Fire, Fur & Mistletoe  Chapter 4

 Pairing- Eventual Dean x Female Reader.

Word Count-3,045

Warning- Mentions of car accidents.  Possible swearing. Slight angst. Fluff.

Summary- A rewrite of the Nine Lives of Christmas, Hallmark movie. AU, Dean is a firefighter who doesn’t do commitment, the Holiday’s don’t mean much to him.  Coming home after a shift he finds a dog in trouble.  The reader is a veterinary student who works in a coffee shop trying to make it to graduation, until someone causes problems there for her.  She isn’t interested in finding anyone other than her own dog until after she finishes school.  Do their four legged friends have other plans?

A/N- This series is written for @spnchristmasbingo​.  The square filled for this chapter is presents.  The first two chapters will stay closer to the movie than the rest will.   This has its own tag list and it is open.  That way I am not tagging anyone who doesn’t want to be tagged in Christmas stories.   This story is unbeta’d.

Series Masterlist   The next morning you were in the kitchen looking through ads when Dean came down.  “I was wondering what do you think about doing our Christmas shopping together?  I thought it would be fun to tackle the stores together?”

“I usually just do Visa gift cards, or regular gift cards.”

“Do you remember how you were saying you can’t recall the last time you really enjoyed Christmas?”

“Yeah, you really think going to the mall is going to help me feel..”  He paused looking at you with a smirk, “Christmassy?”

“I think going and seeing all the festive decorations could help.  One afternoon, we can make it fun, I promise.”

“I’m holding you to that.”

“So you’ll go?”

“Yeah, we can give it a shot.”

“I’m going to help you do it right this year.  We can go to the mall after your shift tomorrow.”

“I can hardly wait,” he grumbles as you leave the kitchen. 

Dean’s shift started earlier today, he headed in just before noon.  They started off busy before things slowed down.  They were called out for two car accidents, the light snow falling today causing some problems.  Dispatch also had them at two nursing homes.  The first resident was fine and back on their feet before they and the paramedics left.  The second was a fall and the poor guy wasn’t happy about having to go to the hospital to be checked out further.

When things calmed down later Dean was sitting in the common room with Sam and Benny. Those two watching the game, Dean going through paint samples.

“What are you trying to figure out now?”  Sam wanted to know.

“Which color is going to look best in the dining room. I picked up some new color swatches on the way in.  I have a light green, pale blue, a really light grey, or a cream.”

“Which one does the design genius living with you like?” Benny questioned.

“She thought maybe a light green would go with the trim in there.”

“I’d go with what she likes so you don’t have to redo it in a year or so.”

“What’s being redone in a year?”  Bobby asked walking in.

“I hope to have sold it by then.”

“Dean’s trying to pick a paint color, we told him to go with what Y/N picked so he wouldn’t have to redo it later when everything is all done and she doesn’t like it.”

“Yep, need to keep the women happy.”  Bobby agrees.

“How’s the girlfriend doing while we are on that subject?”  His brother wanted to know.

“You’ve all lost me. Still don’t have a girlfriend.”

“Are you sure about that Chief?  You do spend a lot of time with her.  You trust her opinion to remodel your house.”

“What was your excuse earlier about not going out with us tomorrow?  Oh right you have plans with Y/N, like a date.”

“What was going on the other day when you couldn’t come over and watch the game with me and your brother? Pretty sure you were with her again.”

“How many dates are you going to have before you realize you are dating?”

“Are you two morons done?  We aren’t dating.  I trust her opinion, because she’s good at this.  Still selling the house when I’m done.  She just wanted to get a tree for the house, so we picked one up and decorated it that night.”

“It really took you a couple hours to pick up a tree, did you carry it home.”

“No, we went to a tree farm, not a tree lot.”

“Hold up.  You actually went and cut down a tree for her?  You wouldn’t do that for me. We always went to the tree lot and just grabbed one.  You are more gone on this girl than you think.”

“You are reading too much into a simple tree, Sam.”

“What are you busy doing when the shifts over?”  Benny wanted to know.

“Apparently Christmas shopping.  She thinks it will be fun to do it together.”

“You, Dean Winchester are going Christmas shopping?”

“Why are you saying it like that?”

“I wasn’t sure you knew what a mall was, I’ve been getting a gift certificate from you for years now.”

“And I’ve had enough of this conversation, I’m going to go clean the truck or something.”

Dean walked out to the sound of the guy's laughter.

When his shift ended the next day Dean headed home to shower and change so he would be ready to head to the mall with you.  You were in the living room sitting with the dogs when he came down.

“I’m ready if you are.”

“I’m good to go.  I’ll see you babies later.”  Giving the dogs each a little hug you got up to follow Dean to the truck.

As you are entering the mall Dean turns to you.  “I realized I haven’t told you lately, thanks for your help with the house.  I might just be able to sell it sooner than I thought.  I really appreciate all you have been doing.”

That caught you off guard.  “Oh yeah, no problem.”  You had gotten wrapped up in staying with him you kind of forgot it was temporary, and that wasn’t really his home.

“That’s really great.  You didn’t just fix a house this time, you created a beautiful home.  Some family is going to be incredibly lucky.”

Dean nods, sneaking a glance at you, “Yeah they are.”

“Alright, who’s on your list?” You were eager to change the subject.

“My brother and his girlfriend, Jess.  Bobby, he’s the Fire Chief.  Cas and Benny, you met all them at the station when you found Miracle.”

“Okay.  Any ideas on what to get?”

“Gift cards.”

“No.”

“Then I don't know.”

“You’re helpful.  What is your brother’s girlfriend like, what kind of things does she like?”

“Um, she’s a nurse.  She likes my brother.  I think she likes the beach.”  This might be harder than you thought. 

“What about any of the guys?”  

“Sam likes Jess, and healthy crap like green shakes. He’s always bringing some into work. Benny wants a girlfriend.   Cas, who knows.  He’s a little different some days.  He does like to sit and think, and bees. He’s a tad obsessed with them.  Chief likes, um his job, family, Miracle.”

“Okay, so where do you want to start?”

“That store sells gift cards to multiple places.”  He points to a big store behind you. 

“The next time you’re at work I’m going to paint the living room hot pink if you mention gift cards again in the next hour.”

Dean starts to open his mouth but isn’t too sure how serious you are, so he shuts it again and rethinks what he wants to say.  “What do you need to get?”  He asks instead.

“A gift for my sister and brother-in-law, then a few friends.  I have a thought for your brother if you want to hear it?”

“Sure, what are you thinking?

“The bookstore might have a recipe book for different health drinks, maybe we can find a little smoothie maker so he could make them fresh at the station instead of bringing and storing them.” 

Dean thinks about if for a minute, “He would actually probably like that, although I hate to enable his bad habit.”

Laughing at his jab at his brother you head toward your destination.

The book store is your first stop, while there you browse through the shelves to see if anything else catches your eye.   Finding a book, The Buzz about Bees, you show it to Dean who puts it in the cart for Cas. As you were heading to the check out, Dean started laughing at a book which caught his eye.

“What’s so funny?”

“I have to get this for Bobby, it’s Tori Spelling's autobiography.”

“Um, okay. That’s a random gift.”

“Bobby is a closet fan.  Big fan actually.  Not very many people know.”

“I’m sure he’ll be thrilled.”  Maybe you should have let him get his boss a gift card.

At the sporting goods store he found some fishing gear for Benny who likes to spend time on his sometimes girlfriend boat.  Dean figured they were due to get back together soon. 

While there you found part of your sister's gift.  You got her an extra magazine for her off duty gun, and a new cleaning kit.  The woman loved her weapons. 

Heading to the next store you came across some Santa hats and antlers you made Dean try on with you and take some selfies.  He grumbled about it at first but he did seem to have fun with it, making silly faces in the photos. 

