This vegan twist on the classic homity pie is filled with a hearty mixture of potatoes, onions, leeks, spinach, and vegan cheese, all encased in a golden pastry crust. It's a comforting and satisfying dish perfect for any occasion.
Ingredients: 500g floury potatoes, peeled and diced. 200g onions, finely chopped. 200g leeks, finely chopped. 200g spinach, chopped. 150g vegan cheese, grated. 1 tbsp olive oil. 1 tsp dried thyme. Salt and pepper to taste. 1 vegan shortcrust pastry sheet.
Instructions: Preheat the oven to 200C 180C fan. Boil the diced potatoes until tender, then drain and mash them. In a large pan, heat the olive oil over medium heat. Add onions and leeks, and saut until softened. Add the mashed potatoes, spinach, vegan cheese, dried thyme, salt, and pepper to the pan. Stir until well combined and heated through. Roll out the vegan shortcrust pastry sheet and line a greased pie dish with it. Spoon the potato mixture into the pastry-lined dish, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden and crisp. Serve hot or cold, sliced into wedges.

These Vegan Sausage and Tofu Breakfast Sandwiches are hearty, satisfying, and perfect for a delicious morning meal. They are packed with protein and flavor, making them a great way to start your day!
Ingredients: 1 block firm tofu, pressed and sliced into 8 rectangles. 1 tablespoon olive oil. 8 vegan breakfast sausage patties. 8 slices vegan cheese. 4 English muffins, split and toasted. 1 cup baby spinach leaves. 1 avocado, sliced. Salt and pepper, to taste.
Instructions: In a large skillet, heat olive oil over medium heat. Add tofu slices and cook until golden brown, about 4 minutes per side. Season with salt and pepper. Remove from skillet and set aside. In the same skillet, cook vegan sausage patties according to package instructions. To assemble sandwiches, place a slice of vegan cheese on the bottom half of each English muffin. Top with a tofu slice, a sausage patty, avocado slices, and baby spinach leaves. Cover with the top half of the English muffin. Serve immediately. Enjoy!

This vegan vegetable ragu is a hearty and tasty dish made with healthy vegetables that are cooked in a rich tomato sauce. It's great for a cozy dinner, and you can easily change it up by adding your favorite vegetables.
Ingredients: 2 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 red bell pepper, diced. 1 zucchini, diced. 1 can 14 oz diced tomatoes. 1 can 14 oz tomato sauce. 1 cup vegetable broth. 1 tsp dried oregano. 1 tsp dried basil. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and garlic, saut until softened. Add diced carrots, celery, red bell pepper, and zucchini, cook until vegetables are tender. Stir in diced tomatoes, tomato sauce, vegetable broth, dried oregano, and dried basil. Season with salt and pepper to taste. Simmer over low heat for 20-25 minutes, stirring occasionally. Once the ragu has thickened, serve hot, garnished with chopped fresh parsley. Enjoy your hearty vegan vegetable ragu!

This vegan chili is one of my favorite vegan recipes to make. It’s so hearty and delicious and quite honestly I don’t even miss the meat! 
Ingredients include:
2 tablespoons Olive oil
1 Onion
1 Red pepper
2 Carrot
2 Celery stalks
3 cloves Garlic
2 tbs Chili powder
2 tsp cumin
1 1/2 tsp paprika
1 tsp oregano
1 bay leaf
1 large can diced tomatoes
1 can black beans
1 can pinto beans
1 can kidney beans
1 to 2 teaspoons red wine vinegar (or lime juice)
Cilantro, avocado, cheddar cheese, queso fresco, tortilla chips, sour cream etc. for garnishing 
You literally just combine everything in a pot and cook until everything absorbs into each other. So easy and so tasty!

I made yummy chilli spaghetti, with accidentally gluten free, mung bean noodles. It was so good! Warning, it is a bit spicy, but flavorful. Here's how to make the chilli: Saute 1 medium sweet onion on high heat until translucent. Add two 28 oz cans of crushed tomatoes and a 32 oz carton of veggie stock. Under medium heat, add all your spices & flavorings: 1 tablespoon of curry powder, 1 tablespoon of chilli powder, 1 tablespoon of cayenne pepper, 1 tablespoon of savory seasoning, 2 tablespoons of seasoned salt, 2 tablespoons of agave nectar and 2 cups of nutritional yeast. Then, stir in 2 cups of red dahl lentils. Bring it all back to a boil, stiring occasionally. Lower heat and cook for 20 minutes, covered. Afterwards, stir in two 15 oz cans of your favorite beans, half a bag of corn (I used leftover Trader Joes grilled corn). Return to simmering on low heat, covered, for 10 more minutes, stirring occasionally, or until the ingredients have all married well and the lentils are done cooking. Throw two bags of mung bean noodles in boiling water, turn off heat, stir it a couple of times and it will cook in a few short minutes. Drain and enjoy with your chilli! Good afternoon/morning!
Today’s been a bit of a busy day! Ran a few errands and ran into some difficulties with our kitten! He’s still learning to clean himself and has been having a tough time doing certain things on his own. Agh! We had to open all the windows for some fresh air! 😬 I feel like a mother to my next child hehe.
Anyway, after the chaos this morning, I began to develop a migraine. Those are the worst! My appetite slowly went away, but I slowly remembered how nice it feels to settle my stomach with one of my favorite, sweet breakfasts! Oatmeal! Agh, I love it! With almond milk, different fruits, and cinnamon! Plus, a nice warm tea on the side, which is also infused with cinnamon 😻. Time for a bit me time. I bought a new notebook/planner. Maybe it’s time to create my #grimoire What’s one of your favorite hearty breakfast? Hope all are having a relaxing Monday!
