rather than progression.
Instead, understanding the API journey begins with defining the APIs our businesses need to build, fully comprehending which data needs real-time access and which employees and team members (and sometimes third parties) need access to that data. APIs are the bridge between the various systems that provide access to information.
APIs are relatively flexible, so choosing which ones to build can be overwhelming, with API tests taking up more time than you’d prefer. You must begin with enabling solutions that will provide your company with a solid technical foundation while improving your customers’ journey. Develop your APIs based on the goals you have for your business and how you intend to modernize those goals.
A great example is a traditional bank competing with a technologically advanced fintech by building an API that enhances its customer experience. Introduce efficiency to your consumer base through API architecture wherever possible.
Managing APIs
Building APIs and successfully managing them are two very different things. If a company has a large number of APIs, a solution to manage said APIs makes sense. API management is a way to centralize your APIs, simultaneously keeping your services secure while sharing necessary documentation and data.
Managing your APIs should include a gateway, developer portal, and analytics dashboard for consistent real-time monitoring. API management solutions can help you keep track of your website traffic, connections, security measures, and errors. An API management solution can be tricky to implement, and you must consider additional security layers for exposed systems, rigid access control regulations, lifecycle management, and maintenance.
Properly building APIs and employing them at their full potential is a long road full of challenges. The orchestration and security implementations alone can be time-consuming and frustrating, and onboarding and integrating new partners and systems doesn’t help alleviate the stress of enforcing a new API architecture.
Sharing data in real-time means growing your partner network, which comes with a load of technical work to function so that you can begin to recognize the value of the data presented. APIs are a fantastic data-sharing approach but don’t come without risk, effort, and extensive costs. It’s not uncommon for many businesses, primarily those short on time and funding, to struggle with constructing and working with API IT systems.
A Modern Twist on Traditional APIs
Most businesses today are driven by data, and many have begun to rethink the API approach to sharing said data. Overall, the API approach needs an upgrade to ensure data consistency, especially when various data sources are involved.
Earlier in this article, we mentioned cloud-based data sharing (a standard and typically fast replacement for legacy systems), but we also touched on the concept of blockchain technology. Blockchain technology is dripping with potential, but business leaders must recognize its limits when scaling storage, bandwidth, and power computing. However, connecting blockchain technology to cloud infrastructure could be the modern solution to a technology that would raise the bar for data sharing if it were serverless.
Serverless functions take away the complications within infrastructures that blockchain technologies typically present. Serverless functions provide the perfect solution for unlimited (but costly) computing resources, with no single infrastructure management necessary. With serverless functions, you can scale down resources when they’re not in use, making them on-demand and, therefore, more convenient than they’ve ever been before.
The combination of Blockchain and serverless technology presents a myriad of powerful capabilities. It’s essentially a way to scale data and provide business leaders with a solution entirely native to the cloud, employing desirable aspects like unlimited storage and never-ending networking capabilities.
Scalability and flexibility are must-haves concerning solutions that assist companies in data sharing. Flexible solutions allow storing data from different sources without creating competition for resources. It’s revolutionary.
The combination of serverless and cloud technology provides an innovative answer for companies that want to share data through various organizations. It presents the ability to focus on building applications driven by value and consumer preferences, demands, and expectations.
Business network participants could share data externally, with plenty of access control, in real-time. The number of doors this opportunity opens up is endless, and there is no need to dedicate precious resources to resolving and managing the consistent string of problems that comes with the (often incorrect) building of API architecture

The modern perspective implementation of data-sharing solutions should be time-consuming. Modernizing technology was once an endeavor that took business leaders years to achieve, but collectively, we’re not there anymore. To modernize successfully, look to the tools that can help your business advance, share data externally and safely, and explore the full potential you have to create a partner ecosystem that works for you.
The idea of digital modernization is to get there faster but also in an efficient manner. Building the API architectures of yesterday is looking more and more like the modernization of the past with each passing day. However, combining serverless and Blockchain technology is the modern approach to data sharing that we’ve all been waiting for.

