My new soon to be summer red: Domaine Les Enfants Sauvages “Che Chauvio” Rouge from Cotes Catalanes, France is a 50/50 blend of Whole Cluster Cinsault and Syrah must resulting in a wine that has carbonic drink ability and the delicacy of a crunchy rosé. The vineyard is Biodynamically farmed and surrounded by fig and olive trees, thyme and rosemary. The wine is made with no additives other than a touch of sulfur at bottling.