With your hands full you took what you had out to the truck so you didn’t have to carry it to the rest of the stores.  The fishing gear was a little big to lug around.

Coming back inside Dean suggested a quick stop at the food court for a snack before hitting more stores.  

You grabbed your drinks of choice and a couple of cookies and sat down for a few minutes. Dean was complaining because none of them sold pie.  The mall was starting to get busier and people were hustling everywhere.  

“Do you enjoy shopping and all this craziness?”  Dean asked, drawing your attention away from people watching.

“Generally no.  I’m a get in get out person.  My sister and I used to try and go together, but she’s busier with work and she has Doug to go with.  I’m used to doing most things on my own now.   It’s better if you have someone with you, which is why I thought we could have fun with it.”

“I will admit, this hasn’t been as bad as I thought it would be.  You did make it fun. Thank you for that.”

“No problem,” you give him a small smile and go back to drinking your coffee. 

The next stop was the pet store for some treats for your favorite four legged friends.  You passed stockings on the way in and went to pick one up.

“Dakota needs a new stocking, does Miracle have one yet?”

“No, he doesn’t have a stocking.  I don’t think I even have one.”

“Well, we need to remedy that for the both of you.”

“Of course we do.”

There weren’t many stockings left.  They were on one side of a middle aisle display, the back side had various balls and kongs.  The few stockings that  were there were on the back of a shelf behind some toys.  You had to move the toys out of your way to pick through the stockings.  With one arm full of squeaking toys you used one hand to look at the stockings.

“Do you need help?”

“No, I’m good.”

“Uh huh.”

You found two white and red stockings you liked so you were pulling them out, when your elbow hit a toy still on the shelf, trying to use your arm to keep it up on the shelf you missed the toy and hit the display instead.  Apparently you used more force than you meant because the display you were looking at tipped backward and hit the one behind it.  This sent various balls and kongs bouncing to the ground. 

Dean was leaning against a wall with his arms crossed watching, “Now do you need help?”

“It appears so.”

Other people in the store did their best to avoid your mess while the two of you cleaned it up.  Getting the last toy back on the shelf you pick up the stockings and turn to Dean.  “What do you think about these?”

“I think we aren’t going to go through that again just so you can pick out a different one. So let’s go with those and head out before you knock over the display of canned food.”

“You don’t want to clean that up too?”

“Let’s save that one for the next time we’re here.”

Sam’s girlfriend was a little harder than you thought since you didn’t know her and Dean wasn’t much help.  You ran with his comment about her liking the beach and picked up some scented lotions and bath bombs along with hand cream.  Being a nurse her hands would be constantly washed and most likely very dry.

In a men’s store you found a new tie for your brother in law to go with the briefcase organizer you found for him. 

You found a mug that Charlie would get a kick out of.  You also came across a Hermione Granger bobblehead she would like. 

You had picked up a couple small things for your old coworkers, Claire and Kevin.  You did miss working with those two. 

There was one more person on your list, but it was hard with him right next to you.  

Dean’s shopping was done, he had picked up some little things to complete Bobby and Cas’ gifts.  

Browsing the picture frames as you walked by you saw one you had to get. 

 You had the perfect picture to put inside.  Dean had texted you a picture from the station one day of him and Miracle.  Miracle was wearing Dean’s firehat, both were in front of the fire truck.

You passed Santa in his village the mall had put up.  “Are you sure you don’t want to ask Santa for anything this year?”

“I told you Sweetheart, he and I are extremely close.  I’m good.”

“If you say so.”

“I think you need to go see Santa though.”

“What me?”

“Yep, you keep trying to send me so why don’t you go tell him your wish.”  Dean stood there smirking at you, fully believing you wouldn’t do it.

“Okay.”

“Okay, you’re going to go up there?”

“Yep.”  You went and got in line behind a group of young children, who all turned to stare at you.  Oh this wasn’t awkward at all. Dean had walked off while you stood in line waiting your turn.  A part of you thought about walking away and telling Dean you had gone through the line already when he returned. 

“Got you something.”  Too late, he’s back.  He was handing you a bag and trying to hold back a smile.

Warily you took the bag and opened it up, chuckling when you saw what was inside.  “I’m going to guess I’m supposed to wear this up there?”

“You know it.”

Dean stood next to you in line as you waited, when you were the next one up, you took the elf hat he gave you out of the bag and put it on your head.  “How do I look?”

“Like Santa’s perfect helper.”

Heading up you were fairly certain Santa was looking for a child with you, and finally realized there wasn’t one.  “Ho ho ho, what can Santa bring you for Christmas, miss?”

While in line you had been thinking about what to say when you go up here.  “I have a friend over there who has had a rough time of it over the years.  He’s lost his Christmas spirit and the belief in happy endings.  I wish he could find that again.”

“Well, that’s some Christmas wish.”  He looks over at Dean who’s smiling at the two of you.  “It looks like someone is already working on bringing that Christmas spirit back to him.  Santa will see what he can do to help.  Is there anything for you?”

“Not unless your workshop is looking for another elf.” 

Giving you a candy cane he wishes you a Merry Christmas and sends you off.

“So what did you ask Santa for?”

“I can’t tell you or it won’t come true.”

“I think you are confusing Santa with birthday wishes.”

“Either way, I’m not telling you.  You can ask Santa since you are so close though.”

Dean just shakes his head at you.

Behind Santa was a Christmas shop and you dragged Dean inside with you to find him a stocking.   Holding up a Grinch stocking he shook his head, next you tried Superman.

“I’m sorry you have me mistaken for someone else, I’m Batman.”

You looked around.  “You aren’t the only one.  Sorry, Batman is all sold out.  There is Batgirl though.”

“I’ll keep looking.”

“Pink snowflakes?”

“I’m really starting to doubt your decorating tastes now.”

You laughed at that and went through a few more stockings.

“What kind of crazy is on your stocking?”

“It’s the same one I had growing up, classic red and white with my name in glitter.  It looks like that one over there.”

Dean walked over where you had pointed and looked at those.  “That’s what I want too, I don’t need flashy or cartoons.”

“Are you sure?”

“Yep.”

Finishing your shopping you were on your way back to the truck to head home.  After unloading the packages in the living room Dean headed for the kitchen.

“Are you good with ordering pizza for dinner?”

“I can make something up really quick.”

“I know you could, but I thought we had to wrap all that stuff we got today.  I figured we didn’t need another mess.”

“If you want that’s fine with me.”

You made sure to take what you had for Dean up to your apartment before you came back to start wrapping anything else.  When the pizza was ordered Dean did his best to help you out.  You were surprised by how well he did.  

“You buy gift cards for people, I wouldn’t think you had practice with wrapping.”

“We have to wrap all the donated toys for the kids every Christmas, so I get my fair share of practice with that.  Bobby wouldn’t let us hand out sloppily wrapped gifts to the kids.”

The two of you took a break from wrapping when the pizza arrived then went back to finishing it up. When the presents are wrapped and under the tree Dean builds a fire and you go off to make some popcorn.  When you come back the stockings are all hung over the fireplace.

  The two of you get comfy on the couch with another Christmas movie playing while you enjoy the fire and the sight of the tree and gifts around you.

Hey, I saw your reply to natureismagick's post about being a librarian and was hoping to connect with you. I've been considering going to school for an MLIS for two years, but haven't gotten anywhere. I've posted on the r/libraries page and got really discouraged by people saying the job sucks, the pay sucks, and you can't really succeed unless you come from wealth. Do you have that opinion?

Not really? I think it's very much like teaching in a lot of ways. If you're in a state with very strict guidelines on education and you don't have a master's you're probably going to be in an aide position where the pay isn't awesome and you're more likely to be doing work that might not be your favorite. How librarians without masters degrees are treated really depends on the library, some are really great about it some aren't. I have friends who don't have degrees in librarianship who work in libraries and love it.