A Sideboard: A Relic to Display
Sideboards initially appeared in Britain in that country in the 1770s. Slab tables were the first of their kind. Since these early sideboards were used not only for serving but also for chopping and other kitchen tasks, marble tops were a common addition. Slab tables just consisted of a flat surface mounted on legs and offered no space for storage. In his illustrated style guide published in 1788, renowned cabinetmaker Hepplewhite featured a sideboard. As Hepplewhite's piece expanded beyond the slab table, it diverged from the latter.
Silverware, dinnerware, and serving pieces would have all found a home in the Hepplewhite sideboard. Modern sideboards serve the same purpose as their grander Hepplewhite and Chippendale (he was involved, too) forebears. After the year 1770, sideboards were an essential part of any dining room. While contemporary homes don't need to replicate the elaborate dining rooms of the Hepplewhite and Chippendale periods, it doesn't mean they can't enjoy the benefits of having one.
We have all seen some period dramas when a group of people is sitting in a big dining room at a fully laden table and being fed food from the sideboard. Although we no longer have butlers or elaborate formal dining rooms, we still need places to put our silverware and china when we entertain. Therefore, Sideboards are pieces of history we may keep in our houses now. Beautiful and functional, they may be used in a variety of settings, including but not limited to living rooms, dining rooms, and even kitchens.
Where can one locate the perfect sideboard? Looking online is a good first step. Along with its zero-dollar price tag, the vast availability of Sideboards in a dizzying array of stores is a major selling point. If you want something grander and akin to the 1770s style, you will be able to find it. On the other hand, you can easily find what you're looking for if it's modern, contemporary, or sleek. The convenience of online purchasing is that you can do your research before you buy.
Make sure the sideboard will fit into the room before you buy it. Find a sideboard that will fit the space you've allocated for it by first measuring the area. You can get sideboards ranging from very small to rather massive. Consequently, it is essential to ensure that the items you like or want will fit in the space available. A TV can be placed on top of a sideboard in the living room. It will be equally at home in the kitchen where we often need more storage space. The legacy of the sideboard can be preserved through the purchase of a high-quality piece that will survive for generations and could even be passed down through families.

You should never settle for second-rate quality while searching for an antique sideboard. An object must be at least a hundred years old to be considered an antique. Antiques are beautiful, but they may be pricey to purchase and take special care of. A more popular trend is to go with an antique replica of a sideboard. When compared to the original, replicas are a steal at only a fraction of the price. Any space that's missing that final finishing touch needs an antique sideboard.

A List of the Mods I Use: Part 4
The fourth in the series of posts about my mods, I am so sorry I’m spamming you all. I probably won’t reblog these on my main right away to not spam you again right away. Anyway, this list is for the convenience mods.

Calm Bees by LittleMsSam - This mod allows your sims to use an interaction to calm the bees, because the bees are ALWAYS ANGRY. Online Homework by Frankk - A mod that adds the ability to do homework online. I only got this one recently, but it’s very handy. Protective Raincoats by LittleMsSam - This mod does what it says - it makes the raincoats in CAS prevent your sims from getting wet when they wear them when it’s raining. More Woodworks by LittleMsSam - This mod adds more items to the woodworking table, so you can make things from the Build/Buy mode that look like wood (like the wood looking toddler potty, wood beds, dressers, etc). Call a Babysitter by LittleMsSam - This mod allows you to text a teenager your sims know and hire them to babysit your babies/toddlers for up to 6 hours at $15 an hour. Always moveobjects on, Always freebuild, Always fulleditmode, Always testingcheats true, Sell Inventory, and No Weather Build/Buy by Twisted Mexi - I would normally give each of these their own category, but they’re all on this page. These add so much convenience when building especially - I have had the always moveobjects on for quite a while, and only just recently added the others as well. All of these do what they say - Sell Inventory allows you to sell all of the items in the household inventory without having to go through all of the