What do you think? My personal thumbprints cookies are different from the classic thumbprint cookies, but they still beautiful and delicious! The name comes from the way the cookies are prepared: you roll them into a ball, flatten them a bit, then press your thumb on the center to make a little hole that is then filled with strawberry, raspberry or apricot jam, lemon curd, caramel, or chocolate. I’ve always thought that they were American treats, but they are actually originated in Sweden. The classic thumbprint cookies are made with a simple sugar cookie dough, mine are made with my Pasta frolla. These cookies are easy to make and the taste is incredible! They have soft, sweet interior, and strawberries jam filled center. Simple to make, no special tools are needed, once the dough is made, there are two ways to make the individual balls, you can use a spoon to portion them or you can stretch the dough and then cut the pieces: in both cases you need to roll out the dough between two hands to make the perfect ball, then with your tumb or a round spoon you’ll make the hole for the filling. Mom’s Ripieni ai fichi! My mom made a large batch of Pasta frolla dough and fig filling every year, because we had so many figs from our garden, where there was a very big tree. I have learned her recipe. Two days ago I was missing sweet and great memories with my mom! I found some dried figs in my pantry and started to make these deliciously moist, tender and sweet Mom’s Ripieni ai fichi. They came out great. The unique and richly filling is wrapped inside a Pasta frolla dough that’s a dream to work with. The "Pasta frolla" is soft but at the same time crunchy on the surface and inside it a filling with a special taste, which only the figs can give. I just made a sort of jam, cooked in a few minutes to make it thicken! Prepare these fig biscuits yourself and enjoy them fresh from the oven, for a great snack! Absolutely delicious!
