I don't actually think I 100% get the reference sincd I have not played Demon's Souls (or any Fromsoft game, for that matter).

It wouldn't be too jarring to have boss fights be required for story progression -- Hornet herself is a required boss since, iirc, you cannot beat the game without dashing (or mantis claw). The difficulty of those bosses, though? I mean... Hollow Knight already has some notoriously difficult (and/or annoying) boss fights, optional or not. It's part of the gameplay and progression
