*Tuesday Transformation* “Who’s that girl?? I don’t recognise the person on the left. I didn’t at the time, every time I looked in the mirror. I had totally lost myself to years of stress and comfort eating. The 1:1 Diet changed that totally for me. By cutting out all of the food crutches I had learned to rely on and eating a meal replacement diet, I was able to break all the unhealthy habits I had developed with food. One year on, I am 54kg down (8.5 stone down) (I lost most of it in the first 8 months) and I am back to my teen weight. Honestly I can’t believe I did it. I watched for years other people losing weight on other weight loss plans but they just didn’t work for me. • Too much planning • Too much juggling my diet meals with my family’s meals • Too much overwhelm • Too much choice • Too many opportunities to cheat The 1:1 Diet is different. You know exactly what to eat. It’s all there for you to grab and go. It’s so easy to know you’re on plan. No room for cheating. Follow the plan. The weight comes off. Simple. Don’t get me wrong. I have had to work really hard to stick to plan at times. I had to remind myself that getting healthy was more important to me than various temptations that crossed my path. I have fallen off the wagon a few times. But I have got back on again and I haven’t given up. There’s nothing special about me. I just made the decision to start and I didn’t stop. Quick & easy dinner 😁 Shakshuka 200 calories Serves 1 Suitable Step 2 & above INGREDIENTS 2 large eggs 70 gms diced fresh/canned tomatoes 10 gms sliced spring onion 1/4 tspn Golden Vegetable Water Flavouring mixed with 1/3rd cup of warm water Seasonings: Salt, cracked pepper, Paprika, oregano METHOD Lightly spray your pan with olive oil, add spring onions and tomato and saute for a minute. Add your broth and reduce a little. Add tomato mix to a ramekin and using a spoon spread the mixture around, leaving an indent in the middle. Slowly crack each egg on top of tomato base. Sprinkle with paprika and oregano. Bake in 180° oven (grill with fan works well) until cooked to your liking. 😋 Thursday Taste 😋 Souffle with Celeriac Chips 200 calories Serves 1 Step 2 & above Vegetarian Friendly INGREDIENTS Souffle 1x large egg 60gms low fat Cottage Cheese Sprinkle of garlic salt Cracked peppet Sprinkle grated nutmeg Celeriac Chips 200gms Celeriac cut into chips or wedges Garlic salt Olive oil spray METHOD For Souffle Preheat oven to 180°C Separate your egg white & yolk into 2 separate bowls. With a fork beat the yolk until air bubbles appear. Add the cottage cheese and garlic salt, cracked pepper. Whisk until smooth with air bubbles. Set aside Whisk the egg white until firm. Test the consistency using a spoon. When lifted upside down the white shouldn't move. If it slides off it's not ready yet. Using a spatula gently fold the white into the yolk a few times. Don't overmix, should be a firm consistency. Spoon into a ramekin that's been lightly sprayed with olive oil spray. Don't overfill as Souffle will rise during cooking. Bake for 10-15 minutes or until a nice Golden Brown colour For Chips Microwave Celeriac Chips until slightly cooked then spray a little olive salt and sprinkle garlic salt. Bake on tray lined with baking paper until crispy.
