Super Easy and Delicious Lactation Cookies

Something about the mouth-watering smell of cookies baking in the oven warms my heart. Biting into that homemade goodness is pure comfort and that is why I am a fan of lactation cookies. They are a great way to incorporate nutrient packed ingredients into a comfort food. The early postpartum days are filled with many firsts for everyone. It’s a time of excitement, change and the learning curve that comes with getting to know your newborn. That’s why I love to bring lactation cookies when I visit new families! It’s food for the soul and is always a welcomed treat whether you are breastfeeding or not. I make sure to include lactation supporting and nutrient rich ingredients making these cookies full of fibre, B Vitamins, magnesium, calcium, iron, nutritional yeast and oats which are gentle galactagogues (which encourage milk production). The raw cookie dough freezes well, making it a great recipe to make ahead of time – your postpartum self will thank you! They can also be enjoyed by the whole family. Don’t worry partners…these cookies won’t cause you to start lactating too…I promise!
Here is the Recipe:
Melanie’s Lactation Cookies
Heat oven to 375F
First combine 4 tbsp of ground flax seeds with 8 tbsp of water and set aside to thicken.
In a mixer beat together:
1 cup grass-fed butter
¾ cup coconut sugar
2 pastured eggs
1 tsp vanilla extract
2 tbsp organic molasses
flax and water mixture
In a separate bowl mix the dry ingredients:
2 cups organic flour
1/4 cup nutritional yeast
1 tsp baking soda
1 tsp sea salt
1 tsp cinnamon
Combine wet and dry ingredients and fold in:
3 cups rolled oats
1 cup chocolate chips …or raisins..
Place tbsp size cookies on a baking sheet and cook for 8- 10 minutes