items manually, and no weather build/buy allows you to actually see what you’re doing when you’re building and it’s having weather. Automatic Stereo System by LittleMsSam - This mod makes it so your sims can turn on an automatic radio system. This will make it so the stereo will shut off when your sims aren’t around, and turn on when they come back. Transfer Inventory by LittleMsSam - This is one of my favorite mods. It makes it so you can transfer harvestables from your sim’s inventory to the fridge, books to the bookshelf, anything to a chest, and flowers to flower arranging tables. And vice versa, you can also take all of the items out of a storage unit and put it back into your sim’s inventory. Personal Objects by LittleMsSam - This one I only just downloaded recently because I was getting annoyed with my freelance artist sims just putting their sketchpads down anywhere. I don’t know if it works yet, though, I haven’t gotten around to testing it. Remove Sims from Conversations by thepancake1 - This is the best mod ever. It gives you the ability to right click sims out of your conversation, because everyone knows how randoms love to join a conversation you want to be private. Can I Come Over? by LittleMsSam - This mod is handy for when you want to hang out with one of the sims your sim knows, but don’t want to invite them over and don’t want to scan the ENTIRE WORLD for where your target sim lives. Faster Run to University Class by LittleMsSam - This mod is a lifesaver for anyone trying to do university. This makes it so your sim will do the “desperate to throw up” run to their university class, instead of just casually strolling. Healthy Food on Fridges by LittleMsSam - Does your sim not have the health nut lifestyle, but still want to eat healthy? Well, this allows any sim to cook healthy foods! (Makes it really handy for the “health nut” misc fun roll on random legacies.) Get All Urns/Release All Ghosts by LittleMsSam - This mod is absolutely a must have for legacy players. This mod gives you the ability to get the urn of any sim you want, and if you get tired of having ghosts around town you can also release the ghosts of all the sims in the world. Find All Collectibles by Sigma1202 - Another mod that’s really necessary for certain types of gameplay. This gives you an interaction that makes your sim look for all frogs or all rocks in the vicinity. It doesn’t do other collectibles, but that’s okay. Play Own Tracks as DJ by LittleMsSam - This mod allows your sim who has made their own tracks to play them when they’re DJing. Selectable Pets by AOM Studio - It’s much easier to know how to take care of your pets when you can see what their needs are, and tell them to take care of them themselves if your sims are busy. More Columns in CAS by weerbesu - This mod makes it so you have more than just the 2 default columns in CAS. There’s 3 options: 3 columns, 4 columns, or 5 columns. I use 4. Nap on Ground by Triplis - If you’ve seen my posts of my sims randomly doing the corpse pose on the ground and sleeping, this is what causes that. Unfortunately, it makes them often just lay on the ground to take a nap instead of going to bed sometimes, but it’s handy for those times when your sim just can’t get to a bed. No Tense Homework for Child/Teen and University by ClaudiaSharon - Both of these mods make it so that children, teens, and university students can still do their homework when they’re tense, because homework waits for no emotional stability. Small Cottage Living Tweaks by Zero - I only have three of these mods, Dogs Chase Foxes More Often, Patchy Scares Foxes, and Less Social Animals. These do what they say, and the last one is a life saver because I never think to have my sims talk to ALL the farm animals every day. My Body Odor No More Wakes Me by FDSims4Mods - This mod is a lifesaver, because sometimes your sim needs sleep more than they need a shower. Automatic Thermostat by LittleMsSam - This mod is a lifesaver, too. With a base payment, you can set it up so that your thermostat is always set to the appropriate temperature. No Auto Put Away Toys and Pet Toys by LittleMsSam - I’m always annoyed when my sims put away the toys I put out for the pets or toddlers to play with, and this prevents them from doing that. Auto Put Painting and Kids Crafts in Inventory by LittleMsSam - This mod makes it so sims will automatically put their paintings/crafts in their inventory, so they can just keep painting over and over without you paying attention.

Ultraman Z Ep. 19: “The Last Hero” (TV Review)
(Original Airdate: October 31, 2020, Director: Takanori Tsujimoto, Writer: Toshizo Nemoto)
Time certainly got away from me last week, but I finally found some to be able to look at this amazing episode of Ultraman Z.
