"Varanass, Varanass"

[This is a revised version of a post from July 31, 2010, during my 6-week trip from Chengdu, Sichuan, to Tibet, Nepal, and India.]
“Varanass, Varanass,” was the mantra of the bus conductor, as the bus pulled out of the station at Gorakhpur, bound for the holy city of Varanasi, India. “Varanass, Varanass,” the conductor intoned as the rain drip dripped onto my left shoulder from the leaky roof of the old bus. My journey so far had lasted over 9 hours, and I looked forward to a comfortable night’s sleep in a hotel.
As I composed this account a couple of days later, in Varanasi, India, where the temperature hovered around 42 degrees Celsius, I had to reach into my heat-addled memory for the events of the previous two days’ journey.
It was July 2010, and I was on a grand overland trip from Lhasa, Tibet, to India, by way of Everest Base Camp, the China-Nepal border, and Kathmandu, Nepal. It had been a long day: I’d awakened at 4 a.m. in Kathmandu (I was still living on China time) and had made my way on foot to the Kathmandu Central Bus Station. I’d only made one entry in my journal that day: “The best samosas I ever ate were in the Kathmandu Central Bus Station. Pity I only bought two.”
I’d caught the 7 am bus leaving for the Indian border, but by the time it circled the city looking for new passengers to pick up, it was 9 am. The ride to the Nepal-India border was long, hot, humid, and uncomfortable. We’d stopped at a roadside buffet restaurant for lunch, but for some reason I was wary of eating there, so I went without lunch, subsisting instead on Masala Munch, my favorite snack in Nepal.
We crossed the lowlands of southern Nepal, and passed right through Lumbini, the birthplace of the Buddha. I wasn’t tempted to get off; the place looked like a hellhole. Sue me.
Sonauli, India
We eventually reached Sonauli, a town straddling the Nepal-India border, and pulled up outside a hotel. I gingerly lowered myself from the bus, my butt and left leg so sore from the cramped journey that I nearly fell over. I was desperate for coffee, having gone without caffeine that morning, and I wandered into the hotel dining room. Unfortunately, all they provided was the instant-Nescafe-with-sugar-and-whitener shit, which did little to improve my disposition.
From the hotel, I caught a motorcycle taxi to the bus station, tipping the driver an exorbitant amount, since Nepal currency can’t be exchanged or spent outside the country. I passed through immigration, the most mellow border crossing of my life. The official was warm, friendly, solicitous, and welcoming. I’d already obtained my India visa in Kathmandu, so I sailed through.
I couldn’t get out of Sonauli fast enough; it’s a border town, which usually means a dead zone, a no-man’s-land, a get-me-out-of-here-quick place. The next bus out of town was headed for Gorakhpur, about 100 miles from the Nepal border and another several hours’ ride. I wasn’t about to stay where I was.
Arriving in Gorakhpur after 10 p.m., I once again hauled my carcass off the bus, and went in search of a hotel. I do stupid things when I’m over-tired, including renting a hotel room without inspecting it first. The place was atrocious: stained walls, crusty sheets, and windows opening into both the noisy hallway and the noisier street in front of the train station. I threw my backpack on the bed and left, not even concerned that my key didn’t work in the door lock.
I walked down the street and found a better hotel for 100 rupees. Air-conditioned and with a marble floor and clean sheets, it was a welcome place to rest, and I was worth it. I stopped at a restaurant for a late dinner of chicken thali, mediocre but filling. I then went back to the first hotel, grabbed my bag, and on my way out simply deposited my key on the front desk and said “Goodbye.” Sometimes you just cut your losses and leave.
The next morning in my air-conditioned, marble-floored room, I was in serious caffeine withdrawal. After a trip across the street to the train station to inquire about non-existent tickets to Varanasi, I’d decided to continue my trip by bus. It would offer symmetry, and allow me to see India at a leisurely pace.
