Irresistibly Gooey Cinnamon Roll Butter Cake with a Sweet Twist 🍰✨

Ingredients:

Crust:

- 1 box yellow cake mix

- 1/2 cup unsalted butter, melted

- 1 large egg

Filling:

- 8 oz cream cheese, softened

- 2 large eggs

- 1 tsp vanilla extract

- 1/2 cup unsalted butter, melted

- 3 3/4 cups powdered sugar

- 1 tbsp ground cinnamon

Cinnamon Drizzle:

- 1/2 cup powdered sugar

- 1–2 tbsp milk

- 1/2 tsp vanilla extract

- 1/2 tsp ground cinnamon

Directions:

1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.

2. For the crust, combine the cake mix, melted butter, and egg in a bowl. Mix until a dough forms, then press it evenly into the bottom of the prepared pan.

3. For the filling, beat the softened cream cheese until smooth. Add eggs, vanilla extract, and melted butter, mixing until fully combined. Gradually add powdered sugar and cinnamon, beating until smooth.

4. Pour the filling over the crust, spreading it evenly.

5. Bake for 40–45 minutes, or until the edges are golden and the center is slightly gooey. Let the cake cool completely.

6. For the cinnamon drizzle, whisk together powdered sugar, milk, vanilla extract, and cinnamon until smooth. Drizzle over the cooled cake before serving.

Chef's Tip: Serve warm for an extra gooey texture, and top with a dollop of whipped cream or a sprinkle of extra cinnamon! 🍂

Simple Strawberry and Cinnamon Roll Cake

A quick and delicious Strawberry and Cinnamon Roll Cake.

Do you make cinnamon rolls from scratch? I have a handful of times but when it comes to this recipe I buy the roll and serve cinnamon rolls and dessert is ready in under an hour. This recipe has been in the rotation for years. I’ve brought it to pool parties, graduation parties, and picnics. In the past, I’ve used canned cherries, apples, and peaches. This time around I was ready with a super easy recipe for the strawberry compote. This is probably one of the easiest recipes on a Love a fare and I’m sure you’ll agree on how delicious it is! This will keep for a couple of days in the refrigerator if covered. 

I buy my cinnamon rolls at Aldi and sometimes at Target. I think the Aldi brand makes smaller cinnamon rolls and the department store brand does come out larger and with more frosting. Just saying! 

The strawberry compote is the star of the show here. With just four ingredients and a matter of minutes, you are in strawberry heaven. 

Serves 6

INGREDIENTS FOR CINNAMON ROLLS

1 package cinnamon rolls

INGREDIENTS FOR STRAWBERRY COMPOTE

2 cups fresh or frozen strawberries

2 tablespoons maple syrup or honey

2 teaspoons cornstarch

2 tablespoon water

Directions

Preheat oven to 375 degrees Fahrenheit. Spray an 8 x 10-inch pan with cooking spray. Separate dough into 7 rolls. Reserve one roll for the top of the cake. Cut the 7 rolls into halves. Place dough pieces in a single layer in pan. Set aside.��

Place fresh berries in a saucepan with maple syrup or honey. Cook on medium heat 5-7 minutes if using fresh and 8-10 if using frozen or until berries are bubbling and squishy. Now at this point, you can mash the berries if you like a smooth compote or leave them as-is for texture. Taste and if you like a sweeter compote add additional sweetener. Turn off heat and mix together cornstarch and water. Pour cornstarch mixture into strawberry mixture.  Stir to combine. Let cool 5-10 minutes. Place strawberry filling on top of arranged cinnamon rolls.

Take remaining cinnamon roll and break off pieces placing on top of strawberry filling in random spots. 

Bake at 375 degrees for 18-20 minutes. Let cool and drizzle on icing.

On our walk yesterday, we see that the NC Medical Society Building has put up this banner. Thank you to our healthcare professionals indeed!

We are worried about musician, John Prine, who was to have performed at Merlefest. Now cancelled. We were looking forward to going and seeing him. I keep telling John he’s getting old and probs won’t tour much longer. Then we find out he has COVID-19. He was in the hospital and in critical, then stable condition according to his wife on Twitter. She also clarified that stable meant NOT improving. There has been no update for 2 days. That scares me. So I’ll share this mural near the Raleigh bus station as tribute to him. Have you seen it?

Our walk was long today. It was a lovely sunny day IT MADE ME HAPPY!

We attempted to cut Johns hair today. He’s been concerned about getting it cut. We’ve discussed me helping cut it. I can cut hair but my skills are not easily trusted! I get it. BUT...We WERE successful and went conservative. He was so pleased, he said, why do I need to pay to get my haircut??