While fighting the monster Bemstar after it lands on Earth in search of food, STORAGE is taken by surprise when the monster flees at the sight of a crack in the sky. While the team stands by to deal with whatever comes out of the portal behind the crack, Zett tells Haruki it has the energy of the Yapool, a villain that once created “Terrible-Monsters” that were fought off by Ultraman Ace. When Yapool’s energy emerges in the form of the monster Baraba, it’s up to Haruki and Zett to hold fast against its overwhelming power.
Though they may require some help from an Ultra-Legend.
[Full Review Under the Cut]
Director Takanori Tsujimoto, who’s had a stellar track record this season including “First Juggling”, “Robot-2 Activation Plan”, and last time’s “Rechallenge from the Year 2020”, and the effects crew’s work on this episode appropriately make it feel like a capital-E “Event” above other episodes. After the more subdued style of camera work in the previous episode, this time is almost relentless with one creative effects-shot or high energy sequence after another. Before things kick into high gear, we get a shot from the perspective of a civilian’s cell phone camera of Windom and King Joe on standby to fight against whatever comes out of the crack in the sky. The compositing between the shots of the model city and the physical space the extras playing the civilian witnesses are in is seamless. Ground-level civilians also play a role in a small visual gag as Zett fights Baraba. A sliding parallax shot between people trying to get pictures of the fight that runs in parallel to the background action as the camera slides across the events.
The camerawork also plays into establishing Baraba as a threat in this episode. When the “Hitman Terrible-Monster” (gotta love these titles) lands from the portal it broke through, the camera does a hard pullback into an office building where we see the windows shatter from the shockwave of the monster’s first attack. Each move Baraba takes from there further reinforces how direness of its presence. First in how quickly it takes out King Joe, though that’s becoming less of an impressive feat as we get more appearances from Joe (I swear its been overall less helpful in fights than either of its predecessors.) More impressive is how quickly it manages to deal with Ultraman Z in Delta Rise Claw form, knocking Beliarok out of Zett’s grip quickly before the fight becomes an utter curbstomp. Baraba manages to do something we’ve only seen once before, knocking Zett out of Ultra-Fusion into his default form.
When the battle against Baraba becomes as desperate as any we’ve seen in the show, hope arrives in the form of Ultraman Ace.
Like with Ultra Q last time, I haven’t watched the series for Ultraman Ace yet, so there’s only so much I can say about this episode as a tribute to that. However, the shift in the atmosphere of this episode is palpable once Ace shows up to provide support against Baraba. From the accompanying music to the way the lighting makes him shine a little brighter than anything else in this episode, Ace’s arrival marks the fulfillment of the “Event” tone the rest of the episode sets. Ace showing off all his energy attacks against the monster, before encouraging Zett to rejoin the fight in Beta Smash form (appropriate since that fusion features Ace’s power as one of its components.) It’s mostly another fantastic display of action for the series, but it does feature the one effects shot in the episode that didn’t impress me. We see both Ultras attack Baraba from various angles as a CGI cityscape spins alongside all of them. It’s a bit much in an episode where otherwise the effects are some of the most impressive in the series and does more to distract from the action on display than enhance it.
The battle between the Ultras and Baraba ends when Ace teaches Zett to use Beta Smash’s power in a new attack called “Space Z”, finally defeating the monster. The end of the fight leaves both heroes with time to talk about their connection to each other, namely a “debt” that Zett told Haruki he owes to Ace earlier in the episode. Ace reveals that he’s the one who gave our title hero the name “Ultraman Z”, making him Zett’s “godfather” as Haruki puts it. The older hero tells Zett he chose the name since the letter Z means “the last” on Earth. Which is Ace’s hope for Zett’s legacy, that he’ll be the last hero the galaxy will need to fight against evil (so… no pressure or anything.)
Jokes aside, Zett looking up to his senior Ultra’s has been a major recurring motif in this series. Whether it’s wanting to be Zero’s student or the honorifics he tells Haruki to give the past heroes when they use Ultra-Fusion, wanting to be part of that legacy defines Ultraman Z. Here we see some of that admiration returned in Ace’s hope for the rookie Ultra. There’s added meaning, from a meta level, for that sentiment coming from one of the Showa-era’s “Ultra Brothers.” While Zero and Geed are both fantastic characters and heroes, they are more contemporary with Zett. Getting a demonstration of Zett’s in-universe connections to the greater legacy of Ultra displayed as spectacularly as it was in this episode is the best character showcase for Zett himself we’ve gotten.
