INGREDIENTS 2 cup Dried white peas(Chole) 2 Potato 2 Tomato 2 Onion 2 Tea spoon Green chili paste 1/2 Tea spoon Garam Masala powder 1 Tea spoon Mustard seed 1 Tea spoon Coriander powder 1/2 Tea spoon Red chili powder Little bit hing powder 2 Tablespoon oil Salt to taste, Lemon Juice, Sugar (Jaggery) ****************** For Garnishing Sweet Imli ki Chutney Garlic Red Chutney Green Coriander Chutney Finely chopped onion *********************** Ingredients for Patis 6 Boiled potato 1 Cup Green peas. 1 Tablespoon green chili paste 2 Teaspoon Lemon Juice 1 Tablespoon Green coriander 1/2 cup Bread Crumps Salt to taste Oil / Ghee for Patis Fry METHOD For Ragda , Soak Dried white peas in water for 2-3 hours. Use pressure cooker to cook  till it get soft and not smooshed. Chop tomatoes and onion . Heat 2-3 tbsps of oil and add the onion.Fry till it turns light brown. Then add Green chili paste ,Turmeric Powder,Hing ,Garam Masala powder ,Coriander powder , Salt & Tomato Puree and cook it for 2-3 minutes. Mix this with boiled white pease and water for about 2-3 cups and let it boil. Add Lemon Juice, salt and Sugar to taste. For Patis, Boil pototoes and peel skin. Cook Green peas and then mash it with Pototoes . I cook green peas in eiether pressure cooker for 4-5 minutes or microwave in a plastic bag, with 2-3 tbs. water, for 5 minutes. Add green chili paste,Lemon Juice ,Green coriander ,Bread Crumbs & Salt. Now make round flat patis from this mixture . Put some oil on Tawa pan on high flame and let it cook on both side (brown color)Garnishing Keep patis in serving dish . Add ragda on patis. Then add imli ki chutny,green chutney , red Garlic chutney, chopped onion and fresh green chopped coriander.

Sookhi Urad Dal, dry preparation of Split Bengal Gram Lentils in Indian Spices | Learn how to make Sookhi Urad Dal
Sookhi Urad Dal is a one of the popular lentil preparation from the Northern States of India.. Punjab, Uttar Pradesh and Haryana. Usually lentils are prepared in curry or stew style. This dal is just the opposite from the regular lentil preparation.In many states of India, Urad Dal is widely used to make idlis like these idlis, savoury crepes and dumpling(like dal ke pakore or medu vada), used in filling for Kachoris(Dal Ki Kachori, Khasta Kachoris), Papads/Poppadoms etc..  In Northern states, it is also prepared in curry style or dry form and paired with rice or chapatis.
In western Uttar Pradesh(U.P) especially in the interiors, it is served on special occasions with rice, a side veggie, boondi raita and boora(a form of sugar). Imarti, an Indian Mitahi/sweet just like Jalebi is also prepared with Urad dal.
Other recipes with Urad Dal.. Bedmi Poori another popular fried puffed flat bread, Dahi Vade(lentil dumplings served in sweet yogurt with chutneys).
What goes best with Sookhi Urad dal
This dal best pairs up with Missi Roti/Besani Roti, Masala Parantha( Tikadia) or Tandoori Roti. Fresh Dal tempered with onions and ghee also makes a wonderful combination with Naan(try with my Whole Wheat Tawa Naan). If I make these for weekdays for lunchbox, then I pack it with whole wheat chapatis.
Serve it for dinner or at your get-togethers, as a side with any curry like Matar Mushroom, Matar Paneer , Rasewale Aloo, Papad Boondi Ki Subzi and raita(like Mix Veg. Raita, Spinach and Pomegranate Raita or Boondi Raita) for a wholesome meal experience.
How to prepare Sookhi Urad Dal
A no fuss recipe that take just a few minutes to prepare, but it is a bit tricky too. One has to be very careful, if it overcooks , lentils sticks together and dish looses it’s texture. Cook Dal al-dente.
The real flavour of this dal comes with whole spices likes bayleaf, cloves, black cardamom.So don’t skip these.
To cook perfect Urad Dal, with separate lentil grains, soak dal for 15-20 minutes.
Cook in Pressure cooker, to one whistle with turmeric and salt. Release the pressure immediately.You can also cook in an open pan, it will take 10-15 minutes.
For one cup of Dal add 1 cup water. Strain water from cooked dal.
You can use onion and garlic in tempering or skip it. It tastes good both ways.
To cook with  whole spices,finely chopped  onion and ginger and garlic, saute, onions and garlic in oil, add spices like red chili powder, garam masala and mix dal very lightly.
For no onion -no garlic version, skip onion and garlic and temper only with spices and ginger.

