There is tons of linguistic work on Canadian accents! Jack Chambers at the University of Toronto was one of the modern spearheaders of this subfield; he gave the name "Canadian Raising" to the stereotypical raising of the PRICE and MOUTH vowels in a classic 1973 paper. The Canadian Shift was first described by Clarke, Elms, & Youssef (1995) and has since been studied in depth in speech communities from Halifax to Victoria. Charles Boberg at McGill is one of the currently most prolific researchers on Canadian accents specifically. I promise you, there is no shortage of linguistic research on Canadian accents.
