One pot lunch is where it's at! Crispy chicken thighs, colorful veggies & a sweet/tangy sauce. Ingredients: 4 chicken thighs with skin & bone 2 cup shredded purple cabbage 1 cup broccoli florets 8 asparagus spears 2 garlic cloves 1 inch nub of ginger 1/4 cup black strap molasses (Omit molasses for whole30) 2 tbsp coconut aminos 1/4 cup bone broth 2 tsp salt 2 tbsp coconut oil # Heat oil in a large skillet with a tight fitting lid on high. When hot, place chicken thighs, skin side down. Sprinkle with 1/2 tsp salt. Lower heat to medium high. Cook for 8 minutes. Turn over chicken thighs. Sprinkle with 1/2 teaspoon salt. Cook for another 8 minutes. Add in sliced veggies to the skillet, including minced garlic & ginger. With tongs, pick up and move around thighs to adjust all the veggies under them. Drizzle in molasses, making sure to get the tops of the thighs. Adding coconut aminos too & bone broth. Cover with lid. Lower heat to medium low. Cook for 5 minutes. Remove lid, with tongs, pick up thighs and move around veggies, sprinkle lightly with salt. Let is simmer here until the sauce is reduced & thick, another 2-5 minutes. Serve.