Since the episode after this was a clip show I won’t bother reviewing, I’ll return to Ultraman Z with this Friday’s upcoming episode after it airs.

This is sulfites, wine lovers. This is sulfites. We got to clear the air with sulfites. Are you ready? Sit down. We got this. Let’s get some science going on.
When you have a glass of wine in your hand and you haven’t even smelled it yet, you haven’t even tasted it yet, you are anticipating it. Oh my gosh, I’m about to enjoy a glass of wine. When you put your nose in that glass, you’re going to get a bunch of information that you will interpret as certain aromas that you may have experienced in your life. If you haven’t or you can’t find it, someone will tell you something. However, what you’re expecting is a journey through this glass or through this bottle.
There are certain grapes and blends that have certain characteristics in the aroma profiles that are standard. Cabernet Sauvignon has a certain standard profile. Nebbiolo has a certain standard profile. When you’re smelling a Cabernet Sauvignon, or even a Cabernet Sauvignon blended with Merlot, Barbera, or a Chardonnay, you’re anticipating the aromas that are often associated with that wine. Then, you’re anticipating the additional layers of aromas that are brought about by the winemaking process. The initial aromas that you smell usually are called precursors, which are just the inherent aromas that are inside the grape that come out through the fermentation process and aging. Then, there are the aromas that come from oak or from stainless steel, which is not really a thing. Also, concrete, which is another weird thing. Yet, there are other aging aromas that will develop.
A wine will get more delicate, or you have a young wine that’s not meant to age. Still with that, you are anticipating something. You know that a red blend is going to smell like all the berries and vanilla. It’s going to be soft but it’s going to be pleasant. You know you’re about to experience that pleasant stuff. This experience with wine is only possible because of nature’s ability to combat elements in nature that can compromise that experience. In the next episode, we’re going to talk about some of those things that can compromise your wine experience.
Today, I want to talk about the thing that can protect the wine from some of these things that nature wants to throw at it. That thing is called sulfur, a natural element that takes up 0.5 percent of the weight of the Earth’s crust. You can go on Amazon and just type elemental sulfur. You can buy sulfur from Amazon. It’s a yellowish, pale yellow, brittle, solid substance. When it’s burned in the air, it creates a gas called sulfur dioxide, otherwise known as SO2. It’s in this form as a chemical compound that it’s most widely used by winemakers.
It is one of the most important elements of winemaking besides the actual grapes in the fermentation process. Sulfur dioxide has been used since antiquity to preserve wine and food storage. From ancient Sanskrit speakers, it was called “sulvere.” In the Bible and the Book of Genesis, they call sulfur “brimstone.” In the 15th century, where German winemakers would burn wood shavings, they would use sulfur and herbs inside barrels to prepare them to put the wine in. Finally, in the 18th century, some of the most prestigious Bordeaux chateaux learned from the Dutch to do the same thing to their barrels. Today, SO2 (sulfur dioxide) is used in pretty much all winemaking.
It makes sense because of its protective qualities. To understand this wine protector and what it does for wine, it does two main things. Number one, it’s a minor antimicrobial agent. It sounds pretty cool, right? And number two, it helps to prevent oxidation. It helps to prevent browning agents from browning a wine. Now in the vineyard, remember how I said it takes up some of the Earth’s crust? Well, naturally, there is sulfur in vineyards, and often there’s enough in the soil mix to help prevent whatever is happening out in the vineyard. However, there are certain fungi like powdery mildew, which is a very tough fungus to get rid of. The wineries will sometimes spray sulfur on their vineyards to make sure that powdery mildew does not infect their vines.
Remember in the first couple episodes of the first season, I talked about the challenges that a winemaker has out in the vineyards and how nature is just out there and you have to navigate it? The same thing happens when wine comes into the winery. Once you crush grapes and start the wine process, that grape juice is vulnerable to all kinds of bacteria and oxygen ready to destroy it. Not destroy it, but break it down into something else. It’s nature.
