Chef/ Rooftop Gardener| Westin Hotel Grand Central 

AptM: Tell our readers where we are and what you do here

Chef: This is the 41st floor rooftop of the Grand Central Hotel where I grown and tend to eleven planted beds and four whiskey barrels planted in succession throughout the summer, to prolong the vegetable harvest throughout the fall.  What we grow is used at our restaurant The LCL: Bar & Kitchen. 

AptM: How long has this project been going on and what can we expect  next?

Chef:  This started 3 years ago on Earth day.  The Westin New York Grand Central is committed to conversation and plans to reduce energy and water by 30% by 2020

AptM:  What's the most rewarding thing about urban farming? 

Chef:  As a chef, it's exciting to offer ingredients grown less than 400 feet away that may have been harvested by our culinary team just hours before they are plated and served. That’s a true definition of local cuisine.

AptM: Biggest gardening blunder?

Chef: I've tried to grow watermelon and squash but there just wasn't enough room. 

"Marigolds are a natural insect repellent" "Plants are watered 7am and 7pm. Don't water during the hottest part of the day because it can burn the leaves."
