The building that houses the St. Augustine Distillery has a story that goes back over 100 years. It used to be Florida’s first commercial ice plant, and today, it’s where the state’s first bourbon was crafted. Walking through the distillery is like taking a step back in time, but with all the modern amenities you’d expect from a top-notch craft distillery.

Will Kinsler, who knows this place inside and out, gave us a tour and shared some fascinating history. The restoration of the building took two years, but it was totally worth it. They kept so much of the original charm intact, and it really adds to the experience. Plus, the museum part of the distillery is packed with cool info about the old ice plant and the history of St. Augustine during Prohibition.

One of the best parts of the tour is getting to see how the spirits are made. In the VIP tasting room, you can take part in guided experiences that really dive into the craft of distillation. The “Perfect Pair” tasting experience is a must-try. It pairs three premium bourbons with locally made chocolates, and let me tell you, it’s a game changer. Will walks you through how to taste the spirits properly and how to really appreciate the pairing. It’s a sensory experience like no other.