I’d brought along a secret stash of real coffee, and on the way back to my room I asked at the front desk for a pot of hot water. “Certainly, sir,” the front desk replied. Back in my room, there was soon a knock on the door. A young man entered, and pointed through the bathroom door at the water heater above the tub. “Hot water,” he said. “Yes, I know,” I replied, “but I mean to drink. Coffee, tea.” He pointed to the phone and said, “Call Room Service, Extension 23.” I called Room Service and repeated my hot water request. “Certainly, sir,” Room Service replied. A moment later, yet another young man came to the door. “Yes, sir?” he inquired. I was beginning to feel like I was trapped in a Marx Brothers movie.
I held up my packet of coffee and the container for brewing it. “Hot water, please,” I repeated yet again. “Oh, you want pitcher hot water,” the young man said. “Yes, pitcher,” I replied. “Thanks.” I eventually got my pitcher of hot water and tipped the young man. Kicking back in a chair, my feet on the bed, I spent a half hour or so communing with my extra-strength Lavazza crema e gusto Italian coffee. Suddenly the world was bright again, and everything was beautiful.
Waiting in the rain, Gorakhpur
For all I know, Gorakhpur is a perfectly nice place, but that wasn’t my impression from the street in front of the train station. I walked down the rain-slicked street and caught a motorcycle taxi to the bus station, for the remaining 193-mile journey to Varanasi. As the leaky bus pulled out of the city, “Varanass Varanass” echoed in some region of my mind.

For the next several hours we traveled back roads, India slowly unwinding like some vast diorama of fields, cows, trees, and the occasional human. This was the way to travel: calm, meditative, and scenic. Arriving at last in Varanasi, ancient holy city on the Ganges, I got a motorcycle taxi into the center of town. Long story short, I ended up at the Teerth Guest House, my comfortable room cooled only by a high-speed ceiling fan, with occasional entertainment provided by geckos scrambling up the walls.
My first meal in Varanasi, and my first memorable Indian food, was at the rather wonderful Aroma Vegetarian Restaurant, where I splurged on the maharaja thali feast and enjoyed the welcome air conditioning. I would soon learn to adapt to the ungodly heat and humidity by limiting my sightseeing to 6 – 10 a.m., by which time I was limp and exhausted. I’d then retire to my bed beneath the airplane-propeller fan for a much-deserved siesta. I ventured out again in the late afternoon and evening.

The city’s ancient palaces, temples, and ghats spread along the Ganges, whose water is so unspeakably filthy that the sight of people bathing in its putrefaction turned my stomach. However, the faithful brush off such concerns, believing that the waters can cause no harm, and that their spiritual benefits far outweigh sanitary cautions.

I should mention the sacred cows, who move unimpeded wherever they choose. Unfortunately, they are poorly cared for, and subsist on garbage, often ingesting plastic bags as well. During the frequent power cuts, especially after dark, one needs to step carefully to avoid one of their, shall we say, offerings deposited on the sidewalk. It was during one such nighttime blackout that I ventured out of the hotel after being sick for two days. After a side trip by motorcycle taxi to Sarnath, where the Buddha gave a teaching at its Deer Park, I was suffering from the double whammy of heat exhaustion and the inevitable Delhi belly, from unsanitary food handling. On this night, I was in search of comfort food to calm my rebellious stomach. Needless to say, my shoes didn’t fare well from the unseen cow offerings.
I was also suffering from culture shock, from the sheer intensity and in-your-face reality of India, never free of people trailing me, imploring, begging, offering to show me a shop just a few steps away, attaching themselves, showing me life in all its pleasure and pain right out in the open.
Among my colorful experiences in Varanasi was a scrumptious breakfast at the second-floor German Bakery of fresh-baked bread, curd with fruit, and coffee. At a local café I frequented, I had my first masala dosa in India. It was good, but the dosa of my dreams was sadly lacking on this trip. At the same café, after I ordered a mango lassi, the server rushed off to a local market to buy a fresh mango for me. Wandering along the ghats, where funeral pyres burn day and night, I sat down to rest, and a long-eared black goat ambled over to lick the salty sweat off my T-shirt. He snuggled next to me, and we hung out together watching the passing scene.

