El Bonito: Cilantro + Jalapeno Cocktail

This spicy herbal elixir goes down well any time of year but it's especially refreshing ice cold on a hot summer day.

for 2 cocktails

about 10 cilantro leaves

5 oz vodka

2 1/2 oz jalapeno syrup (see below)

2 1/2 oz fresh sour mix (half lemon juice, half lime juice, but FRESH!)

rub a lime wedge around the rim of two martini glasses, dip them into sugar (the sugar rim is necessary for this recipe), and set glasses aside.

In a cocktail shaker, muddle the cilantro leaves well (a little bit of crushed ice helps to muddle).  Fill shaker with ice cubes before adding the rest of the ingredients.

Shake well and strain into sugar rimmed martini glasses.

Jalapeno Syrup

1 cup water

1/2 cup sugar

5 or 6 jalapenos, deseeded and sliced*

In a saucepan, boil the water then stir sugar into it, stirring until water looks clear again.  Add jalapenos and let simmer for about 5 minutes.

*It's hard to find good jalapenos.  When using grocery store jalapenos, I sometimes add the cores and seeds from 1 or 2 jalapenos to make it spicier.
