My sister is in Sri Lanka at the moment enjoying lots of lovely curries so she’s inspired me to make this Fish curry with pollock, salmon and clams. Always a winner here because the clams are great fun and then the shells get used to pick out the rest of the fish. I made some turmeric and coriander cauliflower rice and pan fried okra with chillies which are just so delicious!