The job market isn't huge by any stretch of the imagination, so getting a high paying job from the get go is hard but there are positions out there for sure. I just got hired at 55k/year + benefits and paid vacation, which is honestly great for someone a who just got their MLS a year ago.

I think a lot of people get stuck in low paying jobs after graduation because they don't use the job listservs that post openings and honestly without that yeah you're only going to find the $15/hr library jobs on indeed.

Getting a good position doesn't have anything to do with being wealthy, It's just about being willing to move and knowing how to use the information at your disposal. I'm from a farm town in podunk and I have over 50k in student loans from my bachelor's and master's, so I'm not wealthy by any stretch of the imagination, but I'm going to be making a living wage at my new position and that's super cool.

There's absolutely days when the job sucks. Every job on the planet has days where it sucks, but I've done a lot of jobs because I've been working since I was 16 and let me tell you that out of all of the jobs I've done I feel most fulfilled when I'm working in a library.

Some of the work is really dumb and annoying like doing reports and paperwork, but then you also get a lot of Joy from people walking up to you and asking you questions that really affect their lives. I have a group of kids at my previous library who every single time they saw me would run up to me and ask me a question or ask me for a book recommendation or they would just want to talk to me because they thought of me as a friend and a supportive person in their lives. I also had an older patrons who really liked to see me everyday and would tell me stories about what life is like for them growing up and they would be absolutely overjoyed every single time I found them a book they were looking for or when I could help them with their technology or whatever they needed. And those things were what I really enjoyed about the job, and I think they're also what I'm really going to love about my new position.

There's a lot of bad stuff too don't get me wrong. There's a lot of heavy lifting involved with shelving and also maintenance and care of the library as most libraries don't have permanent maintenance staff, so I have shoveled sidewalks and cleaned toilets and you name it. Because it's a public service job there's times that you feel unsafe, I've had people who were on drugs coming to my library and we had to call the police (unfortunately no alternative mental health focused services exist in my area at this time) because they were not listening to our safety policies and rules, and that's scary but that's part of any public job. There's also days where it sucks because you have to deal with people who aren't respecting you and your position or who are having a bad day themselves and just are taking it out on you, but every single job I've ever had was like that.

I trained as a school librarian but I haven't actually worked in a school on a permanent basis so I can't really say much about what that's like beyond what I learned in my internship, but that also has its benefits and downsides. Academic librarianship is better for people who don't like to come in contact with general public, but for me I really enjoy talking to people so that was never really an option for me. The pay is better for that too but again wasn't for me.

I really suggest that people who aren't sure what they want to do with librarianship get one of those $15 or less an hour positions at the sort of institution that they think they want to work at to try it out. Or volunteer if a position isn't open, usually libraries can use volunteers, even just to do shelving or cleaning. Also depending on the laws where you are regarding libraries and librarianship you might be able to get a degree in school librarianship like I did and use that degree to give yourself the option to work in a public or School library as it's just a difference of a few dollars spent on certification in New York.

I'd say that before anything though you really have to look at the programs that you can do to get your MLS, because a lot of them are much better than others. See if you can get into contact with any of their alumni or if you can see what the graduate hiring rate is after graduation because some schools do everything they can to help their students get hired and others give you no resources.

Let’s Diagnose the Faults of Our Education System

 After achieving independence, some educationists of India realized the faults of our education system imposed by the Britishers. Many commissions like Radhakrishnan Commission, Mudaliar Commission, Kothari Commission etc, were set up to discuss the very system pros and cons. After the close analysis of the system, some defects were brought to limelight which were to removed necessarily. There is no denying the fact that some reforms did take place in it; still, it is undergoing some other major defects as is clear fathoming some other major defects as is clear fathoming the problems of the students her.

 Students carry on their studies hoping they must get jobs later on; their will never go in vain. But what happens? … they remain unemployed despit having even first class degrees. In so much so that they fail to maintain even their own expenses sufficiently. They, thus, get frustrated a lot.

 Behind their frustration, which is responsible? Obviously, it is the faulty education we get. Let us diagnose its faults from close quarters:

 A well known samskrit shlok reads:

“Saa vidyaa yaa vimuktaye”

 The knowledge got from education is that which redeems us, but from what? It redeems us from social and religious dogmas and superstitions; it redeems us from all sins; it redeems us from the pitch darkness of all types of ignorance.

 In English, the word ‘education’ is derived from the Latin word ‘educere’ meaning ‘to lead out’; but out of which?....obviously of ignorance. At the same time, in the dictionary, there is another Latin word ‘educare’ meaning ‘to bring up’. It gives a broad meaning of education. Education is that which brings up our body, mind and soul at once. These three maintain a balanced life. If any education being imparted to students lacks any of these, then it can never be called a perfect education. Such education was already av ialble in ur Veda periods. The universities viz., Vikramshila, Takshashila, Kuch, Nalanda also had world recognition in imparting such perfect education. Students from China, Japan, Arab and from many others used to get benefited from such versatile education.

 Our existing education system pays some attention to the development of body and mind but it ignores the development of soul altogether. The development of soul takes place through regular practices of spirituality. It is fully practical rather than theoretical. An English proverb puts an emphasis on the importance of soul which reads:

 “For what is a man profited, if he shall gain the whole world and lose his soul.”

 It is our souls which make us liberal in view. It is our souls which forewarn us against doing wrong. It is our souls which keep us against doing wrong. It is our souls which keep us on the ideal and moral path.

 Here, the word ‘soul’ does not pertain to the spiritual, non-physical part of human body; it rather pertains to morality and emotional sensitivity. These days, students lack soul. Their sole aim is to make money by hook or by crook when they get fobs, nay, they study only for this purpose. This is the reason why corruption, bribery etc, are rampant in the society. Had there been a special emphasis on the edifice of morals in an appropriate environment created by our education system, there would have been less or no corruption, bribery and other mal-tendencies possessed by educated communities.

 In early periods, there was a close relationship between the students and the teachers. The teachers were worshipped by the students; even kings bowed down before them. The teachers, too, in return, left no stone unturned in imparting best education to the students. The students did succeed in standing on their two feet in the society after the completion of their studies.

 Now-a-days, what we notice is that there is a wide gap between teachers and students. The students have no due respect for their teachers and the teachers too, are careless towards framing students’ future; to build the characters of students is a worthless job for them. Our education system is unable to cement the very gap between students and teachers.

 Existing education system is much theoretical rather than practical. There should have been proper blend of the two in stead. What students read in their books has hardly, any connection with their practical lives; this bookish knowledge of theirs fails to yield livelihood. It shows that our education can not stand in good stead in the life; it is not job-oriented.

 For educated unemployed students, business is left as a last resort. Their positions become just like those earners who have never tasted education, but they are earning substantially through their experience in particular fields. Therefore, why do people waste their time and energy in acquiring such education? They should rather give priority to some technical knowledge through which they at least, can maintain themselves and their families.

 Education is that which makes students good citizens and crafts usefulness into them. The existing education system makes effort to make them good citizens to some extent but it fails to craft usefulness in them. In both regards, general education will have to be made compulsory up-to the higher secondary level so that students may keep their families on the prosperous, peaceful, healthy and education track, plus, they may understand the country well. In general education, students will learn

   How to analyze the problems of the country with their solutions through debates and queries

  How to study the government

  How to maintain their health and the health of their families and the society.

  How to combat any crisis in the family and society

  How to eliminate malpractices in the society

  How to eliminate malpractices in the society

  How to discourage anything which is absurd and irrational in the society

 This general education can frame students’ thoughts all-round; it can never go in vain. Each and every student will feel proud of the education they will be getting.

