Day 2: After 24 hours marinating in the wine, the Beef has taken on the colour and aromas of the pinot and bouquet garni. Patted dry before searing with some butter, oil and cognac to get a nice crust on the Beef. Added some roasted mushrooms and shallots to the mix and now it’s all together in the slow-cook oven where it’s will stay for the next 12+ hours.
