Brebin Corse (Corsican Sheep's cheese)

On a recent work trip to Paris I made sure to leave a couple of hours for cheese. Try typing 'cheese shop' into a google map of Paris... quite a few turn up (of course)! There's a distinct cluster around Rue Cler, and so with no other particular pointers we headed there in the unseasonably warm October sunshine.

Rue Cler turns out to be a wonderful pedestrianised street of food businesses, spilling out into the cross-streets and cluttered with fruit stalls, bentwood bistro chairs, and ice cream fridges. There's a large cheesemonger called simply La Fromagerie, but I spied a smaller and altogether more intriguing shop around the corner - Cantin.

This looked very much the sort of place with a long heritage of small-batch cheeses, possibly all affinaged exclusively for one seller. Inside, we were the only customers, and out came Madam Cantin herself (I later learned), who watched us with amused eyes as we tried to make sense of the labels. She took over the cheese shop from her parents in 1982, and it's been at this location since 1950. Cantin specialises in Comté, Camembert, and little goats cheeses called Bouton de culotte (trouser buttons). She stocks a highly regarded 40-month matured Comté, but I wanted something I knew nothing about, and spotted a 'Brebin Corse' - Corsican sheep's milk cheese made from lait cru, or raw milk.

There was an enticing 200g-or-thereabouts piece sitting on the pile, and so for an easy life I pointed, we murmured c'est combien?, paid up and left happy, admiring the bright orange wedges of mimolette on the way out.

This wonderful cheese is known generically as a tomme Corsica - a barrel-shaped farmhouse cheese produced by numerous small holdings. It has an aged crust with mottled colouring and striped grooves, and a deep beige waxy cheese right underneath. The centre is dryer and softer to bite. Chewing it carefully reveals various interesting, subtle flavours including a hay sweetness and umami savoury notes rather than lots of salt. It should be eaten in slices as an aperitif, with a glass of red wine. Fantastique!

Nông dân Mỹ 'được mùa, mất giá'

MỹVì Covid-19 và cả những trục trặc trong thoả thuận thương mại với Trung Quốc, nhiều nông sản ở miền Trung Tây đang dư thừa, giảm giá.

Sau vụ mùa năm ngoái với lượng mưa lớn và chiến tranh thương mại gay gắt, nông dân Mỹ hy vọng năm 2020 sẽ là thời điểm để bù đắp tổn thất. Nhưng thay vào đó, tình hình đã trở nên tệ hơn với nhiều người vì giá nông sản vẫn giảm.

Bất chấp một cơn bão đã quét qua các trang trại ở miền Trung Tây vào tuần trước và thời tiết hạn hán cục bộ vài nơi, cả ngô và đậu tương được dự báo vẫn có một vụ mùa bội thu năm nay. Và vấn đề là ngô cũng đang thừa.

Ông Sombke cho biết các vựa ngũ cốc địa phương đang trả 2,87 USD cho một giạ ngô, thấp hơn gần một USD để có thể hòa vốn. Điều tương tự cũng diễn ra với giá đậu tương, với khoảng 8,5 USD mỗi giạ (mỗi giạ khoảng 35 lít).

Giá ngô và đậu tương không tăng kể từ đầu năm. Hồi tháng 1, việc ký kết hiệp định thương mại giai đoạn một Mỹ - Trung Quốc quy định Trung Quốc sẽ mua 36,5 tỷ USD hàng hóa nông nghiệp từ Mỹ. Điều này khiến nông dân hy vọng nhu cầu xuất khẩu từ Trung Quốc sẽ giúp nâng giá hai mặt hàng này. Made with pasteurized goat’s milk, Pasco’s Ration is an earthy tomme-style wheel. The wheels are infused with rye whiskey and rubbed with sage and sea salt. Reminiscent of British-style cheeses, its texture is crumbly and flaky.  Pasco’s Ration is lemony, lactic and fresh with a meaty backbone.

One of the rare 100% pasteurized cow’s milk cheeses from this maker, Cheesemaker’s Folly is treated to repeated washings of Irish whiskey and stout. Beneath the copper rind, you’ll find a smooth paste with upfront flavors of buttermilk settling into malty-sweet finish.

 A1850 Peppered Ewe – 6 / 10 oz. $15.74/lb

This mixed-milk cheese begins with 50% pasteurized sheep’s milk and 50% pasteurized cow’s milk. Cracked Tellicherry Pepper is added to the mix, contributing a robust, fruity quality. The rounds are then washed in Adirondack Brewery’s Fat Scotsman Ale, a rich, caramelized Scotch-style brew.

 Located in the Adirondack Mountains in upstate New York, Nettle Meadow Farm serves as both an animal sanctuary and artisan cheese company. Últimamente, es muy difícil encontrar una historia que pueda satisfacer la necesidad de entretener a la audiencia y al mismo tiempo que sea lo suficientemente fiel a la realidad como para que las lecciones y/o mensajes morales trasciendan de la mejor manera posible. Estamos ante una de las pocas que logra eso.

En una época de superstición y magia, Robyn y su padre, un aclamado cazador inglés, viajan a Irlanda para erradicar a los lobos de la zona, consideraros criaturas del demonio que deben ser eliminadas. Pero las cosas cambian cuando Robyn conoce a Mebh una niña misteriosa que vive en el bosque junto a su manada de lobos, conocidos como los WolfWalkers.

Aventura, acción, magia y amistad en un guion bien estructurado y sin cabos sueltos debido a la atención a los detalles. Los elementos de fantasía y realidad se fusionan muy bien, le aportan una personalidad única a su universo. Gran parte del conflicto se fundamenta en la relación de los personajes, estos están muy bien escritos. Tenemos protagonistas fuertes, dispuestas a alcanzar sus objetivos, pero también vemos crecer a través de sus fracasos. Los antagonistas pueden parecer planos, pero le son fieles a su tiempo.

He notado que en las películas de época hay un esfuerzo meticuloso por demostrar que la historia se desarrolla en otro tiempo (aunque muchas veces el resultado sea anacrónico). Sin embargo, aquí se retrata muy bien las consecuencias ideológicas de la era en las personas.

Cartoon Saloon ha demostrado su firme apuesta por la animación tradicional anteriormente y esta oportunidad permite apreciar todas las posibilidades que puede ofrecer. El estilo de arte es bastante rico, en lo personal me encantaron los trazos detallados, sobre todo en los paisajes porque parecen ilustraciones que se podrían encontrar en los libros de cuentos clásicos. Aunque, en ocasiones no se entiende o se justifica del todo el uso de la perspectiva bidimensional, ya que no es tan consistente durante toda la película.

La integridad de Wolfwalkers (2020) le entrega lo mejor a la audiencia. Todos sus elementos fueron cuidadosamente forjados para crear una historia que no solo nos advierte sobre lo vulnerables que somos ante los prejuicios y la ignorancia, sino que también es un rayo de esperanza para la animación.