 John Hershall mentions knowledge and learning, he got from true education in these words:

           “The knowledge and learning have always been the source of inspirations and solace even during the times of adversity in the varied events of my life.”

 It is therefore such education should be imparted which may always stand in good stead even at the time of adversity.

 The essence of good education is to broaden the outlook of students by bringing about necessary changes. There is a close relationship between natural surroundings and man. Mother Nature broadens our outlook; she provides us with such interesting and inspiring knowledge which we do not get merely by going through various books. Her teachings, some times prove to be striking.  She sometimes, stirs our underlying ability. The great scientist Isaac Newton was stirred by a falling apple from a tree. This natural phenomenon provoked him to know the secret. And he then, propounded the theory of ‘Gravitation Law’.

 There are many secrets hidden in the nature which are still to be found out. We can feel nature only to keep ourselves close to her. Rabindranath Tagore felt it and it was because of that, he could pen a world reputed book ‘Gitanjali’, which later on won him the Nobel Prize in 1913.

 Rabindranath Tagore was an educationist of the first water. He wanted students to carry on their studies in the lap of Mother Nature. For the very purpose, he established ‘Shantineketan’ in 1901 which has won world applause. Students from various parts of the world are enjoying the unique education there.

 Rabindranath Tagore wanted to create a free and open environment for children. Such environment, really, creates an urge to view the whole world in a distinct angle. It creates liberty of mind; it does not create any bondage of boring education. Students embrace textual chapters pleasantly.

 Education is closely related to colours, sound and movements of body. These are special languages through which we can express our views entirely of our won. We mostly use words to express our thoughts but we use specials languages to express our various sentiments. And a man without sentiment is not man at all. In the words of Rabindranath Tagore:

 ‘We may become powerful by knowledge, but we attain fullness by sympathy.

 To raise sentiments, Rabindranath Tagore gave special stress on the special languages which can be expressed through drawing and paintings, singing and dancing and acting on the stage.

 Having known to these facts, our education system seems to be worthless. We are aping western education cornering our high and rich traditional education. This is nothing but our unpatriotic propensity. Willium Burke remarked in this connection in these words:

 Education is the chief defense of nature.

 What type of education do we have which can not defend our rich culture and tradition?

India is a country of villages and the students there have got to attend to their domestic activities and the activities of education. They are, thus, unable to devote themselves sufficiently to their studies and the reason of which very few of them can qualify in overcrowded job-oriented competitions. Many of them evade going to schools and colleges thinking of their bleak chances of getting government job. They engage themselves in earning their livelihood either by living at their villages or by going to town or cities.

 Sometimes, it so happens that students get plucked in the most important secondary school examination upon which their future rests. With their failures in it their chances of getting government jobs become bleak. They even can not take loan from the government fund for starting business without the matriculation certificate. After getting plucked in the examination in question, many village-students fail to muster up their courage to sit for the examination again. On behalf of such students, I strongly advocate the ‘no-exam policy which has recently been declared by the existing Government.

Students whether they belong to villages or towns or cities, carry on their studies to get jobs finally. For this purpose, they must sit for competitive examination, provided, they have required certificates for those. In the absence of such certificates, they are disqualified.

I want to convey my point of view through it by raising a question, if the studies of students end in jobs, why these certificates are a must. Since childhood, students ascertain their definite goals; but the barriers of examinations deviate their minds. These barriers, sometimes, dish their hopes also.

If students carry on their studies focusing on their respective goals since childhood, they will become efficient for their cherished goals till required age. Hence, I flatter myself that no-exam policy would stand in good stead for the students.

 Students need such education system in which they may get well acquainted with various types of employments. There should be a special class for that during school period which may help students select their definite goals as per their ability. Because of the lack the knowledge of various employments among students, there is a great rush for selected employments.

 Sixty two years have passed since English colonialism was rooted out from the country; but our universities are still steeped in colonial mindset. It has affected badly on our rich culture and tradition. The university has clearly failed to inculcate due patriotic spirit into the students. Methods of technique and learning, courses of study and the conduction of examinations have not prepared indigenously.

The Kothari Commission held in 1966, took initiative in this regard. It wanted at least 10% of those total colleges i.e., the colleges can initiate educational innovation, design curricula, evolve new methods of teaching and learning, prescribed courses of study, conduct the examinations in their own ways keeping the maximum benefit of the students in the mind. But it is a matter of sorrow that this policy of sanctioning autonomy to colleges has been a failure. However, there are still 140 autonomous colleges India but they are in bad condition. His is due to cold attention paid by the people and the government as well. However, these autonomous colleges have shown sterling performance in building up students’ characters and careers.

We should have autonomous colleges where we may feel at ease in getting education entirely of our own.

For shaping vast educated India, we will have to throw ourselves into dynamic activities not through party –politics but through pure, moral, concrete and determined steps.

 Let us own liberal views with regard to selves, society, country, world and finally the whole universe without confining ourselves only to books; let us give a hand to something creative.

HoOz- What was your greatest struggle at age 16?

Sarah- I think just the transition in high school. My high school was not a good one, so I didn’t feel prepared to go to college. I didn’t know anything about scholarships; I didn’t know anything about real life experiences. So just being prepared to be an adult. In my family I had to grow up at a really young age, so being at school wasn’t a priority because they weren’t teaching me anything that could help me. I would be like I’m doing my homework, I’ll do my classwork, and then I’m leaving at seventh period.

HoOz- What was the most valuable lesson you learned in high school?

Sarah- The most valuable lesson I learned in high school was that family is forever and friends aren’t forever. I made a lot of friends in high school. I thought that we were gonna ride the wave together and stuff. I was like “go home? Nah! I’m hanging out with my friends! I’m having a good time!” Life happens and things happen at home and stuff like that and then your friends sometimes just drop. You guys stop taking the same classes and they just drop. So just having my family’s support and having them help me find jobs and stuff like that while I was in high school was very important.

HoOz- Do you have any siblings?

Sarah- Girl, yes! I have two brothers and one sister.

HoOz- What is your relationship with your siblings like?

Sarah- I think my relationship with the two oldest is amazing. They’re fraternal twins, two year difference and we have a good relationship. For instance, if I fail a test, I’ll call them like oh my god I really failed! Because they’ve been through college already. Every time that I’m leaving a new form of life, like I’m leaving college and they’re entering their Master’s, or I’m entering my Master’s and they’re leaving their Master’s. So they have good skills to give me. Then we have the baby. He’s the youngest, he’s 14. Yeah he thinks he’s grown. He thinks he fly and shit. But whatever, it’s cool.

HoOz- What is your relationship with your parents like?

Sarah- Well I don’t have a father. Growing up he was not around. But I do have a good relationship with my grandmother. She adopted us at a young age and she raised us. I have an okay relationship with my mom. We don’t argue or anything like that but we just don’t talk everyday. That’s just like a “me” thing. I just don’t like to be on the phone all the time.

HoOz- What was one of your most memorable childhood experiences?

Sarah- When we were younger we didn’t have a lot. My grandmother adopted us and we lived in a one-bedroom apartment. She used to make these little honey drippers out of Kool-Aid with honey in it and she used to cook all these things cause she’s southern. All the kids would come to our house and they would eat our stuff and we would argue with them and stuff. One time my uncle bought all these water balloons. We had this big water balloon fight on the block and it was so cute. We were all just laughing. That’s before people were getting shot outside. It was just safe. That was my favorite memory.

HoOz- Tell us about your past four years at Oswego. What was some of your most memorable moments?

