These are some leftovers from meals earlier in the week: Wild Rice Quinoa and Red Lentil Mixture Black Beans/Kidney Beans ⢠I always cook extra and leave it plain to continue to use for more meals. Itâs meal prepping without commitment. ⢠Yesterday, I decided to try an make some Leftovers Spring Rolls. ⢠I took a half cup of each plus a half cup of frozen peas. Then added in all the all the spices pictured and microwaved for 1 minute. ⢠I used the same Rice Paper I used for Fake Bacon (See Iron Throne Salad post) and rolled up for Spring Rolls. Now....this is not 100% cleanse perfect because I heated 2 TBS of coconut oil to crisp up the Spring Rolls. I cooked them very lightly and kept the heat low but 3 out of 4 fell apart. Probably due to overstuffing! In hindsight, I shouldnât have cooked them at all. One reason why meal prepping is so important is for times when youâre prone to making bad decisions. Like when youâre exhausted or feeling uncreative. đĽ Yesterday, I spent many hours in front of the computer working on lessons for school. My brain was pooped. Then I went to a #zumbaclass which wore me out physically. By the time I got home, I didnât want to cook. I didnât want to be creative. I didnât want to move or do anything. At first I told myself I wasnât really THAT hungry. Maybe the green food I had after the Shamrock themed class was enough??? (Also, pictured on a green plate. Thatâs a snack, not dinner!) I forced myself to open the fridge and eat something that wouldnât leave me starving come morning. đ˝ Thatâs when I remembered I had made #tricolorquinoa in bulk the night before. I also had leftover #rainbowcarrots and extra #navybeans in the fridge. I poured it on top of a salad mix and tossed some seeds on there too. It literally took me all of two minutes and it was delicious, filling and ridiculously easy. đ This isnât meal prep in the traditional sense. I didnât plan out and cook 3-6 days worth of food on Sunday just to be sick of it after a few days. Bulk prepping whether itâs pre-chopping veggies or cooking grains/protein in bulk will still set you up for success. Just keep it on the bland side and add your own spices the day of to switch up the flavor profile easily.
