Lunga di Napoli Winter Squash is HUGE and flavorful. Feed your whole village on one of these fruits, which will store many months into the winter. They are delicious in squash fritters, risotto, and stews. Throughout Puglia and Campagna (places where my great grandparents were born), and also Sicily, Lunga di Napoli Winter Squash is featured in a soup called cianfotta or giambota, which also includes chili pepper, eggplant, tomato, pears and plums. As the same species as Butternut, these plants have strong stems and are much more resistant than your average squash to squash vine borers. The vines are quite long, and the largest fruit we grew this year was over 50lbs, though we hear they can even get larger!

Tonight's test kitchen was a success. My sister and her girlfriend Whitney are house sitting in South Philly, so we had a lovely kitchen for experimenting with the Lunga di Napoli squash. Highlights for me were the risotto made by Whitney (and Sara) and the fritters made by Chris (and me). Whitney also made delicious flat bread, goat cheese dip, and ravioli - all featuring this Italian squash. We cooked all this and only used a quarter of one squash. Lunga di Napoli! Recipe ideas? Here it is stuffed earlier today (by my mom) with wild rice and fennel, and then several other photos of it throughout the season. Honestly, it needs some flavor help. Here are the highlights: it is HUGE, productive, pest and disease resistant, beautiful, and important in my ancestral homeland near Naples, Italy. The taste and texture are good, and it is juicy, but isn't packed with flavor like some other close relatives like Butternut. We will try using lots of butter and enough salt, and some carbohydrates. This week we will do a Truelove Seeds Test Kitchen where we will try many recipes, including risotto, ravioli, and stew.
