RECIPE : Mom's Sambar - An Inspiration To My Cooking
INGREDIENTS :
Arhar Dal / Tuar Dal - 1 ½ Cup
1/2 Kg. Ash Gourd / Safed Petha
3 Drumstick Chopped to 3 Inches
2 Medium Green Shimla Mirch
6 Medium Tomatoes
1 Cup Fresh Coconut - Grated
Tamarind - Size of a Golf Ball - Soak in water for pulp
1 Tbsp Jaggery Powder -
Salt - As Required { To balance with Tanginess of tamarind you'll need at least 4 Tsps. }
2 Sprigs Dhania Leaves
4 Sprigs Curry Leaves
1 ½ Tbsp. Arhar Dal -
1 ½ Tbsp. Urad Dal { Dhuli / de-skinned }
1/2 Onion Medium size - chopped in length.
1 Tsp Tsp or a little more Hing / Asafetida -
1 Tsp or a little more Methi Seeds / Fenugreek
1Tsp Turmeric Powder -
4 Tbsp Coriander Seeds
5-6 Andhra Red Chilli
2 Tbsp Mustard
Red Chilli - 3 Nos. Cut into halves For Seasoning
Oil - 6 Tbsp.
Water - As Required
METHOD :
STEP – 1
In a cooker , cook Arhar Dal to pasty consistency
STEP – 2
In a small bowl soak Tamarind & squeeze out the pulp & keep aside. Let it be a watery and Not Pulpy..
STEP – 3
DRY ROAST FOR MASALA
In the same Kadai , heat 2 Tbsp Oil & add Arhar Dal & Urad Dal , Fenugrek Seeds - reduce heat & fry till the aroma comes { keep the gas in Sim level } & then add Chopped Onion saute till it loses rawness then add Grated Coconut & sauté & now add Coriander Seeds , Turmeric , Red Chilli =6, , Hing , 2 Sprigs Curry Leaves fry all the ingredients till nice aroma , then remove from heat & let it cool for a while, now transfer the Mix to the blender & add water little by little to turn the masala into a smooth well ground paste.
STEP – 4
Open the cooker, check if dal is fully cooked , if done then add all the chopped vegetables & some Chopped Dhania & a bit of Hing with a cup of water mix the vegetables with the cooked dal add more water if consistency is too thick & give a couple of whistles to cook the vegetables.
Open the cooker & then add Ground Fried Masala Paste & bring it to a boil for 2 Minutes. , along with the masala , add a sprig of Curry leaf, & now add the Tamarind pulp water & Salt ,let it boil for another 2 minutes & then add Jaggery / Gur Powder { Also called Shakkar } , This is to balance the Sambar, mix well with a laddle Turn off the gas.
STEP – 5
In a Kadai pour 2 Tbsp Oil & heat it till smoke level now throw Mustard & lower the heat once the crackling gets over , throw in the whole Chillies & Curry leaves , add the mix to the Aromatic Vegetable Sambar.

Moong Dal Papad Recipe
History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines. Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions.

Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.  
Ingredients for Moong Dal Papad Recipe 1. Split skinless green gram (dhuli moong dal) flour 1 cup 2. Split skinless black gram (dhuli urad dal) flour 1/2 cup 3. Papad khar 1/2 tablespoon 4. Salt to taste 5. Asafoetida (hing) 1/4 teaspoon 6. Black peppercorns 1 tablespoon 7. Oil 2 tablespo as required
Method Step 1~ Heat ¾ cup water in a non-stick pan, add papad khar, salt and asafoetida, mix well and bring to a boil. Remove from heat and set aside to cool. Step 2~ Coarsely crush peppercorns in a mortar with a pestle. Step 3~ Mix together green gram flour, black gram flour and coarsely crushed peppercorns in a bowl. Add papad khar water and knead. Add 2 tablespoons oil and knead. Add some more oil and knead to a stiff dough. Step 4~ Add some more oil and pound for 6-8 minutes. Stretch with hands. Divide into equal portions, cover with a muslin cloth and set aside for 2-3 hours. Step 5~ Dust portions with some black gram flour and roll out into thin papads. Spread the papads on a sheet and sundry, turning sides, for 2 days. Step 6~ Roast and serve.

It's 1 bowl of semolina.
Prepare 3/4 bowl of curd.

You need 2 tb of sp cooking oil.
Prepare 1/2 tsp of mustard seeds.
You need 1 tb of sp urad dhuli dal.

Prepare 1/4 tsp of asafoetida.
You need 8-10 of curry leaves.
You need 4-6 of cashews.
Prepare of Vegetables.
It's 1 of onion.
Prepare 1 of capsicum.
It's 1 of Tomato.
Prepare 1 of Green chilli.
Prepare 2 tb of sp chopped coriander leaves.
You need 8-10 of curry leaves.

Masala Tadka Katori Idli step by step
Mix semolina, curd, salt, eno fruit salt and water and make a batter. Rest for 20 minutes..
Heat oil in a wok. Add mustard seeds and when mustard seeds splutter add asafoetida and saute for 30 seconds. Add urad and gram dal and saute till it turn pinkish. Add curry leaves and cashews. Switch off the flame and mix this tadka in batter and mix..
Peel wash and Chop onion, tomato, capsicum, green chilli and coriander leaves. Mix these vegetables in semolina batter and stir. Adjust the consistency of mixture by adding little water..
Grease katori with little oil and put 2- 2 tb sp of mixture in each katoris. Fill upto 3/4. Heat water in a karahi. Put a stand in it. Place all katoris on it. Place a lid over it and steam for 12 minutes on medium flame. Switch off the flame and keep aside for 15 minutes..
Now remove the lid. Do knife test. If knife comes clean it means it is ready. Remove idli from katori and transfer it in a plate..
Serve hot with sambhar or chutney..

So, dal is a comfort dish for me just; it isn't for my siblings.
