Holiday in Enchancia
I know that Cedric didn't appear in this episode, which I find strange.
If the royal family had asked Cedric to use his crystal ball to find Roland's location while he was missing, they wouldn't have needed to go looking for him in a blizzard and risk their own safety.
Maybe a locator spell would even end up finding him.
I don't think Cedric would have neglected to look for Roland, even if they weren't such good friends anymore.
Indeed Cedric wanted the throne, but I don't think he would be so cruel to let his childhood friend get lost in the snow to die, especially considering that in addition to being king, Roland is also a father of a family.
The script could have given an excuse that the crystal ball was being interfered with by the blizzard, and that it wouldn't be able to find Roland accurately.

Thinking about how I have absolutely no memories from my childhood of Cedric being in Sofia The First, I don't remember him being there at all, and I remember the entire Royal Sleepover ep, One Of The Princes, bits of Floating Palace, bits of A Royal Mess, the whole The Shy Princess ep, a bit of Holiday In Enchancia, a bit of Let The Good Times Troll, and I even remember vividly Sofia wearing her apprentice outfit, even though the Cedric's Apprentice ep was extremely familiar, I DON'T HAVE ANY MEMORIES OF CEDRIC EXISTING IN THE SHOW

Holiday in Enchancia
A blizzard traps King Roland in a forest cabin while he shops for last-minute presents. Worried, Sofia, Amber, James and Queen Miranda set out to find him but get stuck in the blizzard. Aurora advises Sofia to rely on her animal friends. Mia and Robin locate King Roland and bring everyone together. They share Wassalia with a village family and give them their presents. They light the Wassalia candle and feast together.
The Shy Princess
Sofia partners with shy Princess Vivian for a class art project. They visit Vivian's castle where Sofia's bunny friend Clover, befriends Vivian's dragon, Crackle. Sofia notices Vivian's shyness disappears when she plays the mandolin and sings. To help Vivian overcome her shyness, they decide to present together through music at show-and-tell. Vivian's newfound cheerfulness and lovely voice attract others, leading to new friendships. Grateful for her first friend, Vivian joins the school band.

Season 1 episodes I think Cedric should have been in
Just One of the Princes - Cedric was obviously supposed to be in this episode, so I like to imagine that he conjured the piles of straw Sofia landed in white practicing.
Baileywick's Day Off - In Cedric's Apprentice it's revealed that everyone could hear Cedric singing. The whole castle was singing about the steward, so it would have been just like Cedric to appear in the halls complaining about how the noise was disturbing his work. Also, it would have been great if, instead of Baileywick, Sofia had seen Cedric in the garden and asked him to catch butterflies. Sofia was thoughtless to interrupt Baileywick on his day off.
Tri-Kingdom Picnic - Cedric was attending the celebration in Baileywhoops, at least until he had to entertain the kids, so why didn't he attend the picnic? Sure, he's an introvert. But it would have been nice to see him, even if he was sulking the whole time.
Finding Clover - Sofia threatening Boswell with the royal sorcerer instead of the useless guards would have been fun.
Holiday in Enchancia - Everyone else made an appearance, even Violet. So Cedric should have been there.
Four's a Crowd- One version of the song has a line about Cedric. It was cut, but we could have gotten a few seconds of him...

