Make sure you get a good brand of full fat whole milk ricotta. If this isn't absolutely wonderful, try again with a better brand of ricotta.
You can mix this in a bowl by hand and it will work, but I that case, I recommend superfine sugar.
If you have a blender, for smoother mouthfeel, pulverize the sugar to fine powder first, and pour most of the sugar out into a bowl. Then add the other ingredients to the blender and blend briefly and gently. Add the sugar back in a little at a time until it tastes right to you.

Also, I did a batch with monkfruit extract instead of sugar, and it worked just fine.

for days when the nearest cannoli seems 3000 miles away and it is too hot to cook.
Ricotta & mascarpone in about equal parts, then sugar, cocoa, & vanilla extract to taste. Mix, put in ice cream cone. Eat.
