A week late, but here is last weekend's end result! A 54.5% Einkorn flour, 36.4% AP flour, and 9.1% Whole Wheat flour loaf. As this weekend's higher einkorn percentage loaf rests in the fridge overnight, here's last weekend's 40% einkorn flour, 60% AP flour and it was my first time playing around with einkorn! I loved the flavor of it, it complimented the tang of the sourdough process well! About 2 weeks late, but I made another peach yeast water loaf while I was waiting for the peach yeast water sourdough starter to take off. It was a little wetter than I had planned, because this time I measured with a new kitchen scale I got as opposed to by volume. I'm pretty proud of myself; I made wild yeast bread for the first time from scratch, using yeast I cultured from some peaches grown last year in my mom and her wife's garden. It feels like sorcery!! I also tried a hugely ballsy move and went full force into a 109% while wheat loaf...And it would have been perfect, too, if I hadn't left the oven at the preheat temp for the whole bake. 🤦‍♂️ Luckily, it only got a little over done on the bottom and top, (mostly bottom). I've made panzanella twice now with the little bit of leftover week old bread from my baking adventures, and it has been delicious both times!! Sorry not sorry that this is becoming a bread-stagram of late. I present my first ever sourdough loaves!! Last week my sourdough starters that I had inoculated with the peach yeast water from my mom and her wife's backyard peaches were finally ready to bake with! I had split the original into two, one I was feeding with AP flour and one with Whole Wheat. I decided to split a 40% Whole Wheat flour and 60% AP flour loaf and bake half with one starter and half with the other, keeping all other factors the same! SCIENCE!! I got a better rise and oven spring out of the Whole Wheat flour, maybe because they were more juiced up?