If you were to take an apple, slice it open, and just leave it on the counter, then come back in an hour or so, you’ll notice that oxygen has been soaking into the apple. The apple is browning. That is nature oxidizing and breaking down matter. If you taste that apple, you’ll notice that it’s not as sweet as you expect because the browning agents are starting to take hold and reduce the apple. If you were to shock that apple with SO2, that would protect the apple from browning. If you ever had dried fruit, dried fruit is shot with a ton of sulfur or SO2. A ton, so much more than wine ever gets.
In your typical glass of wine, there are about 0.005 to 0.010 grams of sulfites in your glass. In dried fruit, there’s 10 to 20 times that amount. In wine, we’re just trying to prevent a couple of things from happening, but in food, they’re trying to saturate the whole thing. I find this exceptionally fascinating. I love this stuff. I think science, nature, and chemicals are so amazing. When we understand it and we can harness it, it’s even better.
Now, what happens here is when they shock the must with SO2, two things are going to happen. Number one, during the fermentation process, the SO2 is going to soak into the grape juice. It’s going to bind itself with some of the constituents in the grape juice like sugar and pigment. What that does is it maintains the color and maintains that sugar content. Once the SO2 has saturated as much as it can into the must, there is often still SO2 available that has not binded to the wine. The SO2 that soaked in and did that work is called bound SO2 because it bound itself with constituents in the wine. The SO2 left over from that is called free SO2. That free sulfur dioxide is the sulfur dioxide that does the work of rendering browning agents impotent — not allowing the wine to break down so we can enjoy the things that the wine and the winemakers want us to enjoy.
With all that work being done, there’s going to be some residual sulfites in the resulting wine. There is a very small percentage of the population of humans out there that have a problem metabolizing these sulfites. And because of that, they can have an allergic reaction. It’s very rare, but it happened enough that the TTB, which regulates alcohol in our country, regulated that wine labels need to say, somewhere, “contains sulfites” as a warning. The term “contains sulfites” is the total of the bound and free sulfites together. It’s called the total sulfites. How is your brain doing? Is it a little science-y right now?
It’s a lot, but the thing is, these are things that winemakers have to talk about. What’s really interesting about this whole SO2 addition is it’s going to happen to every wine. It just depends on how much they want to add. It’s really a case-by-case basis. Winemakers are trying to make good wine, and they know that SO2 will protect the wine. They know that if they don’t add enough, something bad is going to happen. If they add too much, something bad is going to happen. If they do that, something may or may not happen on those ends of the spectrum. However, right in the middle, there’s a really good chance that the wine will be sound. It makes sense.
Now that you think about it, if you don’t add enough SO2, more of it is going to bind than be free, or maybe there’s not even enough to bind and be free. Then, you’re letting things in like browning agents and spoilage yeasts. What’s going to happen is that stuff is going to take over the wine. This extreme, no-addition stuff is what people are calling “natural wine” or “low-intervention.” I’m not going to talk about those terms because they have no definition. They’re not really even real. I can’t educate you on things that have no definition. We’ll talk a little bit more about that in the next episode.
If you add too much SO2, you’re overprotecting the wine. When a wine is opened and you pour it into the glass, it wants to breathe. It needs oxygen to open up. Isn’t it crazy how oxygen is the enemy and the friend of wine? Once the wine is poured into a glass, you want oxygen to start opening it up and do the work of all the aromas and stuff coming out. If you over-shock with SO2, the oxygen can’t do enough work, and it makes the wine a little bit flabby.
I was talking to Scott Kozel, who I interviewed for the oenology episode, and he told me that this is really the only tool in the toolbox winemakers have to stem out oxidation. What’s cool is that it is a natural element. It is not a manufactured thing. A little side note: Scott Kozel wrote his thesis on sulfites when he was in school. And because of that, we had another mind-blowing conversation that confirmed a lot of the research I did for this episode. He said some interesting stuff. One thing was that winemakers are more concerned about free SO2 than they are about bound SO2 because those browning agents are a big deal. They don’t want those to take over.
