This might be what makes me eat a steak 😜 Surf & Turf in Creamy Cajun Sauce INGREDIENTS: 1 tsp olive oil 5 ounces steak 7 ounces shrimp 10.5 ounces cauliflower 1/2 tbsp butter 1/4 cup veg broth 1 cup almond milk 1/2 tsp cajun seasoning 1 tsp dijon mustard 1 clove garlic 2 Tbsp reduced fat parmesan cheese 1 tsp lemon juice Sprinkle parsley DIRECTIONS: Heat the oil in a large skillet over medium-high heat, add the steaks and sear until lightly browned on both sides and cooked to the desired level of doneness, before setting aside. Reduce the heat to medium, add the butter and let it melt before adding the shrimp and cooking until just pink on both sides, about 1-2 minutes per side, and set aside. In a separate small pot, add the garlic and cook until fragrant, about a minute. Add the vegetable broth and deglaze the pan by scraping up any brown bits from the bottom with a wooden spoon as the broth sizzles. Add the almond milk, mix in the dijon mustard and cajun seasoning, bring to a low boil and let simmer for a minute. Mix in the cheese and let it melt into the sauce. Mix in the lemon juice, parsley and shrimp then set aside. Place cauliflower florets (uncooked) into blender or food processor. Once riced, add to frying pan and steam with a small amount of water. Plate the rice then add steak and creamy shrimp sauce and serve! My coach Melissa shared this yesterday about one of our teammates Heidi (pictured below): Today I saw Heidi Schlabach casually mention that she went to the doctor, and the nurse wondered if the scale had made a mistake, because she weighed 100 pounds less than when she was there last April. What does healthy mean to you? In my first conversation with someone who asks about the program I coach, I ask what their health goals are. The answers are different for everyone, but for many people, it falls into these general classifications: -They want to eat better, reduce sugar, or learn to balance their macros (most don't use this term, but it's what it boils down to -- avoiding extremes like low/no carb or high fat) -They want to be more active (for themself, their partner, their kids/grandkids) -They want to have a healthier body - either gaining weight or losing weight -They want to sleep better and wake up rested with energy for the day Identifying your goals is a huge first step. How amazing is this?! Is anyone else slightly obsessed with waffling everything? This is the one I use most often (and it’s only $10!) a dash mini waffle maker https://amzn.to/3L1UVp7 but if you’re looking for a bigger one I love my Belgian waffle maker too https://amzn.to/3F6I4OI 🧇Waffled Tuna Melt🧇 Ingredients: 18-oz. canned tuna, packed in water 3 large eggs ½ cup low-fat cream cheese, at room temperature 2 cups minced celery 8 scallions, minced ½ tsp salt ¼ tsp ground black pepper ½ cup reduced-fat cheddar cheese Cooking spray 6 cups romaine lettuce, cut into ¼ -inch strips ¼ cup ranch dressing Directions: 1. Drain the tuna from its water. 2. In a mixing bowl, combine the cream cheese and eggs with a whisk and mix until thoroughly combined. 3. Combine the tuna with the egg-cream cheese mix and stir in the celery, scallions, salt, pepper, and cheese. 4. Preheat a waffle iron and spray both sides with the cooking spray. 5. Put an adequate amount of the tuna mix on your waffle iron (the amount may vary depending on the waffle iron's size), and cook until golden brown for about 15 minutes. 6. Once done, remove the tuna waffles from the waffle iron and place them on a wire rack. 7. Repeat until the mixture is used up. 8. Combine the lettuce with the ranch dressing and divide evenly onto four plates. Top with each plate with an equal number of tuna waffles. This recipe makes 4 servings. What’s for dinner? This recipe is so easy, and so perfectly flavorful. One Pan Lemon Pepper Salmon with Garlic Parmesan and Asparagus Ingredients: • 1½ lbs. asparagus, tough ends trimmed • Cooking spray • ½ tsp garlic powder • ¼ cup grated parmesan cheese • 1½ lbs. salmon, skin on • ½ tsp salt • 2 tsp salt-free lemon pepper seasoning (or 1 tsp dried lemon zest + ¼ tsp black pepper) • Lemon slices to garnish Directions: 1. Preheat oven to 400˚F. 2. Place salmon in center of foil-lined, lightly greased baking sheet. Lightly spray top of salmon with cooking spray, sprinkle with lemon pepper seasoning and salt, and top with lemon slices. 3. In a small bowl, combine parmesan and garlic powder. Arrange asparagus spears around salmon. Lightly spray with cooking spray and sprinkle with parmesan and garlic powder. 4. Bake until salmon has cooked through, about 15 to 20 minutes. This recipe makes 4 servings.
