The white Georgian Tsolikauri grape variety has gained the most popularity in the western regions of Georgia. This is one of the most recent varieties: it has been harvested since mid-October. Before the berries fully ripen, at least 179 days must elapse from the moment of budding. The value of the variety lies in its adaptability to the external environment, endurance to diseases and pests, high yield and quality of grapes.
Grapes are picked manually at the peak of ripeness with a sugar content of at least 19%. Cooled to a temperature of + 4 ° C to + 6 ° C, grapes are pressed through a press and placed for fermentation in oak barrels or enameled tanks. Depending on the technology, the wine material is prepared with or without crest separation. At the end of the fermentation, the wine matures within a few months. As a rule, the wine is ready for bottling in a year, that is, after the next harvest. Maximum wine materials can withstand 2 years.
If the grapes of the latest harvest are used for the production of Tsolikauri, the wine is tart, fleshy, full-bodied, with a thick tint of fruit, citrus and flowers.

2013 Lagvinari Tsolikouri--Orange Wine from Ancient Caucasus Vines
So, I haven’t been this excited about wine in a while, as my tasting notes will atest. It is orange, it is unfiltered, it is ridiculously drinkable and I recommend the serving size read: 1 bottle. Hangover ratio: none. Price: I was drunk when I bought it, so I want to say $40?
Here are my tasting notes:
7:16 pm: It’s psychological perhaps, but all the notes are the hues and shades of orange. Not only the Penny-copper blood juice of citrus found in Old Fashioneds, but of the distilled powers of Hekate, maybe? The flavors of flame and sulphuric dust of Hades. For the vines are ancient, and primordial in the mythology of wine. And the taste of old magic, eternal fruits, gold and sun ray polls of this wine makes it an alchemical treasure, the blood of the salamander and the sweat of the ourobus are squeezed and stomped into this elixir vitae.

White-dry georgian Wine''Lagvinari, Tsitska-Tsolikauri''
Wine made from the autochthonous grape varieties Tsitska and Tsolikouri, which are grown in Western Georgia. The production is based on the traditional Imerta wine-making technology, according to which grapes are separated from the ridges and maceration is carried out on the pulp. Fermentation lasts 1.5-2 months. The result is a wine with a higher acidity than the Kakheti wine, less tart and with a more even taste.
Fermentation and aging of wine takes place in clay jugs Kvevri ovoid form. Before bottling, the wine is not filtered or clarified, the content of sulfites is low. Lagvinari is a small organic winery founded in 2011. In the production of wines, local autochthonous grape varieties and ancient methods of winemaking are used in order to promote the development of Georgian agriculture and the preservation of a rich winemaking heritage. Clay ovoid vessels known as Kvevri, added to the UNESCO World Heritage List, are used for fermentation and aging of wines in Lagvinari. Currently, the winery produces nine wines of various styles according to the Kakheti or Imereti method.
Colour The wine is an attractive golden color with amber highlights. Taste The wine has a fresh, lively, invigorating, fruity taste. Abundant citrus tones gradually tend to tight honey notes. The finish is long with a pleasant grassy acidity. Scent The refreshing aroma of the wine is filled with hints of citrus and green fruits.
