Little headcanon around that: Vinnie prefers motorcycles and he also repairs and restores them, even having them in his apartment at times.

But he knows, his woman loves a good car and driving through NC with Body Heat radio playing. So he restored that beautiful Mustang for her and he was in over his head and it took him way longer than expected (her birthday is May 30th) but she doesn't mind one bit because she got the full Vinnie experience (TM) on her birthday and this car is the proverbial huge cherry on top.
