　 6つの異なる品種を、数々の受賞歴を持つEl Socorro農園からお届けする今回のシリーズ。 第一弾はこの2品種です。それぞれとても珍しい種類なので このチャンスをお見逃しなく。品種由来の初めて感じる味わいから新たな好みを発見してしまうかも！

 　El Socorro農園は Guatemala cityから50kmほどのPalenciaに位置します。JuanとJuan Diego de la Cedraの親子生産者コンビは、過去12年間のうちカップオブエクセレンスで11回も入賞しています。（しかもそのうち2007年、2011年、2020年は1位を獲得）ここではなぜ彼らが素晴らしいコーヒーを生産し続けることができるか、彼らの細部にわたる気配りをいくつかご紹介します。

　まずはじめに、彼らは700haもの農地を持ちながら、そのうち85haのみをコーヒー生産に使用しています。残りの農地は酪農と、野生の固有植物や渡り鳥を守ることを目的とし、自然とのバランスをとっています。生物の多様性を保持することは、コーヒーが自然の木にカバーされ、影の下でゆっくりと熟し、風味を際立たせることにつながります。

　そして２番目に、この農園はとても高い標高に位置しているので、素晴らしいコーヒーの品質とテイストを生み出すことができます。

　最後に、栽培から精製まで全てこの農園内で完結しているということが挙げられます。農園がかなりの高地に位置するため、昼間にはかなり暑くなることもあるのですが 対照的に農園のWet Millで使われる小川の水はとても冷たく、収穫したての熱いコーヒーの実をこの冷たい水に浸けて急冷してしまうとコーヒーの実にダメージを与えてしまったり、発酵に長く時間がかかってしまったりします。それを防ぐために親子はコーヒーの実の内部と同じくらいに温めた水で水洗し、コーヒーの実を徐々冷ましていくことで、発酵にかかる時間を24-48時間に収めています。その結果、印象的で衝撃的なまでのフルーツ感とフローラル感を生み出すことができるのです。

Mi nombre es Jonathan y estoy en Colombia por cuatro meses para estudiar español. He estado aquí por poco más de un mes. Hasta ahora, he experimentado Colombia como un país hermoso con gente maravillosa. Pero Colombia es mucho más de lo que esperaba y la vida aquí es muy diferente a muchos otros lugares, especialmente en mi hogar Australia.

Colombia es un lugar de contrastes y diferencias. Colombia tiene junglas y desiertos, montañas y playas, grandes ciudades y pueblos pequeños, gente rica y pobre, y sitios modernos y antiguos.

Pero también es un lugar de lo inesperado. Todos los días me sorprenden las cosas y situaciones nuevas.

He disfrutado de la naturaleza y las vistas, pero también he disfrutado mucho conocer gente colombiana. Los colombianos son generosos y esperanzados. Las cosas pueden ser difíciles aquí, pero hay mucha positividad, esperanza y diversión. Creo que Colombia tiene un futuro brillante: es un lugar con mucha cultura, hermosos paisajes, recursos naturales y gente increíble.

Olympia Coffee Roasting Co Guatemala El Socorro Maracaturra is a remarkable coffee on several levels. The Maracaturra beans are ginormous and quality-wise in wine terms the equivalent of Grand Cru. The roast is extremely light. The result is a coffee that is sweet, buttery/creamy and intensely nutty. I think the best way to describe the flavor profile is to say that it tastes like Pecan Pralines that are so common here in TX. While the roast is super light, there is plenty of tension and flavor in this coffee. 現在世界各地多くの農園で作られているパカマラ種という品種はマラゴジッペ種とパーカス種の交配種です。大成功をしていますね。このマラカトゥーラは名前の通りマラゴジッペとカトゥーラの交配です。まだかなりレアな新種で、やはりマラゴジッペのDNAを受け継いでいてかなりの大粒です。カトゥーラのフレッシュさ、爽やかさも併せ持っていましてシトラス系のフレーバーが上品です。

Mi vida socorrana

Estoy en Colombia hace un mes, y creo que, ante todo, mi cosa favorita es la gente. Cuando de llegué, no sabía qué esperar. Oíste que el café es bueno, que la naturaleza es bonita, y las personas son cálidas y esto es algo que tu podrás experimentar solo por ti mismo.

Me gusta practicar español con los locales de Socorro porque ellos son hablantes nativos de español. La gente es muy entusiasta y curiosa por aprender mas sobre mi y los otros estudiantes, abriendo sus casas y corazones a nuevas ideas y nuevas personas.

La gente es siempre quieren ayudarse. Por ejemplo, cuando estoy en un problema porque yo necesito tomar un autobús de pueblo a pueblo a la noche, el conductor me ayudó con la ubicación y parar, las mujeres esperaron conmigo por mi seguridad.

Estoy emocionada por el resto de mi tiempo en Colombia, conocer nuevas personas y aprender más sobre este país increíble y el idioma español. Un grande gracias a las personas quienes hacen una experiencia muy especial hasta ahora. Ustedes me ayudan a sentir en casa cuando estoy muy lejos de mi hogar.

Conocí un excelente familia el fin de semana pesado. Ellos hiceron comida china y me hacen sentir en casa.

Una beneficiaria pasada nos presentó a sus amigos en Socorro. 

Aquí nos invitó en el escenario mirar el rendimineto del pueblo. 

Los niños de clase de ingles. Yo disfruté conocerlos y sus familias.

Chromatic Guatemala El Socorro. I find this to have chocolate and nut flavors with a caramel finish. A bit lower on acid than I typically like and roasted a tad more than the Verve Guatemala of recent days.