My new friend Manoj, who’d driven me to Sarnath in his motorcycle taxi, showed up on my final morning to take me to the train station. I’d reserved a ticket online to Delhi, since a limited number of tickets is set aside for foreigners, the trains otherwise being sold out. Arriving at the station, I proceeded to the Foreigners’ Ticket Office and waiting room, where I was able to confirm my reservation on the sleeping car that day. In the luxurious air conditioning, in front of everyone, I peeled off my gross, sweaty T-shirt and replaced it with my cool, flowing hemp shirt purchased in Kathmandu.
The next chapter in my trip was about to begin, but only after the scheduled train arrived several hours late. Next stop: Hello, Delhi!

Dr. Kumar is a miracle worker – the medication appears to be working! A good night’s sleep with no disturbances for the loo!!
After my first proper meal for a couple of days, a plate of pancakes with proper maple syrup for breakfast, we said farewell to the restaurant staff who had looked after us so well and went off to settle our bill. Surprisingly the cost of the prescription medication for my stomach ailments was “on the house”. Many thanks to Clarkes Hotel.
Our guide for the day, Bunty, turned up to collect our bags and take us to the train station where were due to board the “Toy Train” to Solan, the beginning of our journey to Delhi. We arrived in plenty time so that we could have a look around the station and see the old steam train that dates back to 1906, and which is only used on special occasions these days. The train today was pulled by a diesel locomotive.
The “Toy Train” railway line was built by the British to enable the administrative function of The Raj to transfer to the cooler climate of the foothills of the Himalayas during the heat of the Indian summer down in the plains. It’s a single track, narrow gauge railway with several passing points along the way. We had seats in one of the two first class carriages, which was much appreciated as the second class carriages were absolutely packed. There was no heating on the train so we were dressed in all of the thermal layers that we had with us. The temperature when we set off was about 4ºC!!
The track wends its way down through the foothills with stunning views out over the valleys.
There are 103 tunnels along the whole route from Shimla to Kalka, although we were only going as far as Solan, and then transferring to the car for the remainder of the journey, to make sure that we arrived in time for the express train to Delhi. We were sat next to a very friendly Indian family who were on their way to a family wedding in Delhi. The man pointed out several interesting points of interest as we went down the line, and when we told him about our itinerary he mentioned that he was from Varanasi and told us of a few places that we should visit if time allows.
Once we arrived in Kalka we boarded our first class carriage on the Delhi train. It was not quite in the same class as The Ghan trip that we took last year in Australia, but was infinitely better than the first class sleeper that we took from Cairo to Luxor a few years ago. The journey passed incident-free, and the staff were very busy serving beverages and food throughout the four hour journey.
We were met on the platform by our tour guide who whisked us off to our hotel, Maidens Hotel, in Old Delhi. We arrived at about 10.15 pm so it wasn’t possible to see much of the surrounding area, but inside the hotel is very smart and our suite is the best room that we have had so far.
Looking forward to a tour of the city tomorrow.

Farewell for now, India
A night sleeping under the desert stars was always going to be a tough act to follow, so we gave the honour to another night bus and headed to Udaipur, ‘The City of Lakes’. Udaipur is a truly beautiful city, with stunning architecture, palaces, hilltop vistas and old havelis everywhere you look. We decided that it was an apt place to up our accommodation budget and treated ourselves to a stay in a haveli hotel, complete with rooftop pool. If Varanasi is the last place anybody should start their time in India, Udaipur has to be a strong candidate to be one of the first. It has a lovely cafe culture and at times almost felt European. It’s lakes offer some great cycling routes and one is even home to an observatory!
We decided to put a couple of very old bikes to the test and they just about got us to a palace at the top of a large hill on the outskirts of Udaipur. It became apparent to us on the climb that cycling up the hill isn’t the usually done thing and as more and more locals cheered us on or just looked at us in amazement, we had no option but forget about the fact our bikes were basically falling apart and push on to the summit, where a stunning view and a gaggle of monkeys awaited us.
Apart from all the food, cafes and an excellent cookery class which will of course be covered later, we spent the rest of our time wondering around the beautiful streets or chilling back at our hotel, where we (Tom) found out the hard way that the rooftop pool, which looked so inviting in the warm but deceptive winter sun, was infact unheated! We finished our time in Udaipur with a quick tour around the main city palace. On its own we’re sure it would be pretty spectacular, but off the back of all the other forts and palaces in Rajasthan, a form of fort fatigue was setting in and we didn’t give it the time it likely deserved.