Sarah- When I first came to Oswego I was EOP and I remember getting off the bus and I was like oh no! Oh no, this is not what it looked like on TV; I’m not staying here! Then I went upstairs to my room and I was like, there’s no air conditioning? It was Seneca. I was like oh no, this is not what it looked like online. This is not what I thought it was gonna be. There’s no air conditioning. I’m a city girl; I can’t be playing out here with these bugs and this grass. That was my first experience with Oswego. As the time went by, I made friends and I made connections. I’ve gotten so much more independence from coming to college. Now that I’m in my senior year I feel like I’ve done a good amount of things. I’ve done my RA things, I’ve done my internship, and I’ve worked. So I feel like being up here gave me my own independence because being in the city, I would’ve just stayed with my same friends and I would’ve just been stuck in my little shell. So coming up here and meeting all these different people and being exposed to different diversities and cultures, it was a really good experience.

HoOz- Is there anything that you wish you did at Oswego that you didn’t get a chance to do?

Sarah- I wish I would have studied abroad. You know when you’re an RA you can’t study abroad; it’s one or the other. Some people say you can do the quarter class and go during your breaks but it’s like by the time you get to your break you just want to go home and be with your family or your friends or your significant other. So I wish that before I decided to settle in and be an RA I would have studied abroad or did a co-op and applied for RA during my junior year instead of my sophomore year. Those are experiences you can never get back, so I would have done that.

HoOz- What advice would you give an incoming first year student?

Sarah- I would tell them to get involved but for all the right reasons. Like don’t get involved just because it looks good on your resume. Get involved because you genuinely enjoy it and you’re willing to put the extra work in to make it something that’s a part of your brand. A lot of people come in their freshman year and they’re spazzing out, they’re partying, getting documented, doing all these crazy things their freshman year. Then sophomore, junior year, and senior year they can’t get certain opportunities because they were really lashing out their freshman year. So I think that when you first come in, think wisely about the things that you do and the company you keep.

HoOz- Out of the things you have been involved with on campus, what do you think has been the most valuable experience?

Sarah- I think the most valuable thing that I’ve done on campus was probably being an RA. Being an RA is not an easy job in my opinion. I think that it takes a lot of patience and dedication to be there, especially when your kids see you all the time and you have to report to other people. It’s a very time consuming, very dedicated job, but I feel like I learned a lot about myself through being an RA. I think I got a lot of mental strength from being an RA because it can be very stressful.

HoOz- What are your next steps after graduation?

Sarah- After graduation I’m gonna go back home. I want to get my certification to be an esthetician cause I’m a business and public relations major and I want to open up my own legacy or start a waxing company. I want to know about the chemicals that in products specifically for women of color. So I’m going to get a certification then I’m gonna go for my Master’s.

HoOz- What is your biggest flaw?

Sarah- My biggest flaw is that I’m very outspoken. On campus I don’t really talk to people that often because I don’t really have much to say, but I feel if there’s something I don’t agree with or the majority doesn’t agree with or it’s gonna inconvenience most but convenience few, I’m going to say something and however it comes out it comes out. The truth should be heard. If you’re wrong, you’re wrong. So I think that’s one of my biggest flaws.

HoOz- What’s your biggest strength?

Sarah- I think my biggest strength is that I’m a nurturer. I don’t like to see people fall through the cracks. If they’re down, I don’t want to see anybody hurt. I feel like I will go the extra mile to make sure someone’s okay even if I know it’s not gonna be reciprocated just so that people know that someone cares for them and that they matter.

HoOz- Where do you see yourself in 5-10 years?

Sarah- In 5-10 years I definitely think I might relocate. I kind of want to go to San Francisco or something like that. I always wanted to work for Sephora headquarters on the business side making sure the chemicals in the products are good and making sure there aren’t any issues. So I’ll probably be in San Francisco doing the Sephora thing or I might go into Law school to be a corporate lawyer.

HoOz- If you could tell your future self one thing what would it be?

Sarah- I think I would tell my future self that you gotta push yourself. Sometimes I think that I doubt myself a lot and I say that it’s not possible or it can’t happen, but anything is possible when you push yourself harder. I also think that I have to stick with eating healthy and being more aware of my self-care and not going the extra mile if it costs my mental or physical health.

I was born and raised in Broward County.  I went to college there and I even taught in the Broward county schools.  Even though I have since moved away, Broward County is my home and I’m proud to have come from the 954.

Now, I’ve read a lot of opinions since the tragic shooting at Marjory Stoneman Douglas high school, everyone has a view on what to do next, but let me talk about my experience going to school in this county and teaching in it.  

 I went to an ‘A’ rated public schools in Broward. They were good schools in a good area. My high school was built in the 1970’s, when I was there is was an open plan because that was the style back in the day.  Our classrooms were separated by dividers and if it rained there was a 75% that you were going to be soaked going to your next class.  We had security guards who road golf carts around the campus, we had two school police officers, one patrol car at the entrance, student parking was gated off at a certain time and there was always someone posted around that area, and the whole school was surrounded by a chain-link fence.   We were safe. Our administration was always pretty present, we had cameras up in the hallways, and lockers that were no longer in use. There were portables out back, because we had so many students and not enough class rooms.  My junior year, we had a bomb threat almost every Wednesday for a semester and we had to go on lock-down once during my senior year (I was stuck in health class for several hours).  My teachers on a whole were completely amazing.  I have great memories of my time spent in Broward public schools as a student.  

 When I worked for the schools, I had the chance to go to multiple secondary schools.  I went back to my old middle school, which only had one way in which brought you straight to the front office and a police officer at the entrance of the school.  Our classroom doors locked behind us and you had to have your key to get in – this is the norm now.  I believe this came about after the shooting at Virginia Tech, that the shooter would bypass rooms if the doors were locked.  We had drills of what to do if we were put on a code red.  The students knew where to go in the classroom and again the door would have already been locked.  

I keep seeing things that call to arm the teachers. Our job is to TEACH.  My first priority when I was in the classroom was the students.  We are not the police – we are educators.  

And where would you like me to keep this gun (that I would never be comfortable using and I’m pretty sure that would make me dangerous with it)?  Locked in a drawer in my desk?  In my purse? Well it needs to be somewhere safe, just in case someone decides to try and grab the gun from my classroom.  Oh, and on that note, how am I going to get this gun if the worse were to happen?  

We can’t leave the classroom for five minutes to go to the bathroom on a normal day, most teachers wouldn’t want to leave their kids if the worse were to come.  They would want to be there with them, comforting them, trying to keep them calm and quiet.

 I went to an ‘A’ school, I worked in ‘A’ schools. Teacher were having to buy paper and other supplies out of pocket, half way through the school year because there weren’t the funds for it - the state’s funding is stretched as it is.  Are you going to expect teachers to go out and buy their own gun and go about paying for training?

I don’t know if you all know this, but the salary for teachers in Florida is LOW, I’m talking like 35k (before taxes) which may seem high but the median income in Broward is about $64k and the cost of living in South Florida is more expensive than most places in the county.  A studio apartment will run you (on average) $773 a month, 1 Bed you’re looking at $980, 2 Beds - $1253.    If you think about paying back college debt, putting money into savings, paying for food/utilities/insurance/car/phone – teachers don’t have much spare income to be throwing around.

 I also keep seeing that this isn’t a gun issue, it’s a mental health issue.  If you are going to play that card, then please explain to me why one the first things that Trump did as president was to repeal an Obama-era regulation that made it harder for people with mental illness to buy a gun?  And if it is a mental health issue, then wouldn’t you want a background check done?  And in the same breath, then let’s talk about healthcare in the States.  If you don’t want universal healthcare but you want the freedom to buy guns willy-nilly from Walmart, and then claim it’s a mental health issue when a white male who was ‘mentally disturbed’ shoots up a school, then I really need you to explain your logic to me like I am a five-year-old because it doesn’t make sense to me.  Additionally, how many people have a mental illness but aren’t diagnosed?  

