Quick and Easy Beef Stew Recipes for Winter

For this recipe, you will need:
2 tablespoons of vegetable oil
1 kg of beef steak, cut into cubes
2 teaspoons of salt
1 teaspoon of black pepper
6 potatoes, peeled and cut into quarters
6 carrots, cut into chunks
2 onions, cut into wedges
1¾ cups of beef broth
1½ cups of water
¼ cup of all-purpose flour
½ teaspoon of browning and seasoning sauce
And here's what you do:
In your pressure cooker, heat the vegetable oil on a high heat.
Then add the beef, salt and pepper, and brown for 10 minutes with the lid off.
Remove the pressure cooker from the heat and add the potatoes, carrots, onions, beef broth, and 1 cup of water.
Lock the pressure cooker lid in place and bring to full pressure over a high heat.
When the pressure regulator begins to rock, reduce the heat to medium and cook for 8 minutes.
Remove the pressure cooker from the heat and allow the pressure to drop slowly until there is no longer steam escaping from the vent.
In a small bowl, mix the remaining water, flour, and browning and seasoning sauce.
Then remove the lid from the pressure cooker and stir the mixture into the stew. Cook for another 8 to 10 minutes, uncovered, over a medium heat. Serve and enjoy!
Hearty beef stew
If you don't own a pressure cooker and have more than 30 minutes to spare, this beef stew recipe is equally delicious and not too complicated to make either. This recipe takes about 1 hour and 30 minutes to make and serves up to four people.
For this recipe, you will need:
1 kg of beef steak, cut into cubes
2 tablespoons of all-purpose flour
2 tablespoons of vegetable oil
2 medium onions, chopped
2 garlic cloves, finely chopped
1 tub or sachet of beef stock
2 cups of water
2 teaspoons of Worcestershire sauce
4 cups of baby potatoes, halved
3 carrots, sliced
And here's what you do:
In a dish, mix the beef cubes with the flour.
Heat up the vegetable oil in a pot over medium heat, and brown the beef. Remove and set aside.
Then, place the onions and garlic into the same pot and stir for about 4 minutes. Mix in the beef stock, water, Worcestershire sauce and beef cubes.
Bring the mix to a boil on high heat and stir until the beef stock has melted. Then, reduce the heat and cover the pot.
Simmer for about 40 minutes while stirring occasionally until the beef is tender.
Then, add the potatoes and carrots and simmer for another 40 minutes until everything is perfectly tender and ready to eat.

Sweet Potato Rice
Ingredients
3 cups rice (cooked)
10 pods finely chopped garlic
½ cup spring onion
1 tbsp ginger juice
½ tsp chili powder
2 sweet potatoes
3 tsp olive oil
Salt to taste
Method:
Heat 3tbsp olive oil in a pan.
Now add finely chopped garlic and fry till it slightly turns brown in color.
Add 2 sweet potatoes and salt and, fry till it is half cooked.
Add chili powder and ginger juice and cook it fully.
Now add ½ cup spring onion and mix well.
Add cooked rice and mix well.
Switch it off assemble it in a plate and serve hot.
Paneer Methi Satay
Ingredients:
For the Marinade:
1 cup low fat yoghurt
1 tbsp Bengal gram flour
1 tsp ginger garlic paste
1 tsp chili powder
1 tsp cumin powder
1 tsp garam masala powder
½ tsp black pepper powder
2 tbsp coriander and green chili paste
1 tsp kasoori methi
Salt to taste
For the Satay:
1 cup low fat paneer, cut into cubes
½ cup bell peppers, cubed
½ cup onions, cubed
1 tsp olive oil
Method:
Mix all the ingredients of the marinade in a bowl.
Combine the paneer, bell pepper cubes, onion cubes and mix into the marinade.
Be careful while tossing it and do not mix vigorously otherwise the paneer cubes will break.
Set aside for 25-30minutes.
Now start skewering. Place a piece of Bell pepper, onion, 2 paneer cubes and again bell pepper cube on a satay stick.
Repeat the same process and make the rest of the satays.
On a medium flame, place a non-stick pan, grease it with ½ tsp oil and place half of the satay sticks on it till the paneer and veggies turn slightly brown in color.
Repeat the same step for the rest of the satays.
Serve fresh with some mint coriander chutney.
Vermicelli Upma
Ingredients
2 cups of thin vermicelli
2 Tbsp of refined oil
1 tsp of mustard seeds
1 tsp of cumin seeds
1 Tbsp of urad dal
2 green chilies split lengthwise
9-10 curry leaves
1 onion, finely sliced
½ cup of beans, chopped
½ cup of carrots, chopped
½ cup of fresh peas
½ cup of tomato puree
½ tsp of turmeric powder
Salt to taste
2 tbsp of roasted peanuts
Method:
Add turmeric powder and salt and saute for 1-2 minutes.
Then add the vegetables and stir well. Allow them to cook for 3-4 minutes.
Add the tomato puree and 2 ½ cups of water, and bring to a rolling boil.
Add the vermicelli and mix well.
Cover the pan with a lid and let it cook for 5-6 minutes or until the vermicelli is cooked and the water is dried up.
Check seasoning.
Transfer to a serving bowl and finish with roasted peanuts on top and a fresh green chili. Serve immediately.
Mixed Sprouts Corn Chaat
Ingredients:
15g mixed sprouts, boiled
15g corn, boiled
1 tomato, finely chopped
1 onion, finely chopped
1 tbsp coriander chutney
½ tsp cumin powder
½ tsp red chili powder or paprika
Salt to taste
A handful pomegranate seeds, to garnish
A handful freshly chopped coriander leaves, to garnish
Method:
Soak the sprouts overnight and next morning pressure cook it for around 10-15 minutes. Strain well.
Now in as bowl, combine all the ingredients together and serve. Simple to prepare, easy to consume.