Then I asked him, what is it about the sulfur in nature or the residual sulfur that is used to spread in the vineyard? Does that make it into the winery? And then how does that work? What’s interesting is he said that the sulfur that comes in from the winery often gets converted into what’s called hydrogen sulfide. (Sulfide with a D, not with a T). This is the form of sulfur that smells like rotten eggs. Actually, elemental sulfur also smells like rotten eggs. Hydrogen sulfide, when fully converted, really has a stank on it. If a winery isn’t practicing good hygiene, then that stink will sometimes make it into the wine. That’s why sometimes when you open a wine, it stinks a little bit. Just let it blow off because it’s residual hydrogen sulfide from the winemaking process, and it was a little dirty.
He also said something that was fascinating. In the early days of canned wine, it showed that SO2 has a reaction to aluminum, which produces hydrogen sulfide. Back in the early days of canned wine, if you were to open a canned wine, it would smell rotten, but it would blow off. That’s basically what was going on. Nowadays, he said that the industry is catching up with that and they’re making more sound wine in cans by limiting the amount of sulfites in the cans so that it doesn’t have enough of a reaction with the aluminum. Interestingly enough, canned wine is low-sulfite wine. Woah. Not only that, but if a winemaker has a lineup of wines, they usually bottle. Then, if they want to add a line of cans to their brand, they really have to make two different wines. That’s crazy.
There you have it: A nice, general rundown of the sulfite thing. I wanted this to be an episode because there is a time in the industry where the idea of sulfites was a hotly debated subject with allergies. Now, sulfites are in a new realm of debate about additions, whether to even add any. I just wanted you guys to know the science behind it so you can make your own decisions based on what people tell you about sulfites. These are the hard scientific facts of what this will do. You may have heard or may be in the middle of a debate about the whole sulfite thing with somebody, but just know that it’s the decisions that people make that define the resulting wine. Science is there. Nature is there. It’s going to do whatever it does.
Winemakers have tools that they use, naturally, that help a wine become something wonderful. SO2 is one of the most important things they have to protect wine, but it comes down to what the winemaker cares about and what they want. Do they want nature to run rampant? Do they want to have control over it? Or do they want to overdo it? It’s a big world out there of wine. All three of those things happen, so this is what sulfites do for wine.
And I know I mentioned some things in this episode that you may not recognize, but just know that in the next episode when we talk about wine flaws, I’ll go into a little more detail about this. I’ll mention sulfites again, but we’re going to talk about what slips through the cracks when SO2 is not there to protect the wine. And things can get iffy. We’ll talk next week.

Nowadays, he said that the industry is catching up with that and they’re making more sound wine in cans by limiting the amount of sulfites in the cans so that it doesn’t have enough of a reaction with the aluminum. Interestingly enough, canned wine is low-sulfite wine. Woah. Not only that, but if a winemaker has a lineup of wines, they usually bottle. Then, if they want to add a line of cans to their brand, they really have to make two different wines. That’s crazy.
There you have it: A nice, general rundown of the sulfite thing. I wanted this to be an episode because there is a time in the industry where the idea of sulfites was a hotly debated subject with allergies. Now, sulfites are in a new realm of debate about additions, whether to even add any. I just wanted you guys to know the science behind it so you can make your own decisions based on what people tell you about sulfites. These are the hard scientific facts of what this will do. You may have heard or may be in the middle of a debate about the whole sulfite thing with somebody, but just know that it’s the decisions that people make that define the resulting wine. Science is there. Nature is there. It’s going to do whatever it does.
Winemakers have tools that they use, naturally, that help a wine become something wonderful. SO2 is one of the most important things they have to protect wine, but it comes down to what the winemaker cares about and what they want. Do they want nature to run rampant? Do they want to have control over it? Or do they want to overdo it? It’s a big world out there of wine. All three of those things happen, so this is what sulfites do for wine.
And I know I mentioned some things in this episode that you may not recognize, but just know that in the next episode when we talk about wine flaws, I’ll go into a little more detail about this. I’ll mention sulfites again, but we’re going to talk about what slips through the cracks when SO2 is not there to protect the wine. And things can get iffy. We’ll talk next week.
