Pinterest Recipe #2! Blueberry Coconut Pecan Breakfast Cookies

1.5c rolled oats

1 c unsweetened coconut flakes

1 tbsp. flaxseed meal

1/2 tsp salt

3/4 cups coarsely chopped pecans

1/2 cup dried blueberries

3 very ripe bananas-mashed.

1/4 c cocout oil- warm to liquid state

1 tbsp. agave nectar

1 tsp. vanilla extract

Preheat oven to 350. Combine oats, flakes, flaxmeal, salt, pecans, & blueberries. Stir in mashed bananas,oil,nectar, ad vanilla until well combined. Using a cookie scoop, drop onto cookie sheet sprayed with oil or on parchmet paper. Press down on dough so it's about 2".

Bake for 25 mins or until fragrant & golden. Cool on pan. About 15 cookies.

My variations: i used 2 large bananas instead of 3;cherries for blueberries;honey instead of agave. i sprinkled with cinnamon sugar & dutch cocoa. Cuz that's how I roll.

These are good; filling & not overly sweet. They will be yummy with coffee or along side honey greek yogurt..yum!
