This crispy seared scallop dish (on a tender and velvety bed of sweet blackened red peppers) was so simple and delicious. Heat traditionally preserved peppers until hot. Keep the peppers warm while you cook the scallops. Sear scallops in a dry cast iron pan until chestnut brown in spots. Place on top of peppers and season with citrus salt seasoning and a drizzle of olive oil.
