Mom usually does the apple pies at Thanksgiving, but this year, I volunteered and I'm so proud of how it turned out! This recipe comes courtesy of the man, the myth, the legend himself, Chef John from FoodWishes,com. I've only made apple pie a few times--like I said, Mom usually does it--but Chef John's, by far, is one of the most delicious I've ever had. I first made it for Yule last year and it was so yummy I had to make it again this holiday season. Enjoy! Chef John's Apple Pie 6-8 apples, depending on their size (2 Fuji, 2 Braeburn or Pink Lady, 2 Granny Smith) The juice of half a lemon 1 cup white sugar, plus more for sprinkling A very tiny pinch of salt 1/8 t. nutmeg 1/2 t, cinnamon 3 T. cornstarch 2 T. butter, cut into pieces 1 egg, beaten Pie crust Preheat the oven to 375 degrees F. Line a baking sheet with foil and set aside. Grease a 9-inch pie dish and set aside. Peel and slice the apples. Place them in a bowl and toss with the lemon juice. Add the sugar, salt, nutmeg, and cinnamon and mix well. When the sugar's dissolved and the apples look wet, mix in the cornstarch. Set aside, Line your pie dish with the bottom crust. Pour in the filling, packing it in well. Pour over any remaining juices from the bowl and dot the filling with butter. Place on the top crust, tucking its edges down into the bottom crust. To seal, roll the bottom crust's edges over the top crust and press. Cut vents in the center of the pie. Place the pie on your prepared baking sheet. Brush with beaten egg and sprinkle nicely with sugar. Bake for one hour, checking at the 55 minute mark, until the crust is golden brown and juices are bubbling. I have a new rule for my family: absolutely NO fast food. I am human tho, and every once and a while, a good old chicken nugget sounds amazing. But, my other rule is: if your food is all the same color, it better be worth it. And boyyyy it was. Tonight my husband spoiled me and made @foodwishes Buffalo Chicken Nuggets and I manned the fried by making @mrsvitale Oven Baked Fries. Such an awesome dinner. The pumpkin pie I made for Thanksgiving! This recipe comes courtesy of the man, the myth, the legend himself, Chef John from FoodWishes,com. This year will be my first time trying his pumpkin pie, but knowing Chef John, it'll be amazing. Chef John’s Pumpkin Pie 1 9-inch unbaked pie crust 1 15 oz. can pumpkin puree 1 whole egg 3 egg yolks 1 14 oz. can sweetened condensed milk 1/8 t. Chinese five-spice powder 1/4 t. freshly-grated nutmeg 1/2 t. salt 1/2 t. ginger 1 t. cinnamon Preheat the oven to 425 degrees F. Grease a pie dish. Roll out your crust and line the dish with it, cutting off the excess dough and crimping the edges. Set aside. In a bowl, whisk together the pumpkin, egg, and egg yolks until smooth. Add the sweetened condensed milk, Chinese five-spice powder, nutmeg, salt, ginger, and cinnamon. Whisk until thoroughly combined. Pour filling into prepared crust. Lightly tap on the counter to release air bubbles. Bake for 15 minutes. Reduce the heat to 350 degrees F. Bake until just set, 30-40 minutes more. Thumbprint cookies, another recipe I found thanks to Food Wishes. Simple shortbread cookies filled with jam and dusted with powdered sugar--what's not to love? The ones on the larger plate I filled with lingonberry preserves (yes, the ones you can buy at IKEA), and the smaller plate has strawberry-jam-filled cookies. Thumbprint Cookies 1 stick (1/2 cup) butter, softened 1/3 cup powdered sugar 1/4 t. salt 1/4 t. almond extract 1 t. vanilla extract 1 large egg yolk 1 1/4 cups flour 1/2 cup fruit jam of your choice Preheat the oven to 325°F. In a bowl, cream the butter and powdered sugar together with a spatula. Add the salt, extracts, and egg yolk and mix well. Add in the flour and mix until it disappears and a dough forms. Portion out the dough using a Tablespoon or sorbet scoop. Roll each piece in a plate of white sugar and shape it into a ball. Place the cookies on a greased cookie sheet. Gently flatten out the balls with your fingers, then press your thumb into the center of each cookie, creating an indent, but don’t press down all the way. Spoon the jam of your choosing into the indents of the cookies. Tap the tray on the counter a few times to make sure everything’s setteled. Bake the cookies for 15 minutes, until they’re just barely blond. The Quiche Lorraine I made for Easter brunch at Mom’s