¾ pound gemelli, fusilli, or other short pasta
2 tbsp unsalted butter
2 leeks (white and light green parts only), halved lengthwise then crosswise
kosher salt and black pepper
1 pound peeled and deveined medium shrimp (raw)
1 lemon finely grated zest
¾ cup heavy cream
12 cups baby spinach
Method:
Cook the pasta according to the package directions; drain and return it to the pot.
Meanwhile, heat the butter in a large skillet over medium heat.
Add the leeks, ½ tsp salt, and ¼ tsp pepper and cook, stirring occasionally, until the leeks have softened, 3 to 5 minutes.
Add the shrimp and lemon zest and cook, tossing frequently, until the shrimp is opaque throughout, 4 to 5 minutes more.
Add the cream and ½ tsp salt to the pasta in the pot and cook over medium heat, stirring, until slightly thickened, 1 to 2 minutes.
Add the shrimp mixture and the spinach and toss to combine.
Shrimp With Tomatoes and Olives
Ingredients:
1⅓ ups box couscous
1 tbsp olive oil
1 small onion, chopped
1 28-ounce can diced tomatoes, drained
¾ cup pitted green olives
½ cup dry white wine
kosher salt and pepper
1 pound medium shrimp, peeled and deveined
Method:
Cook the couscous according to the package directions.
Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, for 4 minutes.
Add the tomatoes, olives, wine, ½ tsp salt, and ¼ tsp pepper. Simmer, stirring occasionally, until slightly thickened, 4 to 6 minutes.
Add the shrimp and cover. Cook until the shrimp are cooked through, 3 to 5 minutes. Serve with the couscous.
Salmon With Creamy Cucumber-Fennel Salad
Ingredients:
6-ounce pieces skinless salmon fillet
1 tbsp olive oil
¼ tsp cayenne pepper
kosher salt and black pepper
1 lemon, thinly sliced
½ cup plain low-fat Greek yogurt
1 tbsp cider vinegar
1 fennel bulb, cored and thinly sliced, plus 2 tbsp chopped fennel fronds
½ English cucumber, thinly sliced
rye bread, for serving
Method:
Heat oven to 400° F. Rub the salmon with the oil and place on a rimmed baking sheet.
Season with the cayenne and ¼ tsp each salt and black pepper. Top with the lemon slices and bake until opaque throughout, 8 to 12 minutes.
Meanwhile, whisk together the yogurt, vinegar, and ¼ tsp each salt and black pepper in a large bowl.
Add the fennel, fennel fronds, and cucumber and toss to coat.
Serve the salmon with the cucumber-fennel salad and bread.
Chicken Curry in a Hurry
Ingredients:
1cup white rice
1 ½ tbsp olive oil
1 small yellow onion, thinly sliced
2 tsp curry powder
½ cup plain yogurt
¾ cup heavy cream
½ tsp kosher salt
¼ tsp black pepper
1 14.5-ounce can diced tomatoes, drained (optional)
meat from 1 rotisserie chicken, sliced or shredded
¼ cup fresh cilantro leaves, roughly chopped
Method:
Cook the rice according to the package directions.
Heat the oil in a skillet over medium-low heat.
Add the onion and cook, stirring occasionally, for 7 minutes.
Sprinkle with the curry powder and cook, stirring, for 1 minute.
Add the yogurt and cream and simmer gently for 3 minutes. Stir in the salt, pepper, and tomatoes. Remove from heat.
Divide the rice and chicken among individual bowls, spoon the sauce over the top, and sprinkle with the cilantro.