Now winding our way back to Jaipur with just a few final days left in India, we bypassed Chittorgarh, famous for.. it’s fort, opting instead to visit lesser known Bundi, off the back of recommendations from Ciarán and a guy we met in Varanasi. Being an old town in Rajasthan, Bundi does of course have its own palaces and forts, but the interesting thing here was that Bundi is significantly less touristy compared to the other places we visited in Rajasthan and much of it had been neglected as a result. When entering the fort, which was long since abandoned by the last maharajah, we were offered two options, to take either a guide or a stick, as current inhabitants are monkeys and they don’t take too kindly to visitors! After a brief demonstration, we opted for the stick and set off on what turned into a 5 hour exploration of the eerily quiet palace and overgrown fort ruins. The whole experience was actually far more interesting than walking around the well maintained counterparts found in more popular parts of Rajasthan (although Jodhpur still holds the top spot in our eyes!).
Bundi has an abundance of Stepwells. A common feature in most the places we visited, but nowhere more spectacular than here. Originally used for bathing and as a source of water, many are now neglected and in Bundi’s case, dry as a result of a mini drought starting to effect the areas water levels. Our favourite stepwell really encapsulated what we saw so frequently in India, beauty and disorder combined. With a seemingly endless network of steps, the design of this stepwell in particular was stunning. But it has also fallen into disrepair and covered with what at first glance looked like lots of rubbish. We were later informed by a local that this was Pooja, or offerings to the Gods, often consisting of picture frames, flowers and candles which cannot be cleaned up or removed.
After spending the past few days in some of India’s most touristy areas, it was really nice to spend some final time back in a part of India that wasn’t set up for visitors. One of our favourite things about our time in India was the level of interest shown by locals to our visit. Always intrigued to know what we think of their town or country. In fact we (mostly Harriet and her blonde hair) caused quite a stir everywhere we walked in Bundi and frequently found children flocking around us, fascinated by our cameras and amazed to see photos of themselves.
Bundi was also home to one of our favourite accommodations of the trip, Dev Nivas Heritage Hotel, a beautiful 400 year old Haveli with lovely staff and simple but delicious food. It also had a rooftop for kite flying, something which seemingly every child in Bundi practiced in the setting sun, in preparation for their upcoming kite festival. Naturally we had to give it a go, until it shared the fate of most kites, entangled in electricity cables, a common sight at this time of year!
After one final night bus, we reached Jaipur, our last stop in India. We knew how much we would miss the food, so spent a lot of our time here stuffing our faces on walking tours and at restaurants. Although not explicitly on a food tour, our guide on the first tour soon realised we were most interested in sampling the best Jaipur had to offer and he was happy to oblige (more on that to follow!). Between food spots, we learnt about some of Jaipur’s other features, such as Makrana marble, one of Rajasthan’s proudest exports - used to build the Taj Mahal, along with many other monuments. We found time to visit some final temples, forts and palaces, the most striking being the Amber Palace. However, it wasn’t enough to topple our front runner, Jodhpur’s Mehrangarh fort, which will likely cite our blog on next years pamphlet. We are delighted to announce that Jaipur did offer us a winner for the best tuk tuk favour stop. Just as it looked like Agra’s embroidery shop would take the crown, on our last afternoon, our driver passionately pitched a nearby block printing shop. As he had been our driver for the whole day, we decided to go along with it and were pleasantly surprised! Having studied similar methods during her art foundation course, the printing was of great interest to Harriet. The quality of their work was also really nice, so we left with a table cloth and matching napkins to remember Rajasthan by.
Food
Something that was very popular in Udaipur that Harriet got to enjoy a few times for breakfast was the aloo paratha. Made fresh to order it was a roti dough stuffed with spiced potato mash, flattened, fried in ghee and served fresh and warm. The dish would normally be accompanied with a tangy plain yoghurt and lime pickle or tomato chutney. A very comforting dish, that was such a great and simple meal to start the day with.
