Hantober Day Eleven!
SHARE YO JUJU-CAKE RECIPE!
So, I really tend to experiment more with Juju-cakes, and the only latest picture I have is from his birthday — so here we go!!
3 egg whites, plus 1 egg yolk
1 1/4 cups milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 cup powdered sugar
2 teaspoons baking powder
1/4 teaspoon salt (optional)
You’re gonna separate dry from wet ingredients, so mix all your wet ingredients (egg yolk, vanilla extract, oil, milk) into one bowl, and your dry (salt, baking powder, baking sugar, flour) into another bowl.
Wisk your egg whites until it turns white - you want peaks! Like dis:
Set your egg whites aside.
Then! You’re going to mix your wet ingredients with your dry ingredients! Mix, mix, mix it up ~
Now, you’re gonna scoop your egg whites and mix it delicately with the Juju-cake mix. You wanna mix slowly, gathering the batter on all sides, and continue mixing until the batter is a beige-ish color.
Then! You pour your Juju-cake mix into your pan! Personally, I add a few chocolate chips, since strawberry and chocolate go super well together. I also tend to double-pour - so, I pour some batter in, scatter some chocolate chips, then pour some more batter in. It makes the cake a bit thicker!
You can put some butter in there if you want, then add some strawberries in between the cakes and on top for garnish — und VOILÀ! You have yourself some Juju-cakes!

Strawberry Pancakes: Share your pancakes recipe! (Optional: with pictures :D)🥞🍓🍓🍓🥞
MY pancakes recipe is one that came with the cream cheese pot actually, but it's my favorite because it's very healthy:
Ingredients (for 16 pancakes):
1 table spoon of cream cheese (you can replace it with yogurt, oil or butter)
2 eggs
1 cup of all purpose flour (if your flour has any self-raising component as baking powder or soda, take the baking powder out of the recipe)
1 cup of oatmeal
2 cups of milk
2 teaspoons of baking powder
1 tablespoon of sugar (or more if you like)
And my additions:
1 tablespoon of honey (this is the key ingredient to make any pancakes recipe soft)
Homemade jam (I like homemade jam because I do it with little pieces of fruit, it can be replaced with any smashed/chopped fruit of your liking, like bananas, just be aware if the batter gets more liquid because of it you'll probably need more flour)
Replace 2 tablespoon of flour with 2 tablespoons of corn starch to make it more softer.
A pinch of baking soda and salt, very little.
Instructions:
First whisk the cream cheese to avoid having lumps, (add the fruit/jam if you are adding it now and keep whisking), add the sugar, honey and eggs and whisk until everything is well integrated (btw I use just one egg and saw no difference, I just added the equivalent in milk, do it at your own risk)
Add the milk, mix well.
Sieve the flour together with the baking powder, salt, etc(except for the oatmeal obviously) and incorporate it to the batter, then add the oatmeal and mix well everything.
If you think you are short in milk, add more, trust your gut, not all flours absorb the liquid in the same way.
Take the batter to the fridge for at least 20 minutes so every grain of flour and flake of oatmeal is properly hidrated.
You'll notice after that time that the batter is more thick now, give it a last whisk before making the pancakes.
Put some oil in your pan so the pancakes don't stick to it 😭 (oil, margarine... it always tastes better with butter!)
Set the stove to "crown fire" which you get when you are about to shut off the stove (it's not the minimum by default of the stove, you made it yourself), this is how it looks
The important thing is to leave a space of at least one finger between the frying pan and the fire, otherwise it could burn 😭 (don't put your finger on the fire please)
9. Make the pancakes! Put a small portion of the batter on the pan and when you see small bubbles appearing on the top, and that the batter doesn't seem to go anywhere when you try to flip them over, that's the moment to flip them. It's faster if you put a lid over it.
10. Be patient. It takes some time to be ready (otherwise it would burn... What a life lesson...)
10. Remember to renew the butter every time so the next pancake doesn't stick to it 😭
This is how they look, if gravity and a well calibrated kitchen are on your side it will look better!
But for Jujus Birthday I wanted to do strawberry pancakes, so I went with the same recipe, but half the ingredients, no oatmeal and replaced the cream cheese for butter.
Since the (3) strawberries have a lot of juice I had that problem of the batter being too liquid, which resulted in thinner pancakes but still they came out soft and delicious! 😋🥞
Syrup made of sliced strawberries on the top and done!🥞🍓
