G O O U T D O O R S 🌱 Recently I’ve discovered the joy in Saturday mornings ... this morning I’ve woken up the sound of the birds and snow falling outside • I’ve also got breakfast in bed after being a little bit (read: very) cheeky • Today is my Birthday weekend part three as Mr D and are heading into Leeds for food, comedy and cocktails • But first I gotta go to work (work, work, work, work) - I’m looking forward to maybe squeezing a little time in out in the great outdoors tomorrow • Hangover and weather dependent • I’ve been missing our little rambles in the open spaces in and around West Yorkshire these past few weeks and that needs to change! . Ever since watching Masterchef Italia last week where they went fishing in Lofoten and made traditional Norwegian food, I have been craving fish soup & flatbrød (flatbread). In Italy there is so much delicious food, but sometimes I just want something comforting and familiar, so yesterday that is what I made. ⠀⠀⠀ Both the fish soup and the flatbrød was delicious, but as it was my first time making both I can see areas of improvement. To make the flatbrød properly I would need to have a flat griddle which I do not have, but the outcome was still tasty when cooking it in the pan. I should however have rolled it out much thinner to recreate the traditional flatbrød. ⠀⠀⠀ Food is a great way of creating a Scandinavian feeling, something I personally appreciate when I miss home. I have been thinking for a while to start sharing typical Scandinavian recipes on the blog as a way to reconnect more with home as well as improving my cooking. Is that something you would like? R E L A X 🛏 Relaxation comes in many different shapes and sizes ... for some of us it means becoming a true sofa bear, for some of us it means grabbing our mats for yoga or meditation and for others it can mean getting away from it all • Today I feel like I need to do all of these, my body and brain feel burnt out and I need a break - only one more day and then there’s a 3 day weekend ahead of me to do all the relaxing I need • In other news I can’t believe how much better I feel for making a few tiny tweaks to my diet - here’s hoping it does everything I want it to! .