Seared Salmon with Braised Broccoli
Ingredients:
1 ¼ pounds wild Alaskan salmon fillet, skinned cut into 4 portions
1 tbsp chopped fresh rosemary or 1 teaspoon dried, divided
1 tsp salt, divided
2 heads broccoli (1-1 ½ pounds), trimmed
1 ½ tbsp extra-virgin olive oil, divided
1 small onion, diced
3 tbsp raisins
2 tbsp pine nuts
½ cup water
Method:
Season salmon with half the rosemary and ½ tsp salt at least 20 minutes and up to 1 hour before cooking. Cut the broccoli into florets with 2-inch-long stalks. Remove the tough outer layer of the stalk with a vegetable peeler. Cut the florets in half lengthwise. Heat 1 tbsp oil in a large wide saucepan over medium heat. Add onion and cook, stirring occasionally, until translucent, 3 to 4 minutes. Add raisins, pine nuts and the remaining rosemary; toss to coat with oil. Cook, stirring, until the pine nuts are fragrant and beginning to brown, 3 to 5 minutes. Add the broccoli, season with the remaining ½ tsp salt and toss to combine. Add water and bring to a boil. Reduce heat to maintain a gentle simmer and cook, stirring occasionally, until the water has almost evaporated, 8 to 10 minutes. Meanwhile, heat the remaining ½ tsp oil in a large nonstick skillet over medium-high heat. Add salmon, skinned-side up, and cook until golden brown, 3 to 5 minutes. Turn the salmon over, remove the pan from the heat and let stand until just cooked through, 3 to 5 minutes more. To serve, divide the broccoli among 4 plates. Top with salmon and spoon raisins, pine nuts and any liquid remaining in the pan over the salmon. Quick Chicken Tikka Masala
Ingredients:
4 tsp garam masala
½ tsp salt
¼ tsp turmeric
½ cup all-purpose flour
1 pound chicken tenders
4 tsp canola oil, divided
6 cloves garlic, minced
1 large sweet onion, diced
4 tsp minced fresh ginger
1 28-ounce can plum tomatoes, undrained
1/3 cup whipping cream
½ cup chopped fresh cilantro for garnish
1 pound chicken tenders

Method:
Stir together garam masala, salt and turmeric in a small dish. Place flour in a shallow dish. Sprinkle chicken with ½ tsp of the spice mixture and dredge in the flour. (Reserve the remaining spice mix and 1 tbsp of the remaining flour.) Heat 2 tsp oil in a large skillet over medium-high heat. Cook the chicken until browned, 1 to 2 minutes per side. Transfer to a plate. Heat the remaining 2 tsp oil in the pan over medium-low heat. Add garlic, onion and ginger and cook, stirring often, until starting to brown, 5 to 7 minutes. Add the reserved spice mix and cook, stirring, until fragrant, 30 seconds to 1 minute. Sprinkle with the reserved 1 tbsp flour and stir until coated. Add tomatoes and their juice. Bring to a simmer, stirring and breaking up the tomatoes with a wooden spoon. Cook, stirring often, until thickened and the onion is tender, 3 to 5 minutes. Stir in cream. Add the chicken and any accumulated juices to the pan. Bring to a simmer and cook over medium-low heat until the chicken is cooked through, 3 to 4 minutes. Garnish with cilantro.
