Back of the Cupboard Chili
There I was needing to make lunch...had not been to the grocery store in a week so what was for lunch...the cupboard staples stash came to the rescue again. I opened a few cans, cruised the freezer for corn, and topped it off with offerings from the spice rack - yahoo lunch was on the way. See what you think... 2 - 15 oz. cans tri bean blend or 2 cans of pinto beans with liquid
1 medium onion, diced
1 - 4 oz. can jalapeno chilies with liquid
12 bag frozen corn
1 - 15.5 oz. can garbanzo beans, drained
3 c. tomato juice
1 - 14.5 oz can diced tomatoes with liquid dash cayenne pepper
1 t. chili powder
1 T. oregano
1 t. cumin seeds or ground if that’s what’s in the cupboard
1 t. salt
1 T. garlic powder
1 t. coarse black pepper
Option: Dried epazote scissor cut into tiny pieces
In a large sauce pan, add all ingredients. Heat to bubbling, corn’s defrosted heated through and ladle up into deep bowls - it's just that easy.