The only true way to guaranteed that a person who wants to buy a gun, would be for them to be cleared by a medical professional, like that be a step in to being able to purchase a gun.

 Then there are those who want to post armed guards and metal machines at the entrance of every school –again, WHERE IN THE LIMITED SCHOOL BUDGET ARE YOU PLANNING ON FINDING THE MONEY?  On top of that, is that really what we want this country to come to?  And this latest murderer knew the school, knew the lay out and the schedule.  If he kills the guards on duty, that metal detector isn’t going to do a whole lot.

 So, let’s talk what the students of Broward County have called for – gun reform.  Because those thoughts and prayers aren’t doing a whole lot. 

In Florida, it is a lengthier process to get a driver’s license than for someone to buy a gun.  I’m not saying ‘take the guns away’ because it seems like there are people care more about the 2nd amendment more than any other.  Why not make it a process?  First you have to go to training, then get a medical certificate stating mental health, then you can get a permit.  Will people break this law – of course. And if you want to play the whole, oh look at Chicago and how well the gun laws worked for them.  THAT’S WHY WE NEED FEDERAL LAWS!  If I can just pop over to another state and pick up all the guns I want, then the state laws aren’t all that effective.  

If the people who have had to live through this tragedy are calling for gun reform, then LISTEN.  

Let’s talk about how to prevent this from happening again.

How NYC Bartenders Are Building Pandemic-Proof Businesses

The days of sidling up to a bar in New York may feel like distant memories. But bartenders and business owners are fighting to bring them back by building imaginative solutions for the beverages, and the hospitality, that have been in such deficit over the past 11 months.

Some of these intrepid ideas involve new ventures and virtual bar experiences, while others pivot from traditional bar service entirely. One upstart is resurrecting an ancient technique to sell shelf-stable libations to-go. Another sees safety — in the form of rapid tests for Covid-19 at the venue entrance — as the new luxury.

In every story told here, there is resilience and a reimagined future. Here’s how a handful of NYC’s bar owners, workers, and newly minted entrepreneurs are attempting to survive and succeed in this pandemic.

Speakeasies Out on the Street

When Raines Law Room opened in Manhattan’s Chelsea neighborhood, it was the perfect example of the speakeasy style that many cocktail bars were emulating in 2009 — unmarked, hard-to-find door, tin ceiling, the works. With no standing room allowed, it was not easy to get in, which was the icing on the exclusive, hidden bar cake. These are not the sorts of places that thrive with indoor seating restrictions.

“Something that’s unique to all these frontline industries — and I hate to put us in the same category as health care, but we’re also some of the most affected — it’s like, ‘Come up with genius ideas while you’re kind of broke and uninsured!’” Meaghan Dorman, bar director of both Raines Law Room and Dear Irving, says. But bar people are immensely resilient, so Dorman opened up the bar’s intimate backyard and worked to obtain a bike lane permit in order to seat even more guests out front, in plain sight.

Though Dorman never thought she’d see a concept like Raines Law Room with a patio, it’s an increasingly common phenomenon in the streets of NYC. Even Attaboy, another infamous and elusive bar of New York, is now serving cocktails right out in the open on Eldridge Street.

“We’ve just really had to rethink how we can translate our philosophy into the only business we’re allowed to do right now,” Dorman says. For all of her bars, this entails not only in-person service, but a focus on to-go cocktails and virtual class offerings as well.

Paying for Safety is the New Luxury

In order to enter City Winery’s flagship location at Pier 57 in Hudson River Park on the West Side of Manhattan, both guests and employees alike are required to take a rapid Covid-19 test.* On Tuesdays and Wednesdays, patrons are responsible for the cost of a $50 test — a fee whose full amount goes directly to the testing company — and can spend their 15-minute wait for the results sipping on complimentary bubbles. Those who test positive for Covid-19 are sent home after being offered a follow-up PCR test with 24-hour turnaround, but they are not permitted inside. A negative result is rewarded with entrance to the restaurant, where all other safety protocols, such as social distancing and mask-wearing, are still enforced.

Michael Dorf, founder and CEO of City Winery, believes that offering tests at the door is “not just a scientific and social responsibility to keep people safe,” but an example of an expanding definition of hospitality. By ensuring that everybody inside what he refers to as “the bubble” has acquired a negative test result, City Winery is able to add another layer of comfort to the hospitality his restaurant venue provides. “And at some point in the not-too-distant future, we’re going to start to see [the need] to check people’s certificate of vaccination,” he says imaginatively.

Dorf believes there are “a lot of psychological considerations” to take into account to make guests feel as safe as possible, “and that’s our job,” he says. “Just like providing good bathrooms, we need to provide a good, comfortable situation for consumption. If people don’t feel safe, then they’re not going to come.”

Since City Winery is usually also a live-music venue, Dorf foresees thorough safety measures carried over for concerts when gathering restrictions are lessened. Until City Winery can host shows with an all-inclusive, test-and-ticket price for revelers, it is offering virtual concerts through its CWTV exclusive streaming series. Dorf says he is open to using it as an incremental offering for audiences who are unable to attend live because of logistics, “but we don’t see that at all in any way as a substitute.” As with its virtual wine tastings, he sees this more as a temporary bridge to connect people in a very solitary time, but also feels pushback on virtual gathering “because there’s so much of it,” he says. “And what we do really well, which doesn’t work in a Covid world … is bring people together.”

The Rise of the Salon

“My apartment, a brownstone with a large parlor, fireplace, and view of the Chrysler Building was my metropolitan dream. I was gutted at the thought of having to leave it,” recalls Georgette Moger-Petraske, a freelance food and drinks travel writer who lost her work last March. When her roommate moved out around the same time, keeping the apartment didn’t seem likely. Then she stumbled upon an 1860s perfume counter from Louisiana in an antique store during a day trip upstate. “I fell hard at first sight,” Moger-Petraske says of the beautiful bar-like structure. “Taking into consideration how much everyone was really missing bars and restaurants and attempting being home bartenders, I hatched a plan.”

The plan was to teach the fundamentals of classic cocktails like the simple yet elegant ones served at the storied speakeasy Milk & Honey, which was arguably the first of its kind in New York City to gain rabid popularity in the early aughts. Late owner Sasha Petraske and Moger-Petraske’s book, “Regarding Cocktails,” is filled with recipes for the at-home bartender and a fitting touchstone for any class. And so, with a little help from a PPP loan and a friend on the North Fork of Long Island with the Yennecott oyster farm, “Regarding Oysters” was born.

Moger-Petraske’s unique salon brings small groups into a Covid-safe learning space. During a two-hour session, guests are welcomed into her Murray Hill apartment with hand sanitizer and temperature checks before being treated to a class in cocktail-making and oyster-shucking at the little antique bar that had caught her eye so many months ago. “The salons are very intimate and there’s always a celebratory feeling in the air,” Moger-Petraske says of her small, reservations-only classes that will gather in honor of birthdays, engagements, and date nights.

Between the roaring fire, crystal clear Hundredweight ice cubes, and vintage barware that she has collected over the years, Moger-Petraske is able to present the feel of a curated bar to her students. The essence of hospitality is palpable. “Our favorite NYC dining rooms and bars put just as much consideration and passion into their establishments,” she says. “From the fold of a napkin to the charm of a miniature salt boat, the clarity of the cube chilling your Penicillin, to the delicate Depression-era coupe your Water Lily is served in. It’s my hope that in the absence of our beloved bars that my guests feel inspired to create some of this magic in their own homes.”

Your Friendly Neighborhood Grocer

St. John Frizell, owner of Fort Defiance in Red Hook, Brooklyn, tried to make his restaurant function as a delivery and takeout business for a short while back when nobody knew how long the shutdowns would last. Since sending out quality meals in to-go boxes is no simple feat and can require menu changes and more, “it was a question of how much investment,” says Frizell.