1 Cup Dhuli Urad Dal/Skinned Split Bengal Gram
1 Onion(small Chopped) (optional)
1-2 Garlic Cloves
Fresh Ginger(small piece)
1-1 tsp Garam Masala Powder
1/2 tsp Red Chilli Powder or as per taste
1/4 tsp Amchur/Dry Mango Powder (optional)
2 tbsp Vegetable Oil
Salt to taste
1 Bay Leaf
3-4 Cloves
1 Dry Whole Red Chilli
Wash dal and soak in water fro 15-20 minutes.
Drain Water,add dal in a pressure cooker. Add around 1 Cup water.
Let it boil, once the froth accumulates at top, discard it, add turmeric powder and salt as per taste.
Close the lid and cook Dal for 1 whistle. Release pressure manually.
If there is water, strain it and keep dal aside.
In a pan or kadhai. add oil, once it is warm add whole spices, cumin seeds.
Once seeds splutter, add onions and garlic and saute for 2-3 minutes, till onions are light brown in color.
Add garam masala powder, red chilli powder(if using), mix then add dal.
Mix it very lightly. Take care, don't mash dal.
Serve hot with chapatis or parantha.
Adding a spoonful of ghee, enhance the taste of dal. You can make tempering of desi ghee, cumin seeds and red chilli powder and add to dal before serving.
Add a tsp of dried fenugreek leaves while sauteing onions. It enhances taste.
For no onion-no garlic version skip both from the recipe.
To cook dal al dente in open pot , add 1.5 cups of water instead of 1 Cup.
Instead of Split Bengal Gram Lentils you can use Split Skinned Moong Lentils(Dhuli/Yellow Moong Dal)

Kheer er Goja, a very tasty sweet in Bengal.. It has a crisp texture from outside and from the inner side it is soft and juicy .. Its deep fried and then dipped in the sugar syrup.. But if we dip for long time, it can be soggy as well so we need to take care of the time always .. It can be made with Maida, mawa or Paneer. . Another one is Jalebi.. Its a spiral shaped crisp and juicy sweet that is made of all purpose flour and gram flour and then soak into thick sugar syrup for 2-3 mins and later served . I have brought these sweets from Maharani in Deshapriya Park. Its an old shop and they always serve fresh food. So m a big fan of their food.             There are different types of stuffing we can make for Kachori. Pulses like moong, urad, or channa dal are soaked then crush it, later cooked along with tempering by spices. Spices include fennel seeds, ginger, coriander, red chili, mint, etc. Vegetables like green peas, carrot, beans, corn, onion, potato are also used as stuffing. These are finely minced and cooked along with spices as per choice to a dry mixture. Simply grated coconut, sesame seeds, poppy seeds are also used as stuffing.
             The kachori outer body is made up of flour. For that approximately take the double amount of flour to compare to ready stuffing. By adding salt to taste and ghee(fat) makes the dough. To make Kachori more khasta (crusty texture), while making dough initially add little fat to the flour and crumble it. Post that adds remaining fat and makes dough. Can also add little Rawa(semolina) in flour.
             At some places before deep-frying the kachori, it has been quickly placed on hot Tawa (griddle) for slightly burned flavor, then deep-fried. Frying the Kachori is the most important part of Kachori making. It requires skills, patience, and of course experience. Need to place minimum Kachori at one time in oil. Heat the oil and turn off the gas, then place the kachori. Do not touch it with anything or try to shake it. Let it allow, as it owns to come up. Once the oil bubbles stop completely, switch on the gas and with help of spider splash the oil over Kachori. Continue this process till kachori became reddish from both sides, then take out.   
 Here I am Sharing Paneer Kachori recipe for your reference. Instead of Paneer, you can substitute with anything of your choice. Also can vary with spices level as per your taste bud.

In pan heat oil. Add cumin seeds, fennel seeds.

Add green chili & besan. Allow besan to cook.

Take out in a bowl. Add grated paneer. Check the seasoning.

Make a dough with help of refine flour,oil & salt.

Stuff the paneer mix in (2 nos)dough balls. Slightly roll it.

Deep fry it on medium heat oil, till nice crispy in texture.

For serving – make a hole in kachori, add tamarind chutney, mint chutney & curd.

Fruit Veggie chaat Recipe
INGREDIENTS
1 small green pepper(Capsicum)
1 Apple
1 Potato (Boiled)
1/2 cup green grape
1/2 cup red/black grape
2 medium cucumber
1/2 cup chick peas
1/4 cup chopped coriander(Dhana)
1 teaspoon Chat Masala
1 teasoon Lemon Juice(1/2 cut Lemon
1 teaspoon sugar
Salt and Black Pepper powder
 METHOD
Cut all the ingredients in to a small square pieces(apple, potato, green pepper,  cucumber).
Add Chick peas and grapes(cut into half) then add lemon juice, salt, Chaat Masala and Black pepper powder.
Mix it well, then put it in a serving bowl and garnish (decorate) with green coriander.
This is dish will go with snack as well as with dinner.