Wow, these people at the castle depend so much on Baleywick.
I felt sorry for him in the episode about the day off. The guy works almost as much as Alfred from Batman! I think they should look for a union, or something like that. Look for your rights! He deserved to go on strike.
Even I found it strange that Sofia asked for his help near the end, I thought she would remember it was his day off ,since it was his birthday and everything.
They could have asked the servants to sing happy birthday to him!
Maybe even the servants could have raised some money between them to give him a gift, like a gold pen, maybe a new chain watch?
Wow, king Roland, how stingy you are! The guy who takes care of all your commitments , helps you and your family for years... And you don't even give a symbolic gift to him? Not even a souvenir?
( My grandmother isn't rich, but she always made a point of giving the most well-thought-out gifts she could give and make. One of which was a super expensive pen for a doctor, and he was a collector of pens all over the world! And once she knitted wool stoles, and they were so well made that they went to galas and weddings wearing them! That's because my grandmother made it by hand!)
At least Queen Miranda made Sofia reflect. And that's why she's the queen! She is the voice of reason almost always, Roland is lucky to have her by his side. Even more so, when his children They were the first to ask for Baleywick's help, even on his day off.
At least they tried to apologize After this, the king better make Baleywick's birthday a national holiday, without him the castle doesn't seem to work! The guy must have a backache from carrying everyone from the castle! And how old is he?
He must be a vampire hahahahaah! It is now Enchancia's historic heritage!

How does the education system in the Everrealm even work. Elena, Mateo and Naomi are not in school even though they are secondary school age. All we see is primary school for Isabel, the StF kids
I imagine the different Kingdoms have their own approaches to education, like how real world countries have different education systems. I'm assuming most of the kingdoms require primary education and have varying degrees of requirement for secondary education, with access to tertiary education for those that would need higher education in more specialized subjects.
Enchancia we know has Royal Prep and the village school for primary education, with the former being specifically for royals from a variety of kingdoms. The other kingdoms presumably have their own village schools as well for non-royal folks. Royal Prep and the village school have different curriculum, with RPA teaching magic and the village school teaching construction, as examples. Hexley Hall is a magic academy that seems to cover primary, secondary, and tertiary education for sorcerers considering Cedric says he studied there for 15 years. Other primary schools introduced in StF include the Junior Knights Academy and Westloch.
I don't think we really see any secondary school students in StF, but we do learn a little about secondary education, at least for the upper class, when the Royal Prep students get sent to pick a school to attend after RPA graduation in The Royal School Fair. Like Royal Prep, these schools don't seem to be restricted by kingdom. So at least in the "Eastern Hemisphere" EverRealm, royals seem to be educated together for primary school before being split up for more specialized secondary school.
I don't remember if its ever made clear how secondary education works for normal kids, nor how admission into Hexley Hall works as opposed to just going to a regular school. Considering StF is entirely focused on primary school aged kids, it makes sense that we wouldn't learn a whole lot about what happens afterward.
We learn even less about education in the "Western Hemisphere" EverRealm in Elena of Avalor, since unlike StF, EoA's focus isn't on the characters being in school. Royal education doesn't seem to be as centralized in Avalor as it is in Enchancia (& Enchancia's neighbors), since Isabel was being privately tutored in the castle before going to school. There also doesn't seem to be a specific school for royals, since when she does start attending school, she just goes to the regular school in the city. We also know Avalor has tertiary education in the form of the Science Academy, and there are presumably other specialist schools as well. Esteban mentions a "royal academy" when he says he's bringing in professional dancers for Naomi's birthday in My Fair Naomi, but this is never really elaborated on.
As to why we don't see the teens in school - I touched briefly on this in my magic in Avalor post, but my headcanon is that education in Avalor is only required through lower secondary education (through the end of 9th grade for Americans). This is based off the fact that upper secondary school was only made mandatory in Mexico in 2012. Elena presumably had private tutors growing up (seeing as Isabel canonically did), so we wouldn't see her going to school even if she was still studying. Mateo and Naomi, then, would've been upper secondary school-aged at the start of the show, so it's possible that they just dropped out once they got their jobs at the palace.
It might also be possible for them to just still be in school during the run of the show. We don't see every detail of their lives, and the school day in a lot of Latin America tends to be structured around the morning, with classes ending early so students can go home for lunch. They could be going to school in the morning and then heading to the palace in the afternoons, and the episodes where we see them hanging around at other hours are weekends or holidays. I mean, the show starts during summer break, so it wouldn't be an issue for a few months anyway.