“Is this the best way to invest the money that I have left? And I decided it was not, so we closed the restaurant in late March,” Frizell explains. Not long after, he reached out to family-owned organic farm co-op Lancaster Farm Fresh to see about obtaining some of its CSA boxes. He found that enough people in town were interested in claiming one of their own to set up an online store on Fort Defiance’s website. Getting a box of beautiful vegetables through contactless pickup outside the closed restaurant was a popular notion in a time when nobody knew how Covid was transmitted and the supermarket was to be avoided. Business grew and soon people began asking for other items. “And I wanted other things too, like, cheese and milk, and eggs, and bread, and just started to build from there,” Frizell says.

It was decided then that the change for Fort Defiance was going to have to be permanent, not just a temporary closure until things got back to normal for restaurants. “That was an important decision because you can’t really ride two horses at the same time,” says Frizell. “You have to make a decision and just go for it with your whole heart.” The new iteration of Fort Defiance as a general store has since gotten into the mail-order and holiday catering business as he and his steadfast team roll with the punches of what their neighbors in Red Hook might need.

“I don’t want this to come off as corny, but [what] we went through, you have to ask, ‘How can I help?’ Like, ‘How can I be of service here?’” Much like when Hurricane Sandy flooded Fort Defiance and most of the neighborhood in 2012, “we were all kind of in the same boat as we are now. We all had problems, but we were all very ready to help each other at the same time,” Frizell recalls of his community.

As another way to reach out, he started a newsletter called The Fort Defiance Gazette with announcements of new items in the store, promotions, and more. “It’s also filled with the same kind of bullshit I would talk to people about across the bar. They’re still getting the content from me, whether they like it or not,” Frizell laughs. “But it’s another way to connect, and then people email me back all the time. So there’s this dialogue happening, it’s just happening in a different space.”

Room-Temp and Ready To-Go

“Our business really came about as we were watching our industry fall apart around us and feeling really sad and helpless about that,” says Blake Walker, co-founder of drinks delivery service Day and Night Cocktails. He and fellow Amor y Amargo alum Sean Johnson mitigated grief with conversations about possibilities for projects, contemplating styles of cocktail to best suit a pandemic hellscape. They settled on the “Scaffa” — a room-temperature and undiluted mixture of spirits found in Jerry Thomas’s 1860s “The Bartender’s Guide.” Recently appearing on menus at bars like Amor y Amargo and the late Pegu Club, the Scaffa also boasts the at-home allure of being shelf-stable, so it won’t take up space in the refrigerator.

Unlike many to-go models that can arrive alongside complicated instructions, Day and Night’s drinks are poured from their bottles without fuss. “What you get is exactly the way we would serve it to you if you were sitting across the bar from us,” Walker explains. Each menu features a fresh, bright “Day” cocktail alongside a deeper, richer “Night” mixture. For those not sold on the warm drink concept, think of cold as a flavor inhibitor and know that the professionals have layered some very indulgent ones in there.

Refreshingly, Day and Night isn’t only about the drinks — like bartending, it’s about taking care of people. “We decided right off the bat that we’d do a donation for each sale to an organization called Bushwick Ayuda Mutua, which is a mutual aid organization in Bushwick that I was volunteering for,” says Walker. After the murder of George Floyd, all profits for the month of June went to the Movement for Black Lives. Because of the smaller scale of the venture, Walker is also able to have an encounter with every customer. “I don’t take that for granted at all,” he says. “Having that personal interaction [is] the closest that I can get to the across-the-bar experience that I’ve missed so much about my job as it was a year ago.”

By the time Walker and Johnson’s workplace reopened to tackle outdoor dining, they already had their own regulars at what was becoming more than just a side hustle. “It made us turn towards Day and Night as a potential alternative because, at least for us, the experience of going back to work was not pleasant.” Less money for more effort with the added bonus risk of catching a deadly virus is a hard sell.

The Future

Are all of these innovations and modifications to the classic bar experience worth it if they don’t somehow improve the way hospitality workers are treated or protected?

For Day and Night Cocktails, the commitment to supporting good causes extends to its own hurting community. “Something that remains incredibly important to us is that whatever our participation is with this industry, on the other side of Covid, we just want to make sure that we’re working towards an industry that takes care of its own better,” Walker says. “We want to be a part of that rebuilding process.”

The real pain of newly vacant real estate where beloved bars once were is hard to ignore and important to acknowledge. There will be more empty storefronts as time trundles on, with plenty of talent waiting in the wings to fill them with new concepts. “It’s going to be a really opportunistic time,” Walker observes. Hopefully, the entrepreneurs jumping at these opportunities will have more than just profit in mind.

“Our guests need to understand that we’re not expendable and disposable, and our government needs to know that, too,” says Walker. “We need to remind each other all the time that our work is important and valuable and we shouldn’t be [a] disposable commodity that’s part of this gajillion-dollar industry. We have to do a little bit better [of a] job taking care of each other.”

As creative as bartenders are getting with side gigs and business-wide pivots, many want to get back to the bar as much as patrons do. “It’s all just so antithetical to what we love to do that I just can’t wait to serve someone at the bar again,” Dorman says longingly.

Despite everything, I do detect enthusiasm when speaking with these hospitality professionals about what the future holds for bars. I want to believe that fantastic transformations lie ahead, because perhaps it’s not a return to “normal” that we should crave, but a hope for an evolution. Some of these intrepid ideas involve new ventures and virtual bar experiences, while others pivot from traditional bar service entirely. One upstart is resurrecting an ancient technique to sell shelf-stable libations to-go. Another sees safety — in the form of rapid tests for Covid-19 at the venue entrance — as the new luxury.

In every story told here, there is resilience and a reimagined future. Here’s how a handful of NYC’s bar owners, workers, and newly minted entrepreneurs are attempting to survive and succeed in this pandemic.

Speakeasies Out on the Street

When Raines Law Room opened in Manhattan’s Chelsea neighborhood, it was the perfect example of the speakeasy style that many cocktail bars were emulating in 2009 — unmarked, hard-to-find door, tin ceiling, the works. With no standing room allowed, it was not easy to get in, which was the icing on the exclusive, hidden bar cake. These are not the sorts of places that thrive with indoor seating restrictions.

“Something that’s unique to all these frontline industries — and I hate to put us in the same category as health care, but we’re also some of the most affected — it’s like, ‘Come up with genius ideas while you’re kind of broke and uninsured!’” Meaghan Dorman, bar director of both Raines Law Room and Dear Irving, says. But bar people are immensely resilient, so Dorman opened up the bar’s intimate backyard and worked to obtain a bike lane permit in order to seat even more guests out front, in plain sight.

Though Dorman never thought she’d see a concept like Raines Law Room with a patio, it’s an increasingly common phenomenon in the streets of NYC. Even Attaboy, another infamous and elusive bar of New York, is now serving cocktails right out in the open on Eldridge Street.

“We’ve just really had to rethink how we can translate our philosophy into the only business we’re allowed to do right now,” Dorman says. For all of her bars, this entails not only in-person service, but a focus on to-go cocktails and virtual class offerings as well.

Paying for Safety is the New Luxury

In order to enter City Winery’s flagship location at Pier 57 in Hudson River Park on the West Side of Manhattan, both guests and employees alike are required to take a rapid Covid-19 test.* On Tuesdays and Wednesdays, patrons are responsible for the cost of a $50 test — a fee whose full amount goes directly to the testing company — and can spend their 15-minute wait for the results sipping on complimentary bubbles. Those who test positive for Covid-19 are sent home after being offered a follow-up PCR test with 24-hour turnaround, but they are not permitted inside. A negative result is rewarded with entrance to the restaurant, where all other safety protocols, such as social distancing and mask-wearing, are still enforced.

