What to do with this morning's 10+ lbs of tomatoes, a few cukes, peppers, herbs and sorrel? My favorite golden gazpacho, which freezes well and whips back up to a nice light emulsified soup. In a blender, about 3 lbs of tomatoes (any color will do, but golden if you want the golden soup) a small ripe cucumber, a few ripe sweet peppers, a bundle of basil or other herbs, a couple cloves of garlic, 1/3rd cup of olive oil, and Lebanese style pita to thicken. If the tomatoes aren't fully ripe and sweet, a splash of balsamic can be added to the bowl. Don't add it before then, as the acetic acid will strip all the other flavors out of your gazpacho. Chill almost icey cold and serve with hot sauce. Today I'm using Kalamazoo's own hot sauce!