house. I used Chef John’s recipe and this will definitely be a keeper, but I think from now on, I’ll use a sharp white cheddar instead of Gruyère. The Gruyère along with everything else made it a bit rich for my taste, but the overall flavors and textures of the filling and buttery crust were incredible. The appetizer I brought to Christmas Day dinner: Baked stuffed brie. This recipe is one that could be easy to play with; you could make a sweet filling with nuts and dried fruit or a savory one with meat and veggies. But for tonight, I went with cranberries and walnuts and it was AMAZING. And as if stuffing the brie wasn't enough, but then, it's baked in puff pastry. Needless to say, this didn't last long on the table. Thanks to Chef John of FoodWishes.com for the recipe! Baked Stuffed Brie 1 small (8-9 inches) wheel of brie Kitchen string 1/3 cup chopped dried cranberries 1/3 cup chopped walnuts Enough puff pastry to cover, plus more for decoration An egg wash (1 egg beaten with 1 t. water or milk) Using a knife, make a shallow cut around the wheel of brie, scoring the edges. Fit a piece of kitchen string into the groove, twist the ends a few times, then pull them in opposite directions so the string moves through the cheese, slicing it in half. On one half of the brie, place the dried cranberries. On the other, place the nuts. Flip the cranberry side on top, sandwiching the filling inside, and push back in any berries that fell out. Roll out your puff pastry and place the cheese in the middle. Brush the edges of the dough with egg wash. Wrap the pastry around it, pinching off any excess dough. Brush the wrapped brie all over with egg wash. Freeze the brie for 1 hour—don’t skip this step! Preheat the oven to 425°F. Line a baking sheet with parchment paper and place the brie on it. Bake for 20 minutes, or until the pastry is golden brown and some of the brie has leaked out. Transfer immediately to a serving platter. Just out of the oven: Corn pudding! This will be my side dish contribution to the table. Thanks to Chef John @foodwishes for the recipe. Happy Thanksgiving, everyone! Corn Pudding 2 lb. frozen yellow corn, thawed and drained 3 T. maple syrup 6 eggs 1/2 cup milk 3 t. kosher salt (1 1/2 t. fine salt) 1/4 t. cayenne 1/4 cup flour 1 t. baking powder 1 stick melted butter 1 1/2 cup heavy cream Preheat the oven to 350°F. Grease a 9X13 baking dish with 1/3 cup of the melted butter. Place the corn, maple syrup, eggs, milk, salt, cayenne, flour, and baking powder in a blender. Mix with a spatula to incorporate the flour and baking powder, then blend until smooth. Pour the mixture into a bowl. Add the remaining melted butter and the cream to the blended corn mixture. Stir gently by hand to combine. Pour the mixture into the prepared pan. Place the pan on a cookie sheet. Bake for about 1 hour or until an inserted fork comes out relatively clean. The pudding should have a bit of a wiggle to it when done, but not look as if raw liquid is still beneath the surface. My first attempt making chokladbollar--Swedish chocolate balls. Made with butter, sugar, oats, cocoa powder, a splash of coffee, and a few other cupboard staples, these no-bake treats are rolled in coconut and chilled in the fridge. They can be eaten either as a quick, somewhat-healthy breakfast or for an in-between-meals snack. It's said that, in Sweden, these are some of the first sweets children learn to make. Well, given that I'm currently 31, that manes I have a lot of catching up to do! Thanks to Chef John of Food Wishes for the recipe! Swedish Chocolate Balls (Chokladbollar) 1 1/2 cups rolled oats 1/2 cup white sugar 3-4 T. cocoa powder (I used 4 because I'm a chocolate addict) A pinch of salt A pinch of cayenne 1 stick (1/2 cup) unsalted butter, softened* 1 t. vanilla 2 T. brewed coffee Finely-shredded, unsweetened coconut *You can also make these vegan by substituting the butter for 1/2 cup room temperature coconut oil Toast the oats in a pan over medium heat. They shouldn’t change color, but you’ll know they’re done when they’re hot to the touch and smell like freshly-popped popcorn. Let cool. In a bowl, combine the sugar, cocoa powder, salt, cayenne, butter, vanilla, coffee, and oats. Portion out the mixture into balls (size is up to you) and roll them in the coconut. Store them in the fridge, letting them chill at least 15-20 minutes before eating.
