Today's lunch: was feeling somewhat creative today. I had two tuna steaks to play with so decided to make a marinade consisting of lime juice and zest, chilli flakes, sea salt, garam masala, hot curry powder, turmeric and good old Bajan brown sugar oh and some evoo. I had some desiccated coconut in the fridge and didn't want plain old basmati rice so I toasted the coconut and added it to the rice with a small pad of butter. Smelled SO good! Added a bit of sea salt as well. I pan seared the tuna for a few minutes on each side, long enough for the sugar in the marinade to caramelized so the edges of the fish were crispy! Topped it all off with freshly chopped cilantro and some of the toasted coconut! YUM!!! The combination of flavours was yummy!!!
