I love my worldbuilding cycle where I spend about a year thinking about something completely unrelated, then coming back to glance at previously established information that affects a lot of other things and going “hmm. Coming back to this I may have completely fucked this thing up.”

I wanted a simple comfort breakfast. I’ve been buying frozen salmon for 5/lb and wanted pan fried salmon scrambled eggs.

Literally just thaw, pat dry, season, fry in like a tsp of butter in a nonstick pan because otherwise you have to use more oil and I can’t handle that then remove when the salmon is just barely done. Let pretty much all of the cooking time be skin side down, just toss it on the top for like five seconds after.

Take it out the pan, scramble the beaten eggs on lower heat (with chives if you have them, thyme if you don’t) and right as the eggs are about to finish, break up the salmon and toss it back into the pan with one more tsp of butter. Plate, drizzle with only hot sauce because sour cream will kill you

After three hours of back and forth while cleaning, I made it and honestly? Genuinely so good. The salmon portion is only four ounces. Then it’s just two eggs and a total of 2 tsp of butter. Hot sauce and herbs don’t count because we’re retaining some small measure of sanity.

It’s not even that bad. It’s fine. I’m feeling fine about it. I almost ruined my day feeling stressed and crabby for no reason.
