Enjoy the smoky flavors of curry-infused cauliflower, grilled to perfection in convenient foil packets. The addition of a tangy yogurt sauce enhances the overall experience, making it a delightful vegan barbecue option for any gathering.
Ingredients: 1 large cauliflower, cut into florets. 1 red onion, thinly sliced. 2 bell peppers, sliced. 3 tbsp olive oil. 2 tbsp curry powder. 1 tsp cumin. 1 tsp smoked paprika. Salt and pepper to taste. 1 cup cherry tomatoes, halved. Fresh cilantro for garnish. Aluminum foil for packets.
Instructions: Preheat the grill to medium-high heat. In a large bowl, combine cauliflower florets, sliced red onion, and bell peppers. In a small bowl, whisk together olive oil, curry powder, cumin, smoked paprika, salt, and pepper. Drizzle the spice mixture over the cauliflower mixture and toss until evenly coated. Divide the cauliflower mixture among several sheets of aluminum foil, creating packets. Place cherry tomato halves on top of each packet and seal tightly. Grill the packets for 15-20 minutes, turning halfway through, or until cauliflower is tender. Carefully open the packets and transfer the grilled contents to a serving dish. Garnish with fresh cilantro and serve with yogurt sauce. For the yogurt sauce: Mix vegan yogurt with a pinch of curry powder and cumin. Serve alongside the grilled cauliflower packets.

In Texas & most of the southern U.S., BARBECUE is all about slow cooked meats with a tasty barbecue sauce. I am originally from Texas but have travelled and lived throughout the world, and missed the taste of Texas barbecue. Most of the world use the word "barbecue" to mean cooking burgers and hot dogs on an outdoor grill. That’s called a COOKOUT in the Southern U.S.! I have been back in Texas since March 2020. I investigated the ingredients of the barbecue sauce from my old favorite restaurant, and discovered it was primarily made of corn syrup. Yuck! To optimize my weight and #type1diabetes management, I also don’t want to eat meat anymore. Fortunately, I can satisfy my craving with a similarly yummy meal that has no saturated fat, no cholesterol, and is made entirely of veggies, fruits, and seasonings. JACKFRUIT is a fruit grown in India and Western Asian countries. It has a similar texture to a tender pulled pork, so it makes an excellent meat replacement in a barbecue dish. You can buy it fresh in most grocery stores, or cans from grocery stores like Trader Joe's. Hooray for globalization! Here's my simple #recipe for making 4 hearty servings of yummy healthy Jackfruit Barbecue. 1 can jackfruit, rinsed and strained 1 onion, chopped 1 bell pepper, chopped 2 garlic cloves, minced 4 cups barbecue sauce (most of the recipe below) 1. Sauté the onion, bell peppers, and garlic, adding water as needed. 2. Stir in the jackfruit and barbecue sauce. Heat on low, stirring occasionally, for 20-30 minutes. 3. Serve on whole grain buns or a baked potato. Yum!