There was a clear highlight for us when it came to the food in Udaipur (and probably even India) and that was our brilliant Indian cookery class with Shashi. The story behind her cookery business was so inspirational we couldn’t help but feel in absolute awe of her ongoing determination. Shashi tragically lost her husband 20 years ago with three young children to look after and limited to only being able to work from her home due to being a woman in her religion. Shashi’s strength was in her cooking and slowly with support of friends, family and passing travellers she built up her company and reputation from nothing. We lost count of the number of dishes we cooked in the class. Everything from curries, chutneys, sweet and savoury breads to the most delicious chai we have tasted all trip. With the help of Shashi and her son and alongside a really lovely South African family we were continuously helping, watching and tasting for over 4 hours! By the time we sat down to our banquet of food we were already pretty stuffed but wow was it delicious. We cannot wait to start cooking some of these dishes when we get home.
One of the most interesting things we learnt on the course was that for pretty much all curry dishes they use a base sauce that they call “magic sauce”. Made using chopped garlic, chillies, ginger, pulped tomato and a combination of spices you can then freeze to use when you wish. You would think everything would end up tasting the same but that really isn’t the case. Just a really great way to add instant flavour to your curry.
We spent our time in Jaipur cramming in as many Indian snacks and sweets as our stomachs could handle. This was only accentuated during our brilliant walking tour of Jaipur, which just turned into more of a food tour of the city. Our guide lead us to the back streets of the city where they made rabri on mass for local restaurants. We saw deliciously light and fluffy naans being skilfully placed and baked inside a tandoori oven, mustard oil being made from a machine that looked like it had been running none stop for the last 100 years (probably because it had), the chilli wholesaler who could barely move in his shop for all the mountains of dried chillies and tumeric being ground up covering the entire shop (and workers) in the bright yellow spice.
However, our favourite meal in Jaipur was the poha we had for our final breakfast in India. This felt appropriate given it was one of our first meals in India, eating it before climbing the Kalavantin Durg. We do talk about this in our first blog post but for those who want a little reminder it’s a breakfast dish commonly found in the North of India. Made using flat rice, dry fried with a combination of spices and served with chopped red onion, chillies, nuts, pomegranates and coriander. Sweet and spicy with all the textures, such a uniquely brilliant dish.
India ‘Outro’
And so here we are, at the end of an era. The blog has finally reached the end of India! We’re not quite sure whether this, or the moment we actually left India is more of an emotional landmark for us. But seriously, India has a firm place in both our hearts and our renowned ‘top 5’ lists. How somewhere can be so vast, yet so warm, friendly and of course, unique, is staggering. You could spend your whole life in India and still be surprised and amazed everyday, by what it has to offer. We’ll remember it for the people, the food, the chai, the smells (good and bad) and then for the food again. Leaving India brought on a feeling that neither of us had felt before. But then we’d never spent 2 months in another country before and you learn and adjust a lot in that amount of time to the customs and way of life - and there’s so much to love about the way Indians go about their lives. We’re still sorting through thousands of photos we took during our stay, but nothing we can show or tell you about India will really do it justice until you’ve been there to find out for yourselves. And we’ll definitely be going back for more.. as it turns out sooner than we thought, back to Mumbai, albeit very briefly, for a stopover on our flight home!
Travel Jukebox - ‘Blood’ by Rhye
With the amount of night buses we took during this section of India, it’s fitting that we talk about an album recommended specifically for those occasions. Rhye’s second album, Blood, was picked by Xanthe and her suggested occasion, as a night bus album, is a perfect one.
Put simply, Rhye’s music is a treat for your ears. Beautifully soothing doesn’t go far enough. As with their first album, Woman, the album is brilliantly paced, with some excellent instrumentals supporting what is Rhye’s obvious USP, the vocal. We’re not going to share the fact that Xanthe gave us when recommending the album, because we think that it’s better you listen to some of Rhye’s music first and then do a little research into them. You’ll discover the fact pretty quickly, and then when you know, you’ve got to go and listen to the album all over again. We still can’t quite believe it’s true!
TLDR; Rajasthan gave us the perfect send off from India and could be the perfect starting point for you!