Michael Dorf, founder and CEO of City Winery, believes that offering tests at the door is “not just a scientific and social responsibility to keep people safe,” but an example of an expanding definition of hospitality. By ensuring that everybody inside what he refers to as “the bubble” has acquired a negative test result, City Winery is able to add another layer of comfort to the hospitality his restaurant venue provides. “And at some point in the not-too-distant future, we’re going to start to see [the need] to check people’s certificate of vaccination,” he says imaginatively.

Dorf believes there are “a lot of psychological considerations” to take into account to make guests feel as safe as possible, “and that’s our job,” he says. “Just like providing good bathrooms, we need to provide a good, comfortable situation for consumption. If people don’t feel safe, then they’re not going to come.”

Since City Winery is usually also a live-music venue, Dorf foresees thorough safety measures carried over for concerts when gathering restrictions are lessened. Until City Winery can host shows with an all-inclusive, test-and-ticket price for revelers, it is offering virtual concerts through its CWTV exclusive streaming series. Dorf says he is open to using it as an incremental offering for audiences who are unable to attend live because of logistics, “but we don’t see that at all in any way as a substitute.” As with its virtual wine tastings, he sees this more as a temporary bridge to connect people in a very solitary time, but also feels pushback on virtual gathering “because there’s so much of it,” he says. “And what we do really well, which doesn’t work in a Covid world … is bring people together.”

The Rise of the Salon

“My apartment, a brownstone with a large parlor, fireplace, and view of the Chrysler Building was my metropolitan dream. I was gutted at the thought of having to leave it,” recalls Georgette Moger-Petraske, a freelance food and drinks travel writer who lost her work last March. When her roommate moved out around the same time, keeping the apartment didn’t seem likely. Then she stumbled upon an 1860s perfume counter from Louisiana in an antique store during a day trip upstate. “I fell hard at first sight,” Moger-Petraske says of the beautiful bar-like structure. “Taking into consideration how much everyone was really missing bars and restaurants and attempting being home bartenders, I hatched a plan.”

The plan was to teach the fundamentals of classic cocktails like the simple yet elegant ones served at the storied speakeasy Milk & Honey, which was arguably the first of its kind in New York City to gain rabid popularity in the early aughts. Late owner Sasha Petraske and Moger-Petraske’s book, “Regarding Cocktails,” is filled with recipes for the at-home bartender and a fitting touchstone for any class. And so, with a little help from a PPP loan and a friend on the North Fork of Long Island with the Yennecott oyster farm, “Regarding Oysters” was born.

Moger-Petraske’s unique salon brings small groups into a Covid-safe learning space. During a two-hour session, guests are welcomed into her Murray Hill apartment with hand sanitizer and temperature checks before being treated to a class in cocktail-making and oyster-shucking at the little antique bar that had caught her eye so many months ago. “The salons are very intimate and there’s always a celebratory feeling in the air,” Moger-Petraske says of her small, reservations-only classes that will gather in honor of birthdays, engagements, and date nights.

Between the roaring fire, crystal clear Hundredweight ice cubes, and vintage barware that she has collected over the years, Moger-Petraske is able to present the feel of a curated bar to her students. The essence of hospitality is palpable. “Our favorite NYC dining rooms and bars put just as much consideration and passion into their establishments,” she says. “From the fold of a napkin to the charm of a miniature salt boat, the clarity of the cube chilling your Penicillin, to the delicate Depression-era coupe your Water Lily is served in. It’s my hope that in the absence of our beloved bars that my guests feel inspired to create some of this magic in their own homes.”

Your Friendly Neighborhood Grocer

St. John Frizell, owner of Fort Defiance in Red Hook, Brooklyn, tried to make his restaurant function as a delivery and takeout business for a short while back when nobody knew how long the shutdowns would last. Since sending out quality meals in to-go boxes is no simple feat and can require menu changes and more, “it was a question of how much investment,” says Frizell.

“Is this the best way to invest the money that I have left? And I decided it was not, so we closed the restaurant in late March,” Frizell explains. Not long after, he reached out to family-owned organic farm co-op Lancaster Farm Fresh to see about obtaining some of its CSA boxes. He found that enough people in town were interested in claiming one of their own to set up an online store on Fort Defiance’s website. Getting a box of beautiful vegetables through contactless pickup outside the closed restaurant was a popular notion in a time when nobody knew how Covid was transmitted and the supermarket was to be avoided. Business grew and soon people began asking for other items. “And I wanted other things too, like, cheese and milk, and eggs, and bread, and just started to build from there,” Frizell says.

It was decided then that the change for Fort Defiance was going to have to be permanent, not just a temporary closure until things got back to normal for restaurants. “That was an important decision because you can’t really ride two horses at the same time,” says Frizell. “You have to make a decision and just go for it with your whole heart.” The new iteration of Fort Defiance as a general store has since gotten into the mail-order and holiday catering business as he and his steadfast team roll with the punches of what their neighbors in Red Hook might need.

“I don’t want this to come off as corny, but [what] we went through, you have to ask, ‘How can I help?’ Like, ‘How can I be of service here?’” Much like when Hurricane Sandy flooded Fort Defiance and most of the neighborhood in 2012, “we were all kind of in the same boat as we are now. We all had problems, but we were all very ready to help each other at the same time,” Frizell recalls of his community.

As another way to reach out, he started a newsletter called The Fort Defiance Gazette with announcements of new items in the store, promotions, and more. “It’s also filled with the same kind of bullshit I would talk to people about across the bar. They’re still getting the content from me, whether they like it or not,” Frizell laughs. “But it’s another way to connect, and then people email me back all the time. So there’s this dialogue happening, it’s just happening in a different space.”

Room-Temp and Ready To-Go

“Our business really came about as we were watching our industry fall apart around us and feeling really sad and helpless about that,” says Blake Walker, co-founder of drinks delivery service Day and Night Cocktails. He and fellow Amor y Amargo alum Sean Johnson mitigated grief with conversations about possibilities for projects, contemplating styles of cocktail to best suit a pandemic hellscape. They settled on the “Scaffa” — a room-temperature and undiluted mixture of spirits found in Jerry Thomas’s 1860s “The Bartender’s Guide.” Recently appearing on menus at bars like Amor y Amargo and the late Pegu Club, the Scaffa also boasts the at-home allure of being shelf-stable, so it won’t take up space in the refrigerator.

Unlike many to-go models that can arrive alongside complicated instructions, Day and Night’s drinks are poured from their bottles without fuss. “What you get is exactly the way we would serve it to you if you were sitting across the bar from us,” Walker explains. Each menu features a fresh, bright “Day” cocktail alongside a deeper, richer “Night” mixture. For those not sold on the warm drink concept, think of cold as a flavor inhibitor and know that the professionals have layered some very indulgent ones in there.

Refreshingly, Day and Night isn’t only about the drinks — like bartending, it’s about taking care of people. “We decided right off the bat that we’d do a donation for each sale to an organization called Bushwick Ayuda Mutua, which is a mutual aid organization in Bushwick that I was volunteering for,” says Walker. After the murder of George Floyd, all profits for the month of June went to the Movement for Black Lives. Because of the smaller scale of the venture, Walker is also able to have an encounter with every customer. “I don’t take that for granted at all,” he says. “Having that personal interaction [is] the closest that I can get to the across-the-bar experience that I’ve missed so much about my job as it was a year ago.”

By the time Walker and Johnson’s workplace reopened to tackle outdoor dining, they already had their own regulars at what was becoming more than just a side hustle. “It made us turn towards Day and Night as a potential alternative because, at least for us, the experience of going back to work was not pleasant.” Less money for more effort with the added bonus risk of catching a deadly virus is a hard sell.